2 (10 inch) flour tortillas
2 tablespoons vegetable oil
1 small onion, chopped
½ red bell pepper, chopped
1 teaspoon minced garlic
1 (15 ounce) can black beans, rinsed and drained
1 teaspoon minced jalapeno peppers
3 ounces cream cheese
½ teaspoon salt
2 tablespoons chopped fresh cilantro

Steps:

  • Wrap tortillas in foil and place in oven heated to 350 degrees F (175 degrees C). Bake for 15 minutes or until heated through.
  • Heat oil in a 10-inch skillet over medium heat. Place onion, bell pepper, garlic and jalapenos in skillet, cook for 2 minutes stirring occasionally. Pour beans into skillet, cook 3 minutes stirring.
  • Cut cream cheese into cubes and add to skillet with salt. Cook for 2 minutes stirring occasionally. Stir cilantro into mixture.
  • Spoon mixture evenly down center of warmed tortilla and roll tortillas up. Serve immediately.

1 tablespoon canola oil
3 tablespoons chopped onion
3 tablespoons chopped green pepper
1 can (15 ounces) black beans, rinsed and drained
4 flour tortillas (8 inches), warmed
1 cup shredded Mexican cheese blend
1 medium tomato, chopped
1 cup shredded lettuce
Optional toppings: Salsa, sour cream, minced fresh cilantro and cubed avocado

Steps:

  • In a nonstick skillet, heat oil over medium heat; saute onion and green pepper until tender. Stir in beans; heat through. , Spoon about 1/2 cup of vegetable mixture off center on each tortilla. Sprinkle with the cheese, tomato and lettuce. Fold sides and ends over filling and roll up. Serve with optional toppings as desired.

Black Bean and Cheese Burrito with Hidden Vegetables image

A kid-friendly, baked burrito recipe featuring black beans, cheddar cheese, and hidden vegetables!

1 tablespoon olive oil
1/2 red bell pepper (chopped, seed, and diced)
1/2 red onion (diced)
3 carrots (peeled and diced)
1 large (26 ounce) can black beans
1 1/2 teaspoon ground cumin (preferably McCormick brand)
1/2 teaspoon garlic powder
1/2 teaspoon Kosher salt
1/4 teaspoon black pepper
1 1/4 cup Cheddar cheese
10 standard-sized (8") flour tortillas
Cooking spray (preferably made with canola oil)

Steps:

  • Preheat the oven to 350° and have ready a baking sheet.
  • Add the olive oil to a saucepan over medium heat and allow the oil to come to temperature. Add the pepper, onion, and carrots, and sauté for about 8 minutes, or until softened. Stir often.
  • Add in the beans, cumin, garlic powder, salt, and pepper. Allow the mixture to come to a rapid simmer. Reduce the heat accordingly to maintain a simmer for about 10 minutes, or until slightly reduced. Stir often.
  • Transfer the beans to a food processor fitted with a paddle attachment, and process until smooth. If you do not have a food processor, you could use a blender or the back of a wooden spoon.
  • Stir in the cheddar cheese. Scoop a scant 1/4 cup of the mixture onto each tortilla and roll into a tight burrito.
  • Mist both sides of each burrito with cooking spray, and transfer to the baking sheet. Do not overcrowd the sheet, and bake in batches if necessary.
  • Bake for 10 minutes. Turn each burrito, and bake for 10 minutes more. Allow to cool slightly, serve, and enjoy.

300g brown rice
½ small pack coriander , chopped
juice 1 lime
1 tsp olive oil
2 garlic cloves , crushed
1 tbsp chipotle paste
2 tbsp ground cumin
1 tbsp brown sugar
1 tbsp cider vinegar
2 x 400g cans black beans , drained and rinsed
400g can chopped tomato
2 large tomatoes , chopped
1 red onion , finely chopped
½ small pack coriander , chopped
juice 2 limes
2 avocados , stoned and peeled
large wholemeal tortilla wraps, natural yogurt, lime halves to squeeze over and grated cheddar (optional)

Steps:

  • Put the rice in a medium saucepan with 600ml cold water and a pinch of salt if you like. Bring to the boil, then turn the heat down low, cover and gently simmer for about 20 mins until all the water has been absorbed. Turn off the heat and leave for another 10 mins undisturbed. Stir the rice and add the coriander and lime juice.
  • For the black beans, heat the oil in a large frying pan and add the garlic, chipotle, cumin, sugar and vinegar, and cook everything for 1 min. Tip in the beans and tomatoes, give everything a stir and simmer, uncovered, for 20 mins until thickened.
  • For the salsa and guacamole, mix the tomatoes with the onion, coriander, lime juice and seasoning. Tip half the salsa into another bowl and mash the avocados into it to make guacamole. Wrap everything up together in warmed wholemeal tortillas topped with natural yogurt, lime juice and grated cheese, if you like.

