Categories     Appetizer     Dessert     Taiwanese

Number Of Ingredients 6

225 g peeled sweet potato (I use Hannah sweet potato) (8oz )
225 g purple sweet potato (8oz )
4 tbsps sugar (divided)
2 tbsps butter (divided (or coconut oil for a vegan version))
140 g tapioca flour, divided (1 cup + 2 tbsps)
water

Steps:

  • Cut sweet potato into chunks, place in separate bowls and steam until they soften, about 20 minutes.
  • While they're still hot, transfer the both kinds of sweet potato into separate mixing bowls, then add in sugar and butter in each bowl. Use a potato masher or fork to mash until you reach the consistency of mashed potato.
  • Add tapioca flour in each bowl, mix and knead to form a ball. If the dough is too wet, add more tapioca flour; if it's too dry then add some water.
  • Preheat oven to 350°F (180°C)
  • Form the dough into 1 inch little balls and place them on a baking pan lined with parchment paper or silicone mat. Moistening your hands a little bit will make rolling the ball easier.
  • Bake for 16-18 minutes or until the bottom part is golden brown. Let cool for 5 minutes before enjoy it.

SWEET POTATO MOCHI

Sweet Potato Mochi image

Ma Tuan is also called Ma Yuan, or Ma ball. Hainan people call it "zhenbao", and Guangxi people call it "youdui". The skin of the dough I made today is not only glutinous rice flour, but also sweet potato mash, which makes the skin more golden, sweeter, softer, and healthier. It is a fine preparation of coarse grains. Outer material: 600 grams of rice noodles, 400 grams of mashed sweet potatoes, white sesame filling: 160 grams of white sesame, 40 grams of cake powder, 60 grams of sugar, 60 grams of oil Surface decoration: appropriate amount of white sesame

Provided by Norwegian Red Food

Time 30m

Yield 2

Number Of Ingredients 4

600g Glutinous rice flour
400g Sweet potato
320g White sesame (filling)
Some White sesame

Steps:

  • First boil the sweet potatoes. I cook the whole sweet potatoes in a rice porridge pot, which saves the process of steaming the sweet potatoes separately.
  • Remove the soft boiled sweet potatoes and press them into puree.
  • While hot, add glutinous rice flour and form a soft dough. Note: This is my sweet potato boiled in a rice porridge pot, so the moisture content is relatively large, so there is no need to add water.
  • Divide the mixed dough into several small portions, take one portion and knead it into a ball, and pack the white sesame filling into the nest.
  • Rub round.
  • Glue the white sesame seeds.
  • Pour half of the oil in the pot, warm the oil, add the sesame ball, keep it on a medium-to-low heat, and keep turning in the middle. When the sesame ball slowly floats, press it to form a hollow. Fry into golden brown and get out of the pan.

SIMPLE MOCHI

Simple Mochi image

Simple recipe. You only need a microwave. Very versatile with dough and fillings. Not too sweet either. Here's a small batch which can be multiplied, but if you make more, experiment with the microwave times.

Categories     Dessert

Time 4m

Yield 8-10 serving(s)

Number Of Ingredients 4

1 cup mochiko sweet rice flour (glutinous rice flour)
1 cup water
1/4 cup sugar
katakuriko, for dusting (potato starch)

Steps:

  • Mix mochiko and sugar in a bowl.
  • Add water and mix thoroughly. (will be watery).
  • Put in a microwaveable dish. Cover with plastic wrap.
  • Microwave on high for 4 minutes. Take off plastic wrap. Cool for a few minutes, if you want. Cut. Serve.
  • Opt. Dust with katakuriko or kinako to prevent mochi from sticking everywhere. If you don't have these, you can just put the mochi on cellophane.
  • Variations for Filling: You can add red bean paste, ice cream, chocolate, etc. in the middle if you want BEFORE you dust. add a teaspoon of filling and pinch edges closed.
  • Variations for Dough: Add a few drops of food coloring into batter for color variation. A few drops of flavoring (strawberry, grape, orange, blueberry, etc.) may also be added. >> For chocolate flavor, stir about 1/4 cup melted chocolate chips into mochi batter before cooking.
