BLUE CHEESE CROSTINI WITH PECANS AND HONEY
Serve these warm and delicious crostini at your next party! Just 4 simple ingredients! This recipe is for 12 crostini, but scales easily for as many as you need.

Steps:
- Preheat the oven to 375°F.
- Arrange baguette slices in a single layer on a baking sheet. Drizzle slices with olive oil and bake for 8-10 minutes, until golden brown. Set aside until cool enough to handle.
- Turn oven on to broil.
- In a medium bowl stir together blue cheese and pecans. Scoop mixture on to each crostini evenly. Broil 1 minute.
- Top each crostini with a whole pecan. Drizzle each with about 2 teaspoons of honey. Serve warm.

THREE CHEESE CROSTINI APPETIZER
Steps:
- Position an oven rack 5 to 6 inches from the broiler element. Preheat the broiler to high. Line a baking sheet with heavy-duty aluminum foil.
- In a small bowl gently toss the tomatoes, shallots, 1/2 tablespoon of olive oil and vinegar together. Spread out the mixture on the prepared baking sheet. Set the baking sheet on a rack under the broiler element. Broil until the tomatoes begin to show a few black spots, about 4 minutes with oven door closed. Turn the mixture, using a spatula, and broil 3 minutes longer with the oven door closed. Remove from the oven and transfer the mixture with a slotted spoon to a small bowl; set the bowl aside until needed. Retain the broiler heat on high.
- While the tomatoes are broiling, combine the ricotta, blue cheese, pesto, 1/2 teaspoon salt, lemon juice and lemon peel in a medium bowl.
- Arrange the baguette slices on a large baking sheet and brush with the remaining 2 tablespoons of olive oil. Put the baking sheet on the rack under the broiler element and broil until golden, about 1 minute or so per side, watching carefully. Remove from oven.
- To assemble, season the tomato mixture with remaining 1/4 teaspoon salt and peppercorns, then stir in the basil. Spread some of the ricotta mixture over each crostini. Top with the tomato/onion mixture, then sprinkle with shredded cheese, dividing all the ingredients equally among the slices. Transfer to a serving plate and serve.
CROSTINI WITH BLUE CHEESE, QUINCE PASTE AND CRACKED BLACK PEPPER
Steps:
- Preheat a grill, grill pan or oven to medium-high heat.
- Toast the bread until lightly golden brown on both sides-the bread should be crisp but still tender on the inside, not brittle. Brush one side with olive oil and season with salt. Top each slice with a thin slice of cheese and a slice of quince paste and season with cracked black pepper.

- Preheat an outdoor grill for medium heat and lightly oil the grate. Slice pears into half-moons.
- Cook pears on the preheated grill until nicely browned, about 5 minutes per side. Set aside.

Steps:
- Preheat oven to 350. Place bacon strips on foil lined baking sheet and sprinkle rosemary on top. Bake for 10 - 15 minutes, until almost done, but not too crisp. Remove from oven and set aside.
- Preheat small skillet to medium heat and melt olive oil and butter together. Place shallot slices in skillet and stir well to coat evenly. Add brown sugar and melt together, continually stirring. Reduce heat to medium low and slowly cook for about 10 - 15 minutes until shallots are soft and caramelized in color. Remove from heat and set aside.
- Preheat a grill pan to medium heat. Place pears on pan and quickly grill for about 2 - 3 minutes until char lines are visible. Remove from heat.
- Preheat oven to broil. Line second baking sheet with bread slices. Top with large chunks of the blue cheese. Crumbles don't hold together well, so I do recommend a wedge of cheese that you pinch and crumble yourself. Top with bacon slices, caramelized onions and pears. Toast in oven until cheese melts, approximately 3 - 5 minutes.
- This is great when serve with warm toasted nuts and red wine.
