Time 3h

Number Of Ingredients 14

1.5 kg (3lbs) chuck steak (sliced into 2cm/1 inch chunks)
2 onions (finely chopped)
4 celery sticks (finely chopped)
2 carrots (peeled and finely chopped)
1 sprigs fresh rosemary
4 garlic cloves (crushed/minced)
2 tbsp flour
400 g (14oz) chopped tomatoes
2 cups beef stock
2 tsp mustard
1 tsp sugar
salt and pepper (to taste )
400 g (14oz) frozen puff pastry (thawed)
1 egg (beaten)

Steps:

  • Heat a large pot or Dutch oven over high heat and add a few tablespoons of olive oil.
  • Dry the meat with paper towels then add to the pot. Cook in batches until the beef is browned all over. Remove from the pot and set aside.
  • In the same pot, add the onion, celery and carrots. Cook for 5-7 minutes until the vegetables start to soften and turn golden brown. Add the garlic and rosemary and cook until fragrant.
  • Stir the flour into the vegetables then add the meat back into the pot and combine.
  • Pour in the tomatoes, beef stock, mustard and sugar. Season with salt and pepper, stir to combine then cover with a lid.
  • Reduce the heat and allow to simmer for 90 minutes or until the beef is almost completely soft. Remove the lid and allow to simmer for another 30 minutes until the beef is very tender and the sauce has reduced and thickened slightly.
  • Preheat the oven to 180°C/350°F.
  • Transfer the stew to a deep casserole dish. If there's a lot of sauce, feel free to only use half of it.
  • Top the pie with a sheet of puff pastry. Crimp the edges, make a few slits into the top of the pastry to act as vents and brush with beaten egg.
  • Place in the preheated oven and bake for 20-25 minutes until the pastry is golden brown, puffed and cooked through.
  • Remove from the oven, allow to rest for 10 minutes then serve.

Provided by Nagi

Categories     Mains

Time 4h20m

Number Of Ingredients 17

1 1/2 batches homemade shortcrust pastry
3 frozen shortcrust pastry sheets, thawed ((300g/10oz))
2 refrigerated pie crusts (US/Can)
3 frozen puff pastry sheets, just thawed ((300g/10oz) (Note 2))
1 egg (, lightly whisked)
1.25 kg / 2.5lb beef chuck (, 2.5cm/1" cubes (Note 3))
1/2 tsp each salt & pepper
2 - 3 tbsp olive oil
1 onion (, diced)
4 garlic cloves (, minced)
5 tbsp flour (, plain/all purpose)
1 1/4 cups (315 ml) beef stock, low sodium ((Note 4))
3 cups (750 ml) red wine (, dry full bodied (Note 5))
2 tbsp tomato paste
1 tsp Worcestershire sauce
2 tsp black pepper (, coarsely ground)
2 bay leaves

Steps:

  • Sprinkle beef with 1/2 tsp salt and pepper.
  • Heat 1 tbsp oil in a large heavy based pot over high heat. Add 1/3 of the beef and brown aggressively all over, then remove. Repeat with remaining beef, adding more oil if needed.
  • Turn stove down to medium high. Add garlic and onion, cook 3 minutes.
  • Add flour, stir through.
  • Slowly add beef stock while stirring constantly. Once flour is dissolved, add wine, tomato paste, Worcestershire, pepper and bay leaves.
  • Return beef into pot, cover with lid, adjust heat so it's simmering gently.
  • Simmer 1 hr 45 minutes. Remove lid, increase heat slightly and simmer 30 - 45 minutes, stirring regularly, or until beef is fork tender and liquid reduces down to a thickish gravy, just about covering beef (see video). Do not reduce liquid too much - thickens more as it cools & in pie.
  • Remove from stove, cover and cool filling (I usually leave overnight).
  • Preheat oven to 180C/350F.
  • Cut out 6 rounds from the shortcrust pastry, then drape pastry into pie tins - don't stretch and pull pastry, causes shrinkage. (Notes 1 & 6)
  • Place pies on tray. Top each pie with large sheets of parchment / baking paper and fill with pie weights (Note 7).
  • Bake 20 minutes, remove, then use paper overhang to carefully remove pie weights.
  • Return crusts into oven for 5 minutes or until base is light golden and dry (can skip, Note 8). Remove from oven.
  • Fill pies with cooled filling, push down to fill. Should be slightly mounded.
  • Cut rounds from partially thawed puff pastry - cut them slightly larger than the edge of the cooked pastry bases.
  • Brush edge of pie crusts with egg, then place lid on filling, pressing edges to seal puff pastry to the shortcrust pastry.
  • Brush lids with egg, then cut a 1cm / 0.5" incision in the middle using a small knife.
  • Bake 30 minutes or until deep golden and puffed.
  • Devour hot and fresh, topped with tomato sauce or ketchup if desired!