Steps:

  • Heat olive oil in medium saucepan over medium heat. Add onion and chili powder; sauté until onion softens, about 4 minutes. Stir in beans, corn, and 1/3 cup salsa. Reduce heat to medium-low, cover, and cook 10 minutes to blend flavors, stirring often. Season filling to taste with salt and pepper.
  • Stir together remaining 3/4 cup salsa, diced avocado, and 2 tablespoons cilantro in small bowl.
  • Heat tortillas 1 at a time over gas flame or electric burner for several seconds on each side to soften. Transfer to work surface. Spoon filling onto centers of tortillas, dividing equally. Top each with 1 tablespoon cheese and 1 tablespoon cilantro. Fold 2 sides in over filling, then roll up burrito from unfolded edge. Place 1 burrito, seam side down, on each of 4 plates. 8 tablespoons grated Monterey Jack cheese (about 2 ounces)
4 tablespoons nonfat sour cream
4 tablespoons chopped fresh cilantro

Steps:

  • Preheat oven to 350°F. Wrap tortillas in foil. Warm in oven until heated through, about 15 minutes.
  • Meanwhile, combine onion and oil in large nonstick skillet. Stir over medium-high heat until onion is golden, about 6 minutes. Add cumin and chili powder; stir 20 seconds. Add bell pepper, corn and carrot; sauté until almost tender, about 5 minutes. Add beans, tomatoes and jalapeño; bring to simmer. Season with salt and pepper. remove from heat.
  • Place warm tortillas on work surface. Spoon filling down center, dividing equally. Top each with 2 tablespoons cheese, then 1 tablespoon each of sour cream and cilantro. Fold sides of tortillas over filling, forming packages. Turn each package, seam side down, onto plate.

Steps:

  • Fry the garlic and onion for a few minutes, until the onion is a little brown.
  • Add the beans, pepper and salsa. Add the sweetcorn now too, if you are using it. Continue to heat for a minute or two.
  • Add the soft cheese, in small chunks. Mix until it has all melted into the filling.
  • Add salt to taste. You can add coriander, pepper, cumin or other herbs too, if you like.
  • Continue to heat and stir until the bean filling has reduced to the consistency you would like it. Be aware that the filling tends to thicken a bit after sitting and cooling for a while.
  • Serve in a warmed tortilla (or two, if you want a couple of smaller burritos, instead of one big one). You can toast the wrapped burrito in the oven, with grated cheese on top, if you like.

EASY FREEZER VEGETARIAN BLACK BEAN BURRITOS

A great and super-easy recipe for take-along lunches to work, school, etc. Instead of store-bought salsa, an excellent ingredient is recipe 276150. You can embellish them a million ways. This is one of my favorite OAMC recipes because making 12 burritos literally takes less than 10 minutes and makes 12 really yummy lunches.

16 ounces salsa (or recipe 276150)
12 flour tortillas (any size you like)
8 ounces shredded colby-monterey jack cheese or 8 ounces cheddar cheese
2 cups frozen vegetables, leftovers are great too, such as spinach, broccoli, green beans, cauliflower, shredded carrots, what

Steps:

  • Set out a 9x11 baking pan to place folded burritos in.
  • Whirl Black Beans (drained slightly) in a food processor for 3-5 seconds to make a thick paste.
  • Warm up tortillas in the microwave. Place all 12 on a plate on high for about 45-60 seconds.
  • Spread bean paste on tortilla. Layer on veggies, salsa, and cheese, (leftover chicken, shredded would also be good).
  • Roll up, folding in ends.
  • Place seam-side down into baking pan.
  • Repeat process for all 12.
  • Place baking pan in freezer until burritos are frozen solid.
  • Wrap individually in foil/freezer paper and place in a large Ziploc bag for easy grab-and-go lunch.
  • To reheat: cover with paper towel and microwave for 30-60 seconds, depending on microwave. Top with extra salsa, sour cream or plain yogurt with cumin.

