Mixed Lettuces and Kohlrabi With Creamy Sumac Dressing image

Kohlrabi is underappreciated and misunderstood. But we've decided it's got our favorite crunch: sweet, dense, and snappy (think broccoli stem).

1/2 cup blanched hazelnuts
1 white or pink grapefruit
1/2 cup sour cream
1/4 cup fresh Meyer lemon juice or regular lemon juice
1 tablespoon finely chopped shallot
1 teaspoons sumac, plus more
Kosher salt, freshly ground pepper
12 cups torn mixed lettuces (such as red romaine, red-leaf, Little Gem, and/or butter lettuce)
2 medium kohlrabi, peeled, thinly sliced on a mandoline
1/2 cup mixed mint leaves and parsley leaves with tender stems
Ingredient info:
Sumac can be found at Middle Eastern markets, specialty foods stores, and online.

Steps:

  • Preheat oven to 350°F. Toast hazelnuts on a rimmed baking sheet, tossing once, until golden brown, 10-12 minutes. Let cool; crush with the flat side of a knife.
  • Remove peel and white pith from grapefruit; discard. Cut along sides of membranes to release segments into a small bowl; discard membranes.
  • Whisk sour cream, Meyer lemon juice, shallot, and 1 tsp. sumac in a large bowl; season dressing with salt and pepper. Add lettuce and toss to coat; season with salt and pepper. Tuck kohlrabi and grapefruit under and between lettuce. Top with herbs, hazelnuts, and more sumac.

Number Of Ingredients 9

4 cups cubed peeled kohlrabi (about 6 medium)
2 tablespoons butter
2 tablespoons all-purpose flour
2 cups whole milk
1/2 teaspoon salt
1/4 teaspoon pepper
Dash paprika
1 large egg yolk, lightly beaten
Minced chives

Steps:

  • Place kohlrabi in a large saucepan; add 1 in. of water. Bring to a boil. Reduce heat; cover and simmer until crisp-tender, 6-8 minutes., Meanwhile, in a small saucepan, melt butter. Stir in flour until smooth; gradually add milk. Bring to a boil. Stir in the salt, pepper and paprika. Gradually stir a small amount of hot mixture into egg yolk; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir for 2 minutes. , Drain kohlrabi and place in a serving bowl; add sauce and stir to coat. Sprinkle with chives and additional paprika.

"THIS IS one of my mom's original recipes. Though it is very simple to make this dressing, the sweet-sour combination plus the tang of the onion seems to convince people there is some secret ingredient. All my daughters now make this salad as standard fare in their homes."

8 cups torn leaf or iceberg lettuce
1/2 cup sugar
1/4 cup vinegar
1/3 to 1/2 cup half-and-half cream or sour cream
2 to 3 tablespoons sliced green onions

Steps:

  • Place lettuce in a large bowl. In a small bowl, stir together sugar, vinegar and cream or sour cream until sugar dissolves and dressing is smooth. Stir in green onion. Just before serving, pour over lettuce; toss lightly.

2 cups red-leaf lettuce (about 1/3 head), leaves torn
3 cups romaine lettuce (about 1/3 head), leaves torn
3 cups frisee or chicory (1 small head), leaves torn
16 thin asparagus stalks, blanched, cut diagonally into 1 1/2-inch pieces
1/3 cup oil-cured black olives, pitted and cut in half
2 teaspoons raspberry vinegar or red-wine vinegar
Salt and freshly ground pepper, to taste
1 1/2 tablespoons sour cream
2 tablespoons olive oil

Steps:

  • In a large salad bowl, toss together the red leaf, romaine, frisee, asparagus, and black olives.
  • In a medium bowl, whisk together vinegar, salt and pepper, and sour cream. Slowly whisk in the olive oil until completely combined. Pour vinaigrette over the salad, toss to coat, and serve immediately.

Kohlrabi tastes delicious when cooked in this simple lemony cream sauce. If you get your kohlrabi from the farmer's market, mix in the leaves in the end as well.

1 ½ cups heavy whipping cream, or as needed
3 kohlrabi, peeled and sliced, kohlrabi leaves reserved
2 teaspoons grated lemon zest, or to taste
1 tablespoon lemon juice, or to taste
salt and freshly ground black pepper to taste
1 pinch white sugar
1 bunch chopped fresh parsley

Steps:

  • Bring cream to a boil in a medium pot. Add kohlrabi and reduce heat. Cover and simmer until kohlrabi is soft, about 20 minutes.
  • Remove kohlrabi from sauce and place in a bowl; keep warm. Increase heat and cook sauce until thickened, about 5 minutes. Season with lemon zest, lemon juice, salt, pepper, and sugar. Stir in parsley. Add kohlrabi, mix to coat with sauce, and serve.