EASY STEAK PIE

Easy steak pie image

Nothing beats a classic homemade steak pie, complete with golden-brown flaky pastry and a rich filling. This easy family feast only takes 15 minutes to prep

Provided by Barney Desmazery

Categories     Dinner, Main course, Supper

Time 3h15m

Number Of Ingredients 8

3 tbsp sunflower oil
1kg braising steak, diced
2 onions, roughly chopped
3 tbsp plain flour
1 tbsp tomato ketchup
2 beef stock cubes mixed with 600ml boiling water
375g sheet of ready-rolled puff pastry
1 egg yolk, beaten

Steps:

  • To make the filling, heat the oven to 160C/140C fan/gas 3. Heat half the oil in a large casserole dish, brown the meat really well in batches, then set aside. Add the onions adding a drizzle more oil, then cook on a low heat for 5 mins until coloured.
  • Scatter over the flour, stirring until the flour turns brown. Tip the meat and any juices back into the pan along with the ketchup and give it all a good stir. Pour over the stock, season, and bring to a simmer then cover with a lid and put in the oven for about 2 hrs, until the meat is tender. The filling can be made up to three days ahead and chilled or frozen for up to three months.
  • To make the pie, heat the oven to 220C/200C fan/gas 7. Tip the filling into a 24-26cm rimmed pie dish and brush the rim of the dish with some yolk. Unravel the pastry, drape over the dish and use a knife to trim and press the edges against the side of the dish. Re-roll your trimmings to make a decoration if you like. Brush the pie heavily with egg yolk. Make a few little slits in the centre of the pie and bake for 40 mins until golden. Leave to stand for a few minutes before serving.

Yield 4 to 6 servings

Number Of Ingredients 22

2 tablespoons extra-virgin olive oil
3 tablespoons unsalted butter
1 medium onion, diced
3 medium carrots, peeled and sliced
1 rib celery, sliced
1/2 pound cremini mushrooms, quartered
2 cloves garlic, minced
1 tablespoon kosher salt
3/4 teaspoon dried oregano
3 tablespoons tomato paste
1 pound ground beef
1/4 cup canned low sodium beef broth
1/2 teaspoon Worcestershire sauce
Freshly ground black pepper
4 cups Mashed Potatoes, recipe follows
1/4 cup grated Parmesan, optional
1 1/2 pounds russet potatoes, peeled quartered
2 teaspoons kosher salt, plus more for seasoning
3/4 cup whole milk
6 tablespoons unsalted butter
2 tablespoons chopped fresh flat-leaf parsley
Freshly ground black pepper

Steps:

  • Preheat oven to 375 degrees F.
  • Heat the olive oil and 2 tablespoons of the butter in a large skillet over medium heat. Add the onion, carrots, celery, mushrooms, garlic, half the salt, and oregano. Cook until vegetables are tender, about 10 minutes. Stir in the tomato paste and cook until mushrooms are soft and tomato paste has turned brick red, about 8 minutes more. Stir in the beef, the broth, the remaining salt, the Worcestershire, and some pepper, breaking up any large clumps of meat, cook until the meat is no longer pink, about 3 minutes.
  • Transfer the meat and vegetables to a 2-quart oval casserole dish and spread the mashed potatoes over the top, leaving a 1/4-inch boarder around the edge. Make a decorative pattern on the top of the potatoes, if desired. Sprinkle with cheese, if using, and dot with the remaining tablespoon of butter. Bake until potatoes brown and the juices bubble around the edge, about 40 minutes. Let cool for 10 minutes before serving.
  • Put the potatoes in a saucepan with cold water to cover by about 1-inch and add the salt. Bring to a simmer over medium-high heat, uncovered, until the potatoes are tender but not mushy, about 15 minutes. At the same time, combine the milk and butter in a small saucepan and warm over low heat until the butter is melted. Remove from the heat and cover to keep warm.
  • Drain the potatoes and return to the saucepan. Toss the potatoes over medium heat until dry. Add the heated milk mixture and mash the potatoes until just slightly chunky, then stir in the parsley and season with salt and pepper, to taste.

EASY BEEF PASTIES

Easy Beef Pasties image

These easy beef pasties (beef hand pies) are made with a buttery, flaky buttermilk pie crust wrapped around a savory mixture of beef, carrots, potatoes, and onions in a quick homemade gravy.

