- Take the chicken thighs out of the oven at least one hour before you plan to cook them. Rinse the chicken thighs in cold water, and then dry them well using lint free paper towels.
- Prepare the baking sheet by place a wire rack over the top of it.
- Preheat the oven to 450°F
- Season the chicken thighs with salt and pepper. Place the chicken on a plate or a plastic cutting mat for easy cleanup.

- Combine the first 10 ingredients in a resealable plastic bag or shallow glass container; mix well.
- Rinse and dry the chicken thighs and add to the marinade (I did not do this but I suggest setting some of the marinade aside so that you can baste the chicken toward the end of the cooking time).
- Seal or cover and refrigerate for 1-2 hours.
- Place the chicken in a shallow baking pan and spoon additional marinade on top of chicken.

- Preheat oven to 400 degrees F.
- Have a 9" x 13" oven-save pan ready. No need to spray or grease with oil.
- Prep your butter by cutting each tablespoon into quarters that you can easily pick up. Make sure the butter is not still in the wrapper or butter dish, as you may get raw chicken on it. You don't want raw chicken on your remaining butter!
- Always wash your hands before and after handling raw meat.
- Grab the first chicken thigh, and feel around the edge of the skin. There will be a side that is open, and you can gently pull the skin up away from the meat. No need to pull hard. Just enough to slide one prepared piece of butter under the skin so that it sits on top in the middle between the skin and the meat.
- Place the thigh skin-side up in the pan. Repeat for remaining thighs.
- Generously salt the thighs on top and bottom.
- Sprinkle with pepper, as desired.
- Place pan in oven and bake for 45 minutes, or until a meat thermometer inserted in the thickest part of the thigh reads 165 degrees F. I like to double check one of the thighs by flipping it over and inserting a knife next to the bone. If the meat next to the bone is still pink, put it back in the oven for 5 more minutes. Check again on a different thigh.
- Once the thighs are cooked, let them rest for 5 minutes or so.
- Serve and enjoy!

BAKED CHICKEN THIGHS/LEG QUARTERS
When I was first married we used to go to a Chinese restaurant that had the tastiest chicken -- spoiled by a greasy breading. After some trial and error I duplicated the flavor in this easy, economical dish. The long cooking that would dry out white meat gets the grease out of this dark meat and gives the skin a delicious crunch. It's quick to make, converts to any quantity, and is a great favorite with kids and adults both. It also holds well and the leftovers are good cold. Note: I've noticed in the last couple years that if you're not VERY CAREFUL about reading the fine print you'll end up with chicken pieces that have been "enhanced" by injecting it with some kind of "flavoring solution." Not only does this injected chicken make my DH ill from a reaction to the "flavoring solution," but it also seems to make it impossible for the chicken to pick up the flavorings you add. No matter what I do to it, "enhanced" chicken always tastes the same. So beware what you're buying. :)
