Peppermint Layer Cake with Candy Cane Frosting image

This white layer cake with gooey peppermint-flavored frosting and crushed candy canes is a project but so worth it. Try it for the holidays for an extra festive dessert.

1 1/2 sticks unsalted butter, at room temperature, plus more for the pans
2 cups sifted cake flour (sift first, then measure), plus more for dusting
1 1/2 teaspoons baking powder
3/4 teaspoon salt
3/4 cup whole milk, at room temperature
1 teaspoon vanilla extract
1/2 teaspoon peppermint extract
1 1/2 cups sugar
3 large egg whites, at room temperature
1 1/2 cups sugar
1/2 cup light corn syrup
6 large egg whites
Pinch of salt
1/2 teaspoon vanilla extract
1/2 teaspoon peppermint extract
1/4 cup crushed candy canes, plus more for topping

Steps:

  • Make the cake: Position racks in the middle and lower thirds of the oven and preheat to 350 degrees F. Lightly butter three 8-inch-round cake pans and line the bottoms with parchment paper; butter the parchment and dust with flour, tapping out the excess. Sift the flour, baking powder and salt into a medium bowl. Combine the milk and the vanilla and peppermint extracts in a small bowl; set aside.
  • Beat the butter in a large bowl with a mixer on medium speed until smooth, about 1 minute. Gradually beat in 1 cup sugar, then increase the mixer speed to high and continue beating until light and fluffy, about 5 minutes.
  • Reduce the mixer speed to low and add the flour mixture in 3 additions, alternating with the milk mixture, beginning and ending with the flour mixture, until just combined. Scrape down the side of the bowl, then increase the mixer speed to medium and beat until smooth, about 5 more minutes.
  • In a separate large bowl (using clean beaters), beat the egg whites with a mixer on high speed until foamy. Gradually add the remaining 1/2 cup sugar and continue beating until stiff, shiny peaks form, about 6 minutes. Using a rubber spatula, gently fold the whites into the batter in 3 additions until combined.
  • Divide the batter evenly among the prepared pans. Bake, switching the position of the pans about halfway through, until a toothpick inserted into the center comes out clean, about 20 minutes. Let the cakes cool 10 minutes in the pans, then run a knife around the edges and invert onto racks to cool completely. Peel off the parchment. (The cakes can be made up to 1 day ahead; wrap in plastic and store at room temperature.)
  • Make the frosting: Fill a medium saucepan with 1 to 2 inches of water and bring to a simmer over medium-high heat. Combine the sugar, corn syrup, egg whites, 2 tablespoons water and the salt in a heatproof bowl and set over the saucepan (do not let the bowl touch the water). Whisk until the sugar dissolves and the mixture registers 165 degrees F on a candy thermometer, about 8 minutes. Remove the bowl from the pan and beat with a mixer on medium speed until soft peaks form, about 5 minutes. Increase the mixer speed to high and beat until fluffy and cool, about 4 more minutes. Add the vanilla and peppermint extracts and beat until combined, 1 more minute.
  • Assemble the cake: Place 1 cake layer on a platter and spread 1 cup frosting on top; sprinkle with about 2 tablespoons crushed candy canes. Top with another cake layer, spread with 1 cup frosting and sprinkle with another 2 tablespoons crushed candy canes. Top with the final cake layer, then frost the top and side of the cake with the remaining frosting. Sprinkle more crushed candy canes on top.

For peppermint mousse
10 ounces good-quality white chocolate (such as Lindt or Baker's), chopped
1 3/4 cups chilled whipping cream
1/4 cup sour cream
24 red-and-white-striped hard peppermint candies, crushed (about 2/3 cup)
For ganache
2 cups whipping cream
16 ounces bittersweet (not unsweetened) or semisweet chocolate, chopped

Steps:

  • Make cake:
  • Preheat oven to 325°F. Butter and flour three 9-inch-diameter cake pans with 1 1/2-inch-high sides. Whisk flour, baking soda and salt in small bowl to blend. Place cocoa in medium bowl; whisk in 1 2/3 cups boiling water. Cool cocoa mixture to room temperature, whisking occasionally.
  • Using electric mixer, beat butter in large bowl until fluffy. Gradually beat in sugar, then vanilla. Beat in eggs 1 at a time. At low speed, beat in flour mixture in 3 additions alternately with cocoa mixture in 2 additions. Divide batter equally among prepared pans. Bake cakes until tester inserted into center comes out clean, about 25 minutes. Cool cakes in pans 10 minutes. Cut around cakes to loosen; turn out onto racks. Cool completely.
  • Make peppermint mousse:
  • Combine white chocolate, 3/4 cup whipping cream and sour cream in heavy medium saucepan. Stir over low heat just until chocolate is melted and smooth. Transfer white chocolate mixture to large bowl; cool to barely lukewarm, whisking occasionally, about 20 minutes. Mix in candies. Beat remaining 1 cup cream in medium bowl to soft peaks. Fold cream into barely lukewarm white chocolate mixture in 4 additions. Chill mousse until beginning to set, about 2 hours. Place 1 cake layer on 8-inch cardboard round. Spread half of mousse over top of cake. Top with second cake layer, remaining mousse and third cake layer. Chill assembled cake until mousse is cold and set, about 3 hours.
  • Meanwhile, prepare ganache:
  • Bring cream to simmer in heavy large saucepan. Remove from heat. Add bittersweet chocolate; whisk until melted and smooth. Cool ganache until thick but still pourable, about 45 minutes.
  • Place cake on rack set over baking sheet. Pour ganache over cake, spreading with metal spatula to cover sides evenly. Chill cake until ganache sets, at least 30 minutes and up to 1 day.

