6 ¼ cups warm water (warm)
½ cup kosher salt
⅓ cup brown sugar
3 tbsp red pepper flakes
2 tbsp ground black pepper
¼ cup cider vinegar

Steps:

  • Pour the warm water into a large container. Add the salt and sugar and stir thoroughly until all particles have dissolved.
  • Add in the red pepper flakes, black pepper and cider vinegar. Mix thoroughly.
  • Carefully place the chicken wings in the brine. Ensure that they are submerged under the surface of the brine. Use a small weight if you need to.
  • Put the entire container in the fridge and leave for 2-4 hours.

1 tbsp salt
2 tbsp sugar
1 lb chicken wings
3/4 cup all purpose flour
1/4 cup cornstarch
1 1/2 tsp poultry seasoning
1 tsp onion powder
1 tsp garlic powder
1/2 tsp smoked paprika
1/2 tsp salt
2 1/2 cups of corn oil for frying

Steps:

  • Wash the chicken under cool water, then place it in large bowl or container.
  • Combine 4 cups cold water, 1 tbsp salt, and 2 tbsp sugar.
  • Stir until the salt and sugar dissolve.
  • Pour the brine ( sugar/salt/water) into the bowl or container with the chicken.
  • Make sure that the chicken is covered with the brine.
  • Cover the bowl/container, then place in the refrigerator for about 4 hours.
  • Drain the brine from the bowl, but do not rinse the chicken.
  • Season the chicken with the poultry seasoning, garlic powder, onion powder, and smoked paprika.
  • Combine the all purpose flour, cornstarch, and 1/2 tsp salt.
  • Pour the flour mixture into a large freezer bag, then toss in the chicken wings.
  • Shake the bag, until the chicken is well coated with flour.
  • Remove the chicken from the bag, and shake off any excess flour.
  • Pour the oil into a large skillet, and let it heat up over medium heat for about 10 minutes.
  • Carefully add in the chicken, and fry until golden brown.
  • Place the chicken on a paper towel lined plate.
  • Serve and enjoy!

Steps:

  • Pour the warm water into a container that is twice the volume of the water. Pour in the salt, sugar, soy sauce, and olive oil. Stir until the sugar and salt have dissolved, then allow the brine to cool to room temperature.
  • To use, place chicken in the brine, cover, and refrigerate two hours for skinless breasts, 4 hours for bone-in pieces, and 4 hours to overnight for whole chickens. I decided to experiment with my normal go-to brine and added molasses and garlic. In place of regular sugar I used light brown sugar (what can I say, I like molasses). The family loved this. I think this is going to be my new go-to. This is enough brine for 8 pounds of whole chicken or bone-in chicken pieces and up to 10 pounds of skinless, boneless chicken breasts.

¼ cup kosher salt (Morton's)
2 tablespoons gently packed brown sugar
8 chicken thighs (8 legs, 6 chicken breasts, or 1 medium/small whole chicken)
Optional: additional spices or flavors

Steps:

  • If water is cold, heat it for about 90 - 120 seconds in the microwave (you want it very warm, but not hot). You can also do this on the stove top if you prefer.
  • Stir salt and brown sugar into water. Stir until salt and sugar are completely dissolved and liquid is translucent.
  • Add chicken to a watertight bowl or bag. Pour brining liquid over chicken and seal bag or cover bowl tightly. Make sure brine covers chicken completely; prepare additional brine if necessary.
  • Allow chicken to brine in the refrigerator for at least 4 hours and up to 24 hours. Pat chicken dry with a clean towel or cloth before cooking.

1/3 cup table salt (or 1/2 cup kosher salt )
1/3 cup white sugar
6 cups water (cold)
2 tablespoons white pepper
2 tablespoons black pepper
3 pounds chicken wings

Steps:

  • Gather the ingredients.
  • Combine vinegar and pepper flakes.
  • Thoroughly dissolve the salt and sugar in water.
  • Add the vinegar mixture, white pepper, and black pepper.
  • Stir to mix, cover, and store in the refrigerator overnight.
  • Place chicken wings in a large nonmetal container.
  • Pour the brine mixture over the wings, making sure they are completely covered.

2 lb chicken wings
4 cups water
3 tbsp Kosher salt
¼ cup soya sauce
½ cup brown sugar
3 cloves garlic (crushed)
2 sprigs thyme
2 sprigs rosemary
2 tbsp hot sauce (I used franks Red Hot)
1 tbsp baking powder (aluminum free)
½ tsp Kosher salt
2 tsp garlic powder
¼ tsp black pepper (finely ground)
1 tsp paprika

Steps:

  • Prep the wings by removing any feathers or loose bone pieces.
  • Put 3 cups of the water aside and then combine the rest of the brine ingredients in a saucepan and bring to the boil while stirring.
  • Once boiled, remove from the heat and add the 3 cups of cold water and allow to completely cool before adding chicken wings.
  • Once cooled add wings and brine solution to a large container or zip lock bag and place in the fridge for at least 4 hours or overnight. Turn and or shake up a couple of times during this process.
  • Remove from brine the next day and place on a paper towel and pat dry.
  • Mix up the dry seasoning ingredients and add wings to a large bowl, add half the dry seasoning and toss to coat the wings, then add the rest of the seasoning and toss until all the wings are evenly covered.
  • Get the Weber Kettle set up to cook at a high indirect heat of 465°F using a vortex.
  • Place the wings on the outside of the cooking grate and cook for 30 minutes, turning the lid a third of the way around every 10 minutes during the cook.

1/3 cup kosher salt
1/4 cup sugar
8 cloves garlic (, peeled and roughly chopped)
2 tablespoons dried sage
2 tablespoons dried basil
1 tablespoon whole black peppercorns
2 bay leaves
1 5-6 pound chicken
1 green apple (, cored and quartered)
1 onion (, quartered)

Steps:

  • In a very large stockpot add the water, kosher salt (do not use table salt), sugar, garlic, sage, basil, black peppercorns and bay leaves and bring to a boil on high heat.
  • Stir well until sugar and salt have dissolved.
  • Turn off heat and let cool naturally until water is at room temperature.
  • Add chicken to the pot and cover.
  • Refrigerate for a minimum of 4 hours, up to 8 hours.
  • Preheat the oven to 425 degrees.
  • Remove chicken from brine and rinse under a very slow stream of water (sanitize your sink after rinsing).
  • Dry the chicken with paper towels inside and out and stuff the chicken cavity with apple and onion.
  • Place into baking pan and cook for 15 minutes, then lower heat to 375 degrees and cook for 40-45 minutes or until the middle of the thigh reads 165 degrees on a probe thermometer.