Provided by Tracy

Categories     Dinner

Time 1h30m

Number Of Ingredients 19

1 cup (8oz, 2 stick cold unsalted butter (cut into 1/2-inch chunks)
2 1/2 cups (300g) all-purpose flour
1 tablespoon granulated sugar
1 teaspoon salt
1/2 to 2/3 cup buttermilk
1 tablespoon unsalted butter
12 ounces beef chuck (stew meat) (diced 1/2-inch)
1 1/2 cups diced potatoes (1/2-inch dice)
3/4 cup diced carrots (1/4-inch dice)
Water
1 1/2 teaspoon salt*
1/2 teaspoon crushed rosemary
1/4 teaspoon pepper
1/4 teaspoon oregano
3 tablespoons unsalted butter
1/2 cup finely diced onion
2 tablespoons all-purpose flour
1 egg
1 tablespoon milk

Steps:

  • Before you begin measuring everything out, place the cubed butter in the freezer to chill.
  • Stir together flour, sugar, and salt, and pour into the food processor. Add butter and pulse until butter is cut into the flour, but still has visible chunks.
  • While pulsing, slowly pour in 1/2 cup of the buttermilk and continue to pulse until the buttermilk is incorporated into the dough. At this point, your dough should look like rough crumbs and hold their shape if squeezed together. If dough does not hold its shape, drizzle in a little more buttermilk, up to 2½ additional tablespoons, until it does. The dough will look a little scary at this point, but don't worry. It's supposed to look like that!
  • Lay a sheet of plastic wrap on the counter and dump half of your dough crumbs onto the sheet. Gather the edges of the plastic wrap and press tightly together to form a 1-inch thick disk. Do the same with the rest of the dough. Place in a plastic bag and refrigerate for at least an hour, up to 24.
  • Preheat oven to 400°F.
  • In a medium saucepan, melt butter over medium-high heat (watch closely, you don't want to burn the butter) and add the meat. Cook until well browned.
  • Add potatoes and carrots and cover with just enough water that the meat and vegetables are submerged. Add salt, rosemary, pepper, and oregano.
  • Bring to a boil, turn down to medium and simmer for five minutes. Meat should be cooked through and potatoes should be softened, but still have a bit of a bite to them.
  • Remove from heat and drain the cooking liquid into a separate container for later use. Set liquid and meat and veggies aside.
  • In a medium saucepan, melt remaining 3 tablespoons of butter over medium heat. Add onions and cook until they begin to soften, about 2 to 3 minutes. Add flour and whisk continuously for 1 minute until a sticky paste forms and flour turns golden. Whisk in 1 cup of the reserved cooking liquid from your meat and potatoes (discard the rest). Simmer for 2 to 4 minutes, whisking continuously, until a thick gravy forms. Remove from heat and stir in the meat and vegetable mixture, making sure everything is well coated.
  • Whisk together egg and milk in a small bowl to make your egg wash.
  • On a well-floured surface, divide your dough into 4 to 6 equal-size pieces and roll into balls. If you are slow at rolling out pastry dough, place all the balls, but one, back in the fridge and work with one at a time so the dough stays chilled and easy to work with.
  • Re-flour your work surface and roll first ball out to 3/8 inch thick with a floured rolling pin, forming as round of a circle as you can manage (trim edges with a knife to make a perfect circle if necessary). Pick up your dough to make sure it is not stuck to your work surface. If it is, use a metal spatula to dislodge it before filling.
  • Brush egg wash around the edges of your pie crust to help seal it and spoon beef mixture over slightly less than half of the dough, leaving a 1/2-inch border. Fold dough over the filling and use a fork to crimp the edges closed. Cut 3 slashes in the top and transfer to baking pan.
  • Repeat with remaining dough balls. You may have a bit of meat mixture left over, depending on how thin you rolled out your dough. You can eat it with a spoon.
  • Brush pasties with egg wash and and bake for 15 to 20 minutes, until they are beautiful and golden.
  • Allow to cool slightly and enjoy.

