LEMON BLUEBERRY SAUCE
This is a delicious lemon blueberry sauce to serve on cheesecake, yogurt, waffles, ice cream and more! This delicious blueberry sauce recipe only takes a handful of ingredients to prepare. Bonus: it can be made with fresh or frozen blueberries! You'll love the sweet blueberry flavor with a hint of lemon and vanilla.

Steps:
- In a small bowl, combine the cornstarch and water. Stir until completely smooth.
- Then, add the sugar and cornstarch mixture to a small saucepan. Whisk together.
- Add 1 cup of the blueberries to the sauce pan. Then, stir to coat with the sugar mixture.
- Then, add the lemon juice, lemon zest, vanilla, and salt
- Bring the mixture to a boil over medium heat, then reduce the heat to a simmer and continue to cook for 4-5 minutes, until thickened.
- Stir in the remaining blueberries and simmer for for 4 more minutes.
- Remove from heat and cool.
- Store in the refrigerator for up to a week.

EASY BLUEBERRY LEMON (OR LIME) SAUCE
Spoon this luscious blueberry sauce over oatmeal, yogurt, cheesecake, pancakes, vanilla ice cream, or use as a layer in a breakfast parfait. While it may be enjoyed straight from the pan, the flavors will improve as the sauce sits overnight. Yield: approximately 1 cup

- Combine all of the ingredients in a medium saucepan. Bring to a boil over medium heat, stirring regularly. Reduce the heat to maintain a simmer, and cook, stirring regularly, until the berries have broken down and the mixture has thickened, about 10 minutes. (Note: The sauce will continue to thicken as it cools, so it should still be a little soupy at the end of the cooking time.) Serve warm, or cool and then transfer the sauce to a jar or airtight container and refrigerate until ready to use. Gently reheat if desired for use on pancakes, waffles, oatmeal, cheesecake, yogurt, etc.
BLUEBERRY LIMEADE
Refreshing blueberry limeade is prepared with fresh blueberries, lime juice, and sugar. Serve cold over ice. Stir well before serving.

- In a small pan over medium high heat, combine blueberries, sugar and lemon juice.
- Stir often until berries soften and release some juice, about 2 minutes.

- Make crust:
- Preheat oven to 375°F. Line a buttered 8-inch square glass baking dish with 2 (18- by 6-inch) sheets of foil, overlapping them in opposite directions so that there is overhang on all 4 sides.
- Pulse together flour, cornmeal, confectioners sugar, salt, and butter in a food processor until mixture resembles coarse meal. Press onto bottom of baking dish and 1 inch up sides. Bake in middle of oven until golden brown, about 20 minutes.
- Make filling while crust bakes:
- Whisk together eggs, sugar, flour, and zests. Whisk in juices, milk, and a pinch of salt. Toss blueberries with jam in another bowl.
- Whisk egg mixture and immediately pour into hot crust, then bake until just set, about 17 minutes. Gently spoon berries evenly over top and bake 2 minutes more. Transfer baking dish to a rack and cool.
- Chill, covered, overnight (8 hours). Use foil to lift dessert out of dish, then cut into squares.
