Cheesy Buttered Noodles has a unique twist in this classic side dish recipe. Green onions.

6 cups noodles
4 qt water
3 T butter or margarine
1/2 cup chopped green onions
1/2 cup Parmesan cheese

Steps:

  • Bring water to a boil
  • Add noodles and reduce heat to medium, stirring occasionally for 6-8 minutes
  • Chop green onions, set aside
  • Drain noodles and return to pan. On the lowest heat setting possible, add butter to noodles and stir
  • Stir in green onions for about 3-4 minutes
  • Remove from pan and place in serving dish. Stir in Parmesan cheese
  • Serve

1/2 pound egg noodles
2 Tbsp butter
2 Tbsp grated Parmesan cheese
1 Tbsp chopped fresh parsley
Salt and pepper to taste

Steps:

  • Cook the noodles: Heat 2 quarts of water with 1 tablespoon kosher salt in a large pot on high heat until boiling. Add the egg noodles. Cook for 5 minutes. Reserve 1/4 cup of the pasta cooking liquid and drain the noodles.
  • Add the butter, cheese, parsley: Place the drained hot noodles in a large bowl. Add the butter and Parmesan and stir until the butter has melted. Stir in a tablespoon or two of the pasta cooking water. Stir in the chopped parsley. Add salt and freshly ground black pepper to taste. Serve immediately.

SO easy, but SO good! Something a baby-sitter made when I was a kid and I begged my mom for afterward. Can be doctored in anyway you want or left as written and it always tastes good. I am guessing on measurements, so go with what tastes right to you.

1 cup egg noodles (you could use something else if you want this is just what I use) or 1 cup rotini pasta (you could use something else if you want this is just what I use)
2 tablespoons butter or 2 tablespoons margarine

  • Cook noodles and drain.
  • Add butter and melt completely.
  • Sprinkle with cheese.

Made with penne and the parmesan, this is a meal in a pinch for me, needing maybe just a slice of toasted bread rubbed with garlic. Made with curly egg noodles, this is an ideal side for anything from a piece of a cooked turkey to a thick beef stew.

1 1/2 cups egg noodles or 1 1/2 cups penne
salt
1 tablespoon butter
flat leaf parsley
fresh ground black pepper
1/4 cup freshly grated parmigiano-reggiano cheese (optional)

Steps:

  • Bring a pot of water to a boil. For this amount of pasta I would boil at least 2 quarts of water. When the water is boiling, add at least a tablespoon of salt and stir to dissolve.
  • Add the noodles to the boiling water. For the egg noodles, cook 5 minutes from the time the water comes back to a boil; for the penne, cook 8 minutes.
  • While the pasta is cooking, cut the butter into small bits, and chop the parsley.
  • Drain the pasta well, and transfer immediately to a large serving bowl. Toss with the butter (and optional parmesan).
  • Sprinkle with the parsley, and grind on lots of black pepper.

1 lb thin noodles
4 eggs
1/3 cup freshly grated parmesan cheese
2 tablespoons parsley, chopped
salt (to taste)
1/4 teaspoon black pepper
4 tablespoons butter

Steps:

  • Cook noodles in a large pot of lightly salted water until al dente.
  • While the pasta is cooking, place the eggs, grated cheese, parsley, salt and pepper into a mixing bowl and beat with a whisk until well combined.
  • When the noodles are almost cooked, melt the butter in a large nonstick skillet over medium heat.
  • Quickly drain the pasta and add it to the skillet.
  • Toss briefly to coat it with the butter.
  • Add the egg mixture to the skillet and using a flat wooden spoon, mix quickly together for less than a minute until the eggs and noodles become creamy and thick.
  • Do not cook the eggs too long or they will scramble and ruin the dish.
  • Serve immediately.

1/2-1 tablespoon kosher salt, plus kosher salt to taste
10 ounces egg noodles (or penne or rigatoni, or macaroni)
3 tablespoons unsalted butter
3 tablespoons grated pecorino cheese (or kasseri if you can find it) or 3 tablespoons parmesan cheese (or kasseri if you can find it)
1/2 cup pecorino cheese, for serving (or Parmesan)
1/4 teaspoon fresh ground black pepper

Steps:

  • Bring 4 quarts of water to a boil in a large saucepan. Add 1/2-1 tbls. of the salt and the pasta. Cook until al dente, 5-7 minutes(until it still has a little bite to it-not too soft). Drain.
  • In a large saute pan, melt butter over medium hight heat. Add the pasta and 3 tbls. grated cheese.
  • Season with salt and pepper to taste and toss.
  • Top with remaining cheeses and serve hot. Enjoy! Opa!
