BROCCOLI CHEESE CASSEROLE RECIPE

This flavorful casserole pairs well with just about any entrée, and this iconic Southern dish is the perfect side for a holiday dinner.

6 cups broccoli florets (about three stalks, or a 15-ounce bag of frozen broccoli)
½ cup sour cream
½ cup mayonnaise (I like Dukes)
10.5 ounces cream of mushroom soup (1 can)
1⅓ cups sharp cheddar cheese (grated, divided)
1 teaspoon garlic powder
1 teaspoon kosher salt
½ teaspoon ground black pepper
½ cup crushed Ritz crackers (about 10-15 crackers)
2 tablespoons unsalted butter (melted)

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the sour cream, mayonnaise, cream of mushroom soup, garlic powder, salt, pepper, and one cup of the grated cheese in a large bowl. Add the broccoli and mix well.
  • Place the Ritz crackers in a food processor fitted with a steel blade and process. Add the melted butter and pulse a few times to combine. Or, manually crush the Ritz crackers with your hands and mix with the melted butter.
  • Liberally spray a 2-quart baking dish with a non-stick cooking spray, add the broccoli mixture, and spread out. Sprinkle the remaining ⅓ cup of the cheese and cracker crumbs evenly over the top.
  • Bake the casserole uncovered for 30-35 minutes or until it is bubbly, the cracker crust is lightly browned, and the broccoli is fork-tender. Let sit for about 5 minutes and serve.

1 head fresh broccoli
1 (10 3/4 ounce) can cream of mushroom soup
1 cup mayonnaise
1/2 medium onion, chopped
2 eggs
2 cups grated cheddar cheese
24 Ritz crackers (1 full tube, 24 is approx, I just guessed for the recipe)
3 tablespoons butter
salt, to taste
pepper, to taste
garlic salt, to taste

Steps:

  • Par boil the broccoli for approx 5-10 minutes, (Still"crispy", you dont want it mushy).
  • Cut broccoli into bite size pieces and put in 9x13 baking dish.
  • Mix mushroom soup, mayonaise, onion, eggs, cheese and seasonings together.
  • Pour over broccoli.
  • Top with crushed Ritz Crackers.
  • Dot with butter.
  • Bake at 350 degrees for 40 minutes uncovered.

First Place Broccoli Casserole With Ritz Crackers image

This recipe won first place in 1978 at the county fair. I make it over the holidays and everyone raves about it. There are some similar recipes on Recipe Zaar, but this recipe is different enough in my opinion to make it slightly better. You can use fresh or frozen broccoli, although the recipe calls for 2 packages, frozen chopped broccoli.

1 cup grated sharp cheddar cheese
2 eggs, beaten
1 cup mayonnaise
1 (10 ounce) can celery soup
2 teaspoons chopped onions
frozen chopped broccoli, cooked and drained (I use around 6 cups)
1 stack Ritz cracker
1/2 cup butter

Steps:

  • Mix all above ingredients together, except butter and crackers.
  • Put into 2-quart casserole.
  • Melt butter in pan and saute stack of crumpled Ritz crackers.
  • Spread over casserole.
  • Bake at 350 degrees.
  • Bake 30-35 minutes.

frozen chopped broccoli (or, you can use fresh)
1 (10 1/2 ounce) can cream of celery soup
1 tablespoon mayonnaise
Ritz cracker, crumbled

Steps:

  • Preheat oven to 350.
  • Cook broccoli on stove, drain.
  • Add soup and mayo, mix well.
  • Crumble 1/4 of the crackers and mix inches.
  • Crumble the remaining crackers and place on top of casserole.
  • Cook for 30 minutes, uncovered.