¼ cup salsa
1 teaspoon chili powder
½ teaspoon cumin
¼ oregano
¼ teaspoon onion powder
1/8 teaspoon garlic powder
½-3/4 cup shredded cheese

  • Preheat oven to 400 degrees F. In a medium bowl, add the refried beans, salsa, chili powder, cumin, oregano, onion, and garlic powder. Stir until smooth. Spread about ¼ cup of the bean mixture on the tortilla in the center. Top with 2-3 tablespoons of cheese. Fold the edges of the tortilla towards the center, then roll up, tucking in all the filling. SWEET POTATO AND BLACK BEAN BURRITOS



Sweet Potato and Black Bean Burritos image

1 1/2 pounds sweet potatoes, cut into 1/2-inch cubes
Olive oil, for drizzling
Kosher salt and freshly ground black pepper
2 cloves garlic, minced
1/2 Spanish onion, finely diced
1 jalapeno, seeded and finely chopped
1 tablespoon chili powder
1 tablespoon tomato paste
1/2 teaspoon dried Mexican oregano
2 cups packed fresh baby spinach
One 15-ounce can black beans, drained
One 14.5-ounce can diced tomatoes
1 cup crumbled queso fresco
Juice of 1 lime
Ten 10-inch whole-wheat tortillas
1 bunch fresh cilantro, chopped
Hot sauce, as desired

Steps:

  • Preheat the oven to 425 degrees F.
  • Add the sweet potatoes to a baking sheet in an even layer. Drizzle with olive oil and season with salt and pepper. Roast until the potatoes are just tender but still have a bite, 15 to 20 minutes. Set aside.
  • Add 2 tablespoons olive oil to a large saute pan and place over medium heat. Add the garlic and onion and saute until translucent, about 5 minutes. Then, add the jalapeno and stir to combine. Add the chili powder, tomato paste and oregano. Stir to combine and cook for an additional 2 minutes to release the flavors of the herbs. Then, add the spinach, beans and tomatoes. Fold gently to combine. Simmer until the spinach is wilted and the liquid has reduced by half, 7 to 10 minutes. Remove from the heat and stir in the queso fresco, lime juice and sweet potatoes. Taste and season as needed.
  • Distribute the mixture evenly among the tortillas. Roll the tortillas, garnish with the cilantro and hot sauce and serve immediately. For freezer meal prep, wrap tightly in plastic wrap or parchment paper and store in an airtight container or bag. Freeze for up to 3 months.
  • To reheat, place wrapped burrito in the microwave and reheat for 3 minutes, flipping once. Unwrap, garnish with the cilantro and hot sauce, if desired, and serve!

Spicy Black Bean Burritos image

These simple black bean burritos are packed with my favourite Tex-Mex flavours, and they can be easily adapted to suit your preferences.

1 tbsp oil
1/2 onion, (sliced or diced)
400 g tin black beans, (drained (240g, or ~ 1 1/4 cups, when drained))
2 cloves garlic, (minced)
1 tbsp hot sauce
2 tsp smoked paprika
1/2 tsp ground cumin
Salt
Black pepper
1 medium tomato, (diced)
200 g (~ 1 cup) cooked rice (I used leftover white rice)
4 large flour tortillas
Your choice of additional fillings: grated cheese (lettuce, sour cream, etc. (see blog post for more ideas))

Steps:

  • Heat a dash of oil in a saucepan, and add the onion. Cook over a medium heat for a few minutes, until it is fairly soft. Add the next 7 ingredients (black beans through black pepper), and cook for a further 5 minutes, adding a small splash of water if necessary. Next, add the diced tomato, and cook for just a few minutes more, until the tomato has softened, but is still holding its shape.
  • Add the cooked rice, and mix to combine. Ensure the mixture is piping hot before assembling your burritos (again, you can add a splash of water if needed, to help you heat the mixture without it drying out).
  • To assemble, lay a large flour tortilla on a board, and heap about a quarter of the rice and bean mixture into the centre. Top with your choice of additional burrito fillings - I used grated cheese, lettuce, and sour cream.
  • Fold in the two ends of the burrito, then roll or fold to fully contain the fillings (see blog post for photos if needed!). Burritos are best eaten immediately, especially if you've mixed both warm and cold fillings.
