CRISPY POTATO BAKE
Steps:
- Pre-heat the oven to 375 degrees F. Grease a 9×9 baking dish.
- Slice the potatoes about as thin as you can. This is best done with a very sharp knife. As you're slicing, do your best to keep the potato together so that it can be arranged in the tray properly. Once sliced, neatly arrange the potatoes in the dish. You can split a couple of the potatoes up to best fit snug in the dish.
- Wedge the onion slices in between slices of the potatoes and sprinkle with the chopped rosemary.
- In a small bowl, melt the butter and mix in the olive oil, salt, and some freshly cracked black pepper. Brush ~1/3 of the butter mixture over top of the potatoes. Set the rest aside.
- Cover and bake for 45 minutes. Remove from the oven, brush with another 1/3 of the butter mixture and bake for an additional 45 minutes, uncovered. Watch it the last 15 minutes to make sure it isn't burning.
- Remove from the oven, brush with the remaining butter mixture and top with parsley/ chives and bacon bits. ENJOY!
CRISPY BAKED POTATOES
Steps:
- Mix 2 tablespoons olive oil, 2 teaspoons kosher salt and 1 teaspoon pepper. Pierce 6 russet potatoes with a fork; rub with the oil. Bake on the top oven rack at 375 degrees F (put a baking sheet below to catch drippings) until tender, 50 minutes. Slice open and top with butter, salt, pepper and chives.
CRISPY BAKED POTATO
Steps:
- Preheat the oven to 400 degrees F.
- Poke holes all around the potato with a corn-on-the-cob holder (or fork), then rub it with the olive oil and sprinkle with salt and pepper. Put a metal skewer through the center of the potato lengthwise, put the potato in the oven and position a baking sheet on the rack below to catch any drippings. Bake until the potato is cooked through, 1 to 1 1/2 hours.
- Serve immediately with desired toppings.
EASY BAKE CRISPY CHOPPED POTATOES
My daughter made these for me, and I added a little bit of a spin with the seasoning. They are easy and not that bad for you. A great side dish with almost anything.

- 1. Clean red potatoes. No need to peel them! Dice into cubes, just under 1" in size. Put in a large bowl. Sprinkle lightly with olive oil, just barely covering the potatoes, not soaking them. Sprinkle Garlic Powder with Parsley liberally over mixture, then add sea salt and onion power to taste (a little bit on the last two items will do.)
- 2. Transfer the mixture to a foil-lined cookie sheet. For best results, keep in a single layer. Bake at 350 - 375 degrees F. for 30-35 minutes or until outer part of potato is crispy and insides are soft.
- 3. You can make as many or as little as you want. A full-sized cookie sheet full feeds 4, but there's never any leftovers!
CRISPY SLICED ROASTED POTATOES
A healthier and simpler alternative to homemade French fries or chips, and the perfect side when there's a chicken or roast already in the oven.

- Place a rimmed baking sheet in the center rack of the oven and preheat the oven to 425 degrees F.
- Thinly slice the potatoes about 1/8-inch thick and toss with the oil, salt and pepper. Carefully spread the slices on the hot baking sheet in a single layer and roast until golden and crispy, turning with a metal spatula occasionally and spreading them out to cook evenly, 30 to 35 minutes.
CRISPIEST EVER POTATOES
Somewhere between oven-roasted potatoes and crispy hash, these little creamer potatoes are boiled in water with baking soda before being smashed. The alkaline in the baking soda helps the skins crisp up quickly. Smashing increases their surface area and contact with the pan. The result is the crunchiest-ever crust.

- Preheat the oven to 450 degrees F.
- Add the potatoes to a large saucepan and cover with cold water by 1 inch. Add the baking soda and 1 tablespoon salt to the water. Cover, place over medium-high heat and bring to a boil. Uncover and continue to boil until the potatoes give easily when pierced with the tip of a knife, 15 to 20 minutes. Drain the potatoes and set the strainer over the top of the pan for a few minutes so the outsides of the potatoes can dry.
- Dump the potatoes onto a baking sheet. Drizzle with the oil and toss with the garlic, thyme and rosemary until the potatoes are completely coated in the oil. Sprinkle generously with salt and pepper. Using a small juice glass or glass bowl, smash each potato firmly but gently. (You want to just crack the skins and flatten slightly while keeping the potatoes mostly intact.)
- Roast until the bottoms of the potatoes are deep golden brown, 20 to 25 minutes. Remove the baking sheet from the oven and flip the potatoes using a spatula. Roast until the potatoes are golden brown and crispy on both sides, an additional 20 to 25 minutes. Transfer to a platter with a metal spatula. Serve while hot.
EASY CHEESY OVEN BAKED POTATOES
Needed something quick, easy and filling for unexpected guests. Only 4 ingredients that you probably have on hand right now! You can add garlic, onion or peppers for added color, flavor or pizzaz.

- Preheat oven to 375 degrees.
- Scrub potatoes and pierce with fork or knife and place in plastic baggies.
- Put baggies w/potatoes in microwave for 10 minutes.
- Spray bottom of glass 9X13 pan with cooking oil.
- Mix together 1 can of creamed soup with 1/2 can of milk - set aside.
- Allow pototes to cool enough to handle with bare hands or use pot-holders.
- Cut pototoes into cubes, *note* potatoes will only be about 1/2 done, so will be firm.
- Place potatoes in baking dish.
- Pour soup mixture over potatoes and place in oven for 15 minutes.
- Remove from oven and sprinkle with shredded cheese, (the more the better).
- Put back in the oven for 5 minutes.
- Presto!

- Scrub potatoes thoroughly with a vegetable brush.
- Cut potatoes in half lengthwise.
- In an 11" x 7" x 1 1/2" or 9" x 9" x 2" baking pan, combine melted butter, garlic or seasoned salt, and pepper.
- Place potatoes, cut side down, in butter mixture.
