EASY CHICKEN CRESCENT ROLL UPS
This is an easy family recipe made with ingredients you probably already have in your fridge and pantry. Even the pickiest of eaters will love this comfort food!

Steps:
- Blend together first four ingredients.
- Separate crescent rolls into triangles.
- Spoon chicken into the bottom of the triangle, fold in the bottom corners, and roll up.
- Lightly roll in melted butter then roll in crushed croutons.
- Place on un-greased cookie sheet and bake at 350 for 20 minutes.
- If desired, serve with a sauce of cream of chicken soup diluted with 1/2 cup milk over the crescent rolls. I also like to add salt, pepper, parsley, cayenne, and curry to the sauce.

EASY CHICKEN ROLL UP APPETIZERS
A simple, fun to make, appetizer that's healthy and eye catching. This recipe can be simple and quick, or you can make it complicated and fancy to suit any occasion. This is the most basic way to make them, but with a couple interesting suggestions at the end. I usually serve next to several bowls of different salad dressings so guests can dip (or not dip) to their liking.

Steps:
- Slice the chicken breasts into thin strips.
- Cook in a skillet for about 5 mins, or until done. (Optional - cook with some Italian spices, garlic, or an oil-based salad dressing.).
- Try to pick out a leafy head of lettuce, instead one with crunchy leaves.
- Seperate and wash some lettuce leaves.
- Roll the cooked chicken strips in the lettuce.
- Place about 5 toothpicks (depending on strip of chicken) spaced evenly along the roll.
- Using a sharp knife, cut the strip into pieces. The toothpicks should hold it all together.
- WAYS TO MAKE IT CREATIVE - Think of what else you can add to make this more interesting. Try including different ingredients inside the lettuce with the chicken. Hard-boiled egg, peppers, a strip of fresh parmesean cheese, etc -- Or, try attaching something on top of the roll using the toothpick. I've had great success with small madarin orange slices or cut up strawberries! Perhaps try switching lettuce for spinach, or another green. The possibilities are endless, and kids can often help in the creation process! The chicken can be served warm, or, can be refrigerated and served chilled, both taste great!

Steps:
- Flatten chicken to 1/4-inch thickness.
- Place a slice of ham and cheese on each piece of chicken.
- Roll up from a short side and tuck in ends; secure with a toothpick.
- In a shallow bowl, mix crumbs, grated cheese and parsley.
- Pour milk into another bowl.
- Dip chicken rolls in milk, then roll in crumb mixture.
- Wrap and freeze roll-ups for up to 2 months.
- To use frozen chicken--completely thaw in the refrigerator.
- Unwrap roll-ups and place on a greased baking sheet.
- Spritz with nonstick cooking spray.
- Bake uncovered, at 425 degrees for 30 minutes or until juices run clear.

- Mix together the chicken, onion, cream cheese, salt, milk, and butter.
- Spoon onto crescent rolls and roll up.
- Bake 20 minutes at 350*.
- Mix together and heat the sour cream and soup.
- Spoon over roll-ups and enjoy!
CHICKEN ROLL UPS
I had a lady in my church who made this for an activity and they were so good! I asked her for the recipe and they are so easy to make!! I poached my chicken by boiling it for about 10 minutes and they were cooked through. You could also use a left over rotisserie chicken or even canned chicken, although with canned it tends to taste like tuna to me. I also used the Pillsbury Grands biscuits, but found that I would have preferred them smaller, so have listed the regular sized ones here.

Steps:
- Prepare you chicken and shred it finely. I used a food processor and pulsed it a few times to shred it easily.
- Add the shredded chicken to a mixing bowl and add the rest of the ingredients and stir well until creamy.
- Open the can of biscuits and roll out each individual one to flatten them out a bit.
- Spoon a heaping tablespoon of the chicken creamy mixture to the biscuit dough and fold the dough over the filling. It is ok if some of the filling comes out, as it bakes it will set up.
- Bake at 400* for about 15 minutes and the biscuits are golden brown.
- Allow to cool for a few minutes before serving.
- These could be made up in advance and frozen for a few weeks, and heated in a 350* for about 10 minutes.
CHICKEN & VEGETABLE ROLL-UPS
The original recipe came from a Favorite Brand Name book "Incredibly Easy Chicken". I have made some changes to fit my DH and my tastes.

Steps:
- Combine cream cheese, mayonnaise, mustard and black pepper in a small bowl; stir until well blended.
- Spread cream cheese mixture evely onto each tortilla leaving about a 1/2 inch border.
- Divide chicken, carrot, bell pepper and green onions evely over cream cheese leaving about a 1 1/2 inch border on cheese mixture at one end of each tortilla.
- Roll up each tortilla in a jelly-roll fashion. Cut into 1 1/2 inch thick slices.
- Refrigerate till ready to eat.