Time 45m

Number Of Ingredients 18

2 tablespoons extra-virgin olive oil
2 tablespoons butter
3 large cloves garlic (minced)
8 ounces sliced white mushrooms (cleaned)
2 cups diced OR matchstick carrots
1 pound ground beef
1/3 cup all-purpose flour
2 cups low-sodium beef broth
1/2 cup half-and-half
Splash of red wine (optional)
3/4 teaspoon dried thyme
1/2 teaspoon garlic powder
1/4 teaspoon onion powder
1/2 to 1 teaspoon salt (to taste)
Freshly ground black pepper (to taste)
1 large potato (or 2 medium potatoes) (cooked, peeled, & cubed (about 2 cups))
1 1/2 cups frozen green peas
1 unbaked pie crust

Steps:

  • Adjust the oven rack to the center position and preheat oven to 400°F.
  • Set a large pot or Dutch oven over medium to medium-high heat. Add the olive oil and butter and allow to melt together; swirl the pan to coat. Add the garlic, mushrooms, and carrots and cook until tender, stirring occasionally, for 7 to 10 minutes or until the liquid has evaporated. Remove the veggies to a bowl or plate and set aside.
  • Add the ground beef to the empty pot. Cook until no longer pink, breaking apart and stirring as the meat cooks; drain the grease and season with salt and pepper. Sprinkle the flour over the cooked beef and stir to combine. Cook for 2 minutes, stirring constantly. Add the veggies back to the pot.
  • Pour in the beef broth, then add the half-and-half and the wine (if using). Stir to combine, scraping the bottom of the pot. Increase the heat and bring to a simmer, stirring occasionally. Continue to stir occasionally while the mixture simmers for a minute or two, or until thickened. Stir in the thyme, garlic powder, onion powder, salt, and pepper. Adjust the seasonings to taste. Stir in the cubed potato and the frozen green peas, then remove the pot from the heat.
  • Pour the mixture into a *deep* 9-by-9-inch baking dish (or a comparable 3-quart baking dish). Roll out the pie crust so that it's about one inch larger than your baking dish. Place the crust on top to the pot pie mixture and press the edges into the size of the dish. Cut vents in the top of the crust.
  • Bake for 30 to 35 minutes or until golden and bubbly. Allow to cool for 10 minutes before serving.

  • To make the filling, dust the beef with the flour and season with salt and pepper. Heat a large deep flameproof casserole over a medium heat with 20g of the butter. Once melted, add half the beef, then turn up the heat and move the beef around to brown it. Once it has some colour, remove it from the pan and set aside. Repeat with another 20g butter and the remaining beef.
  • Meanwhile, in a frying pan over a medium heat, melt the remaining butter, then fry the onions for 10 minutes or until softened. Add the mushrooms and garlic and cook for a further 10 minutes. Add them to the casserole along with all the browned beef. Add the stock and ale to the casserole and bring up to the boil. Turn the heat to low, add the thyme, tomato purée and Worcestershire sauce, then simmer gently on a low heat, stirring occasionally, for 2 hours or until the beef is tender (see tip).
  • Meanwhile, make the pastry. In a large bowl, mix the flour and suet together. Using your fingertips, rub the suet into the flour until it has the texture of breadcrumbs. Stir in the salt with a table knife, add the whole egg and 60ml cold water. Bring the pastry together, then knead lightly for about 20 seconds.
  • Shape the pastry into a thick disc, then wrap in cling film and chill until ready to assemble the pie. When the beef is tender, remove from the heat and leave to cool completely (see Make Ahead).

  • In a large saucepan or frypan, add some oil and fry your onions, carrot and potato until they are slightly softened - about 5 minutes.
  • Add the thyme and then the beef, and brown. Add the mushrooms, wine, stock with the cornflour added to it, and then the tomato paste. Pop the lid on your saucepan or frypan and turn down to a simmer (low) for about 40-50 minutes. Stir occasionally.
  • Preheat your oven to 180 degrees c. Grease your pie dish and cover with puff pastry - mine is a bit large so I put one sheet on the bottom and then patched it with triangles from a second.
  • Put your filling in your pie and seal it up with a second piece/s of puff pastry. Fork down the edges to fuse the top and bottom layers of pastry. Brush with beaten egg.

  • If you're baking your pie on the day then now is the time to preheat your oven to 200 C (180 fan)/400 F/Gas Mark 6
  • Scoop out your onions and set aside. Using the same frying pan put it back on a medium heat, add another tbsp of olive oil and add the minced beef. Break the mince up with a wooden spoon or similar.

  • Turn on the electric pressure cooker setting to saute and heat until hot. Add the olive oil and begin browning the meat in small batches. Brown on all sides and then remove until all meat is seared. (Optional: In a hurry, you can skip this step but it does add a richer flavor to the finished beef pot pie.)
  • Add the beef broth to the electric pressure cooker and scrap the bottom with a wooden spoon to remove any cooked on pieces.
  • To the pot, add the meat, vegetables, wine (if using), worcestershire sauce, thyme, and bay leaf. Stir to combine. Cover and cook on manual or “pressure cook” for 15 minutes. Allow pressure to release naturally for 5 minutes before quick release.
