A no frills bread pudding. This is a recipe my mom always made and we all really enjoyed it.

- Heat oven to 375 degrees F(190 degrees C)
- In a large bowl, combine bread cubes, melted margarine, raisins, and cinnamon; mix well, and transfer to a 2 quart baking dish.
- Use the same bowl to beat the eggs. Stir in sugar, vanilla, and salt until sugar is dissolved. Slowly whisk in the hot milk. Pour egg mixture over bread cubes, sprinkle with nutmeg, and set aside to soak for 5 minutes.
- Bake in preheated oven for 25 to 30 minutes, or until a knife inserted into the center comes out clean.

EASY SOUTHERN BREAD PUDDING
I got the recipe from all different sources and combined them. My Grandma's family is from the south so that where she got it from (and we all know that there's no food like southern cooking, lol !!!) I am also do research on cajun/creole food and this came up as a recipe that they use, so I hope that you enjoy!

- Preheat oven to 350 degrees.
- Melt butter (set aside).
- Cut the slices of bread into cubes (set aside.
- Beat eggs and add the brown sugar, vanilla extract, 1/2 teaspoon of cinnamon, and evaporated milk (MIX WELL TOGETHER).
- Lightly grease or butter aluminum pan or casserole baking dish.
- Put bread cubes into aluminum pan and add raisins. Pour melted butter over it .
- Pour mixture (brown sugar, vanilla extract, 1/2 teaspoon of cinnamon,milk) over it.
- Sprinkle the remaining cinnamon on top of bread mixture.
- Place in the oven for 1 hour or until brown.
QUICK & EASY BREAD PUDDING
Shortcut with eggnog and pumpkin pie spice! I also like using leftover cinnamon rolls, cinnamon bread, or pannatone. Make it healthy with no sugar added bread, sugar-free hershey bars, splenda, soy or low-fat eggnog and fat free half-n-half. I also like using white chocolate chips or a white/brown combo. For a more unique flavor, use cloves, nutmeg, cinnamon (i use 1 TBS each because i like the spice) and add some rum extract. Add some nuts on top if you'd like.

- Preheat oven to 350 degrees F (175 degrees C).
- Break bread into small pieces into an 8 inch square baking pan. Drizzle melted butter or margarine over bread. If desired, sprinkle with raisins.

Steps:
- Tear 500g white or wholemeal bread into a large mixing bowl and add 500g mixed dried fruit, 85g mixed peel and 1 ½ tbsp mixed spice.
- Pour in 600ml milk, then stir or scrunch through your fingers to mix everything well and completely break up the bread.
- Add 2 beaten large eggs, 140g light muscovado sugar and zest of 1 lemon, if using. Stir well, then set aside for 15 mins to soak.
- Heat oven to 180C/160C fan/gas 4. Butter and line the base of a 20cm non-stick square cake tin (not one with a loose base).
- Stir the melted butter into the pudding mixture, tip into the tin, then scatter with demerara.
- Bake for 1½ hrs until firm and golden, covering with foil if it starts to brown too much. Turn out of the tin and strip off the paper. Cut into squares and serve warm.

- Tip the flour into a bowl and mix in the yeast with the salt. Stir in the water, oil and honey. Now bring together to make a soft dough - I use my hands, but a wooden spoon or knife from the cutlery drawer is fine. Tip onto a lightly floured surface and knead for 10 mins. It is worth putting in the time to do this as it will pay off later with lovely airy bread.
- Don't keep adding flour, a wet dough is better than a dry one, which will bake to a tough texture, so if you don't like the dough sticking to your hands, lightly oil them. If you are adding flavourings, knead them in gently now.
- Turn the dough into an oiled 1kg bread tin and cover with oiled cling film (or better still, a free unused shower cap from your last hotel stay!). Put in a warm place until the bread fills the tin, it should take between 1-2 hrs.
- Uncover and bake your bread at 200C/180C fan/gas 6 for 30-35 mins until golden. Tip out of the tin and tap the base of the loaf. It should sound hollow when fully cooked. If not cooked, put loaf back in the oven out of the tin and test again after 10 mins. Cool.
