- In a large stockpot, combine water, kosher salt, brown sugar, 2 tablespoons pickling spices, pink curing salt and garlic. Bring to a simmer, stirring until salt and sugar are dissolved. Remove from heat; cool to room temperature, then refrigerate until chilled., Place 1 large oven roasting bag inside another. Place brisket inside inner bag; pour in cooled brine. Seal bags, pressing out as much air as possible; turn to coat meat. Refrigerate 10 days, turning occasionally to keep meat coated. Remove brisket from brine; rinse thoroughly. Place in a Dutch oven with water to cover. Add carrots, onions, celery and remaining pickling spices. Bring to a boil over high heat. Reduce heat; simmer, covered, adding water if necessary to keep brisket covered, until meat is tender, about 3 hours., Serve warm or cool. Slice brisket thinly and serve in a sandwich or with additional vegetables simmered until tender in cooking liquid. , To make ahead: Refrigerate meat in cooking liquid for several days; reheat in liquid.

- Place the water into a large 6 to 8 quart stockpot along with salt, sugar, saltpeter, cinnamon stick, mustard seeds, peppercorns, cloves, allspice, juniper berries, bay leaves and ginger. Cook over high heat until the salt and sugar have dissolved. Remove from the heat and add the ice. Stir until the ice has melted. If necessary, place the brine into the refrigerator until it reaches a temperature of 45 degrees F. Once it has cooled, place the brisket in a 2-gallon zip top bag and add the brine. Seal and lay flat inside a container, cover and place in the refrigerator for 10 days. Check daily to make sure the beef is completely submerged and stir the brine.
- After 10 days, remove from the brine and rinse well under cool water. Place the brisket into a pot just large enough to hold the meat, add the onion, carrot and celery and cover with water by 1-inch. Set over high heat and bring to a boil. Reduce the heat to low, cover and gently simmer for 2 1/2 to 3 hours or until the meat is fork tender. Remove from the pot and thinly slice across the grain.

Steps:
- Remove brisket from vacuum packaging.
- Remove visible outside fat and wash.
- Place in crockpot.
- Add pickling spices and the beer.
- Cook on High for about 6-8 hours.
- (You may wish to turn the corned beef once).
- Continue cooking until beef is tender but not falling apart.
- Total time will depend on size of roast.
- Gently remove corned beef from crockpot, keeping it in one piece if possible.
- If any chunk of beef falls off, just place the 2 pieces together before wrapping as instructed below.
- Scrape off any outside fat, using a very sharp knife.
- TO KEEP BEEF FROM CRUMBLING DURING SLICING: Immediately wrap the hot corned beef in plastic wrap, wrapping it as tightly ACROSS THE GRAIN as possible.
- Snugly fold ends of plastic to completely encase beef.
- The heat from the beef may/will"seal" the plastic wrap and keep corned beef moist.
- Put wrapped beef in a Zip-lock bag and REFRIGEATE.
- When ready to serve, thinly slice across the grain with a sharp knife (not serrated) or an electric slicing machine.
- NOTE: I usually turn the crockpot ON when I go to bed, and the corned beef is ready when I wake up.
- I wrap and refrigerate it, and it's perfect for lunch-time sandwiches.

This slow cooker corned beef recipe is so easy, with basic ingredients, and it cooks on low for 7 hours. It is basic, but it is so very delicious. - peel and cut onion into quarters, add to slow cooker,.
- sprinkle in brown sugar,.

CORNED BEEF
Steps:
- Roll brisket into cylinder, and tie with twine. Place tied beef in pot. Cover with cold water and bring to a boil. Remove the scum as it appears. Reduce the heat and simmer for 10 minutes. If the liquid is salty after 10 minutes, start again with boiling water. Stick cloves in onion and put in pot. Place thyme, parsley, peppercorns and bay leaf into middle of cheesecloth and tie with twine, and put into pot. Simmer for 2 to 3 hours skimming any scum that appears on the surface. Transfer beef to a clean pot. Strain, cool and degrease cooking liquid. Add onions turnips, potatoes, carrots and cabbage, and optional cider if desired into pot. Cover with strained liquid and cook at a simmer for 1 hour more, or until you can pierce beef easily with a skewer. Remove the meat from the poaching liquid , cut the trussing strings and carve the meat into generous slices. Place them on a warmed platter. Arrange the cooked garnish vegetables around the meat. Sprinkle with chopped fresh parsley. Serve with horseradish cream sauce.

EASY BAKED GLAZED CORNED BEEF

- Preheat oven to 300 degrees. Prepare a Dutch oven or a roasting pan with a lid by spraying with non-stick spray. If you don't have a pan with a lid heavy duty foil can be used.
- Rinse corned beef in cold water to remove some of the salty taste, and reserve pickling spice packet. Place corned beef in pan, and spread pickling spices on and around the roast.
- Add apple juice to the bottom of the pan until it comes up halfway up the side of the corned beef.
- Cover tightly with lid (or foil) and bake for 4 hours.
- Mix the ketchup and mustard together, remove corned beef from oven and carefully remove the lid. Spread ketchup mix on top, and return to the oven on broil for 10-15 minutes or until bubbly.
- Serve with mashed potatoes and steamed cabbage or carrots.

EASY CORNED BEEF PATTIES

Steps:
- Put rice in med pan with water. Heat until boiling. Cover and reduce heat to low. Or, if you have a rice cooker, that would work!
- While rice is cooking -- In mixing bowl, smash corned beef and eggs until blended. I just use a fork.
- Pour a few Tbsp of oil in nonstick frying pan on med-hi.
- When oil is hot, lower heat to medium and drop beef and egg mixture in pan. Fit as many patties in pan at a time. It is ok if they touch a little bit.
- When patties appear to have a liquid plane, flip over and fry until oil becomes foamy for a minute or so. Basically when egg is fully cooked!
- Then move cooked patties to plate lined with paper towel or napkin to soak excess oil.
- Serve over steamed rice and top with ketchup!

- Using a large ovenproof skillet, cook the hash browns and the onion in the olive oil until the potatoes are browned and onion is tender. Remove from the heat; stir in corned beef and salt.

- Trim excess fat from corned beef and put in a large enough slow cooker that the brisket can lay almost flat along the bottom. Place onion on top of beef.
- Drain sauerkraut and pile on top of onion. Mix broth and mustard together and pour over everything in the slow cooker.
