- In a medium bowl, beat eggs, milk and oil.
- Add in flour, baking powder, sugar, salt, cinnamon and vanilla.

- In a small bowl, whisk together the flour, baking powder, salt, sugar, and cinnamon until blended. In a medium bowl, whisk together the milk, oil, vanilla, and eggs.
- Add the wet ingredients to the dry ingredients, and mix until just combined (a few small lumps are okay). Let rest five minutes.
- While the batter is resting, preheat your waffle iron. Add the batter and cook according to your waffle maker's directions. (For my belgian waffle maker, 1 cup of batter cooked for 4 minutes was perfect.)
- Serve warm, and top with syrup, whipped cream, and cinnamon, if desired.
CINNAMON ROLL WAFFLES
A decadant cinnamon bun turned into a waffle. Will give you a toothache. Inspiration from Recipe Girl's blogsite.

- Too prepare the waffles: In a medium bowl, whisk together flour, sugar, baking powder, baking soda and salt. Make a well in the center of the mixture; set aside.
- In a separate bowl, whisk together eggs, buttermilk, oil and vanilla. Pour into the bowl with the dry ingredients. Stir just until moistened; batter will be slightly lumpy.
- Preheat a waffle iron and spray with nonstick spray. Pour batter into waffle iron grid and close the lid. Bake until waffles are completely done- follow your waffle iron's instructions. Use a fork to remove finished waffles. Repeat with remaining batter. Keep waffles warm until ready to serve (Placing in a 200 degree oven is will do the trick).
- To prepare the cinnamon topping: In a medium bowl, mix butter, brown sugar and cinnamon. Scoop the filling into a small zip baggie and set aside.
- To prepare the cream cheese topping: In a medium, microwave-safe bowl- heat butter and cream cheese for 30 to 60 seconds; just until melted. Stir together until smooth; whisk in powdered sugar and vanilla extract.
- When ready to serve, place waffle on plate, drizzle cinnamon topping, then drizzle cream cheese topping to taste. Serve immediately.
CINNAMON WAFFLES
I grew up with homemade waffles fresh and hot from my gramma's waffle iron. My DH has been addicted to the frozen pre-made things that pass for waffles these days A little while back I made real,old fashioned, ones for him using my gramma's iron! He melted with enjoyment but I think I'm now stuck making fresh waffles forever, lol. I found this on AllRecipes as I didn't find a cinnamon waffle recipe here on Food. It's easy to make them as soft or crisp as you like, the longer you leave them in the waffle iron the crisper they will become.

CINNAMON-SUGAR WAFFLES WITH BLUEBERRY SYRUP

- Preheat a waffle iron according to manufacturer's instructions.
- In a large bowl, whisk together the flour, sugar, baking powder, cinnamon and 1/2 teaspoon salt.
- In another bowl, whisk together the milk, eggs, and butter. Add the wet mixture to the dry and whisk to combine, being careful not to over mix. Some lumps are good.
- Depending on the size of your waffle maker, add 1/4 to 1/2 cup of batter into the center of the waffle iron. Close the lid and cook until golden and crisp, 3 to 5 minutes.
- Add the blueberries, maple syrup and zest to a saucepan and heat over medium heat. Use a wooden spoon to break up some of the berries. Simmer for 5 minutes.
CAROL'S CINNAMON WAFFLES
If you like those cinnamon waffles from the frozen food department of the grocery store, you'll love these! I developed this recipe because I don't care for syrup. Most waffles need the sweetness of syrup to make them special. These waffles are yummy just as they are; no syrup necessary! Whipped cream and fruit are a great addition if you want to go all out or just add butter and powder sugar to the top. These may brown quicker than standard waffles because of the sugar in them, so test the first one and adjust the time. I have also added 2 tablespoons ground flaxseed; you can't taste a difference. Enjoy!

PANCETTA AND CINNAMON WAFFLES

- Preheat the oven to 350 degrees F. Spread the walnuts in an even layer on a baking sheet. Bake for 10 to 12 minutes until toasted. Set aside to cool.
- Preheat and lightly grease a waffle iron.
- Heat the oil in a medium skillet over medium-high heat. Add the pancetta and cook until brown and crispy, about 3 to 5 minutes. Transfer the pancetta to a paper towel-lined baking sheet to cool.
- In a large mixing bowl, combine waffle mix, eggs, vegetable oil, water, cinnamon, and salt. Using a whisk, blend the ingredients together until smooth. Stir in the pancetta. Pour the batter, using the amount recommended by the waffle iron manufacturer's instructions, into the preheated waffle iron. Cook waffles for 3 to 4 minutes until golden brown.
- Place waffles onto serving plates. Sprinkle with the chopped walnuts and drizzle with maple syrup. Serve immediately
CINNAMON SUGAR SOURDOUGH WAFFLES
Steps:
- Combine the cinnamon and sugar in a shallow bowl.
- Preheat your waffle iron according to the manufacturer's instructions. Add the leftover starter, milk, 2 tablespoons (28 g) of melted butter, and egg into a large bowl. Whisk well to combine. Add the flour, sugar, baking powder, and salt and continue to whisk until smooth. If the batter seems too thick, add more milk to thin out the texture. This will all depend on the consistency of your sourdough starter.
- Lightly coat the waffle iron with cooking spray. Ladle some of the batter into the waffle iron to fill the pan. Cook for 3 to 5 minutes, or until golden and crisp. Transfer to a cutting board and brush lightly with some of the remaining melted butter. Press the waffle into the cinnamon sugar to coat on both sides. Repeat to cook the rest of the waffles.
- To serve, top your waffles with the pineapple, mixed berries, and coconut flakes. Enjoy with sweet maple syrup on the side.
- TIP: Once completely cool, these waffles can be frozen for up to 2 months. Cover in plastic wrap and a layer of foil before freezing. Bake frozen at 350°F (180°C) until warmed through.
BANANA-CINNAMON WAFFLES
I don't know where I got this recipe from but it was a favorite of my husband's before our waffle iron broke. The cooking time is a guess.

- In a large mixing bowl combine flour,baking powder, cinnamon, nutmeg, and salt. In a separate bowl beat together egg yolks, milk, banana, and oil. Gradually stir in the yolk mixture with the flour mixture until combined but slightly lumpy.
- In a medium bowl whisk the egg whites until stiff peaks form. Gently fold the egg whites into the rest of the batter, leaving a few white fluffs of egg white. * Don't over mix.
- Pour 1 to 1 1/4 cup batter into grids of a preheated, lightly greased waffle iron. Close lid quickly and do not open during baking. Bake according to manufacturer's directions.
- When done use a fork to lift waffle from grid. Repeat with remaining batter. Keep waffles warm in oven while cooking remaining waffles. Serve with maple syrup.
CINNAMON BELGIAN WAFFLES
I tried several Belgian waffle recipes after getting my iron. In the end, I combined my 1st choice with my husbands favorite to come up with this recipe.

- Mix dry ingredients in a small bowl.
- In a separate bowl, whisk eggs until well blended (I use a kitchenaid mixer); stir in the buttermilk and butter.
- Stir in the dry ingredients until well mixed, adding enough of the milk to make the batter thin enough to flow from a spoon. I use the whole 1/4 cup.
- Bake in a lightly oiled waffle iron until medium brown, about 3 minutes in mine.
