ITALIAN DRESSING PASTA SALAD

This colorful salad is hearty enough to be a light meal in itself. It's a great make-ahead dish, since the full flavors of the herbs and veggies need a little time to blend. For more tasty ideas, check out these other cold pasta salad recipes.

2 packages (12 ounces each) tricolor spiral pasta
2 packages (16 ounces each) frozen California-blend vegetables, thawed
2 pints grape tomatoes
1 large zucchini, halved and thinly sliced
1 large yellow summer squash, quartered and thinly sliced
1 large red onion, finely chopped
1 block (8 ounces) cheddar cheese, cubed
1 block (8 ounces) Monterey Jack cheese, cubed
2 packages (4 ounces each) crumbled tomato and basil feta cheese
1 bottle (16 ounces) Italian salad dressing
3 tablespoons minced fresh parsley
1 tablespoon minced fresh basil
1 teaspoon Italian seasoning
1 teaspoon seasoned salt
1/2 teaspoon pepper
1 can (3.8 ounces) sliced ripe olives, drained
Grated Romano cheese, optional

Steps:

  • Cook pasta according to package directions. Rinse with cold water; drain well. In two large bowls, combine the California vegetables, tomatoes, zucchini, yellow squash, onion, cheeses and pasta. , In a small bowl, combine the salad dressing, parsley, basil, Italian seasoning, seasoned salt and pepper. Pour over pasta mixture; toss to coat. Stir in olives. Cover and refrigerate for 8 hours or overnight. , Toss before serving. Serve with Romano cheese if desired.

1 pound fusilli or rotini pasta
1 green bell pepper, diced
1 red bell pepper, diced
1 medium red onion, diced
2 small cans (2.25 ounce each) sliced black olives, drained
2 Roma tomatoes, chopped
⅓ cup grated parmesan cheese
1/4 cup white wine vinegar
1 teaspoon EACH: Italian seasoning, dijon mustard, and dried basil
1 tablespoon sugar
2 teaspoons toasted sesame seeds
1/2 cup olive oil
2-3 tablespoon water
12-14 cloves roasted garlic (see notes)

Steps:

  • SALAD: Cook the pasta according to package direction, drain and allow to cool to room temperature. Combine all the ingredients (except the parm) for the salad in a large bowl and refrigerate for 10-15 minutes while you prepare the dressing.
  • DRESSING: Place the ingredients for the dressing in a blender along with a big pinch of salt and pepper and blend until smooth (or add to a jar if using an immersion blender.) Taste and adjust seasonings as desired.
  • ASSEMBLE: At this point, you can refrigerate the dressing until ready to serve as well or toss the pasta salad with dressing and top with parmesan cheese and serve! If you're taking this to a party, I suggest keeping the salad and dressing separate until ready to serve.

DRESSING:
1 bottle (16 ounces) Italian salad dressing
1/4 cup grated Parmesan cheese
1 tablespoon sesame seeds
2 teaspoons poppy seeds
1 teaspoon paprika
1/2 teaspoon celery seed
1/4 teaspoon garlic powder

Steps:

  • Cook pasta according to package directions; Drain and rinse in cold water. Transfer to a large bowl. Add the vegetables and olives. , In a large bowl, whisk the dressing ingredients. Drizzle over spaghetti mixture; toss to coat. Cover and refrigerate overnight. Serve with a slotted spoon.

One thing I found with this basic recipe that you can be creative adding meat, croutons, diffrent vegatbles like tomatoes and squash. I think that is why I like it so much you can change it each time you make it.

3 cups pasta, cooked and drain recommend spiral kind and muticolor
1/2 cup carrot, chopped
1/2 cup cucumber, chopped
1/2 cup celery, chopped
1/2 cup broccoli, chopped
1/2 cup Italian dressing
1/4 cup parmesan cheese

Steps:

  • cook pasta according to package.
  • mix with your fresh chopped vegetables.

This is a delicious, summery pasta salad that's incredibly easy to make! I often get requests for it at family gatherings. I usually use fat-free Italian dressing and light mayonnaise and it still tastes fantastic. Feel free to throw in some peppers and other veggies too!

1/2 lb uncooked pasta, of your choice
1 stalk celery, diced
1 medium tomatoes, chopped
1/2-3/4 cup Italian salad dressing (to taste)
1/2 cup mayonnaise
salt and pepper

Steps:

  • Bring a large pot of lightly salted water to a boil.
  • Add pasta and cook for 8 to 10 minutes or until al dente.
  • Drain and pour pasta into a large dish.
  • Stir in the celery and tomatoes.
  • In a separate bowl, whisk together the salad dressing and mayonnaise, then pour this mixture over the salad and toss again, to coat.