3 large eggs plus 3 egg whites and 1 egg yolk
1/4 cup granulated sugar
2 tablespoons unsalted butter, melted
2 tablespoons cold water
1 packet (.25 oz) unflavored powdered gelatin
3 large egg yolks
1/2 cup granulated sugar
1/2 cup milk, hot
8 ounces white chocolate, chopped fine
1 to 2 teaspoons peppermint oil or extract (or to taste)
1 1/2 cups heavy whipping cream
2 to 3 drops red gel food color
2 cups (4 sticks) unsalted butter, softened
8 cups confectioners' sugar
3 to 4 tablespoons milk or cream to thin
1 teaspoon clear vanilla extract

Steps:

  • For the red stencil paste: In the bowl of an electric mixer fitted with the paddle attachment, cream the butter and confectioners' sugar together until the sugar is dissolved. Add the egg whites and mix again until incorporated. Stir in the flour and red food color; mix until just combined. Scrape down the bowl and mix again briefly.
  • With an offset spatula, spread a thin layer of stencil paste over a 17-by-11-inch silicone baking mat. Using a cake comb with 1/4-inch spaced teeth, and starting at one corner of the mat, drag the comb diagonally across the mat and through the paste so that 1/4-inch even stripes of red paste remain on the mat. Repeat the combing process until the entire mat is striped. Place the mat inside a 17-by-11-inch jelly roll pan and freeze for at least 10 minutes. (You may have leftover stencil paste.)
  • For the sponge cake: Preheat the oven to 450 degrees F.
  • Using a stand mixer fitted with the paddle attachment, beat the almond flour, confectioners' sugar, all-purpose flour, whole eggs and egg yolk until combined. Stop to scrape down the sides of the bowl as necessary.
  • In a separate bowl, whip the egg whites and granulated sugar with an electric hand mixer until a thick, glossy meringue forms. Gently fold the meringue into the almond mixture. Add the melted butter and gently fold again, being careful not to deflate the batter. Remove the jelly roll pan from the freezer and pour the batter on top of the red stencil paste. Bake for 5 to 7 minutes, or until the cake springs back when pressed in the center. Remove from the oven and let cool slightly. Run a knife between the cake edge and the pan to loosen the sponge.
  • Invert the cake onto a sheet of parchment paper and carefully peel away the silicone liner. Trim the edges of the cake away using a small sharp knife.
  • Place four 3-inch diameter pastry rings on a baking sheet. Cut the striped sponge into 3-inch-wide strips and trim the length to fit inside the pastry rings. Line each ring with the sponge so that the red stripe design rests against the pastry ring. Refrigerate the cakes while you prepare the peppermint mousse.
  • For the peppermint mousse: Place the 2 tablespoons cold water in a condiment cup and sprinkle the gelatin over the water. Let stand for 1 minute. Place the bloomed gelatin in a medium saucepan. Whisk in the egg yolks and granulated sugar; mix well. Stir in the hot milk. Cook over medium heat, whisking constantly, until thickened, 7 to 10 minutes. When done, it should be thick enough to coat the back of a spoon. Stir in the chopped white chocolate and let stand in the hot mixture for 2 minutes. Add the peppermint and blend with a whisk until the chocolate has melted and is even in color. Let cool to room temperature. Meanwhile, whip the heavy cream to soft peaks with an electric mixer.
  • When the chocolate mixture has cooled, pour it into the whipped cream and add a few drops of red food color. Gently fold the whipped cream into the cooled chocolate mixture until well blended. Transfer the mousse to a piping bag.
  • Remove the cakes from the refrigerator and place each cake on a length of plastic wrap double the size of the pastry rings. Pipe peppermint mousse into the centers, filling them to the top. Cover the cakes with the overhanging plastic wrap. Refrigerate until set, about 2 hours.
  • For the Christmas tree toppers: Combine the butter and confectioners' sugar in the bowl of an electric mixer fitted with the whip attachment. Beat until combined; add the milk or cream a little at a time until the mixture comes to piping consistency. Mix in the vanilla extract. Set aside 2/3 cup of the frosting in a small bowl and cover with a damp paper towel.
  • Add the green food color to the remaining frosting and beat well to combine. Transfer the frosting to a piping bag fitted with a large open star tip (4B).
  • When the cakes are well chilled, remove them from the refrigerator and cover the tops with a thin layer of frosting from the bowl of reserved white (untinted) buttercream. Place a sugar cone in the center of each cake. Pipe green buttercream stars on the cones beginning at the bottom edge of each cone, and travelling upward to the pointed end. Immediately sprinkle the cakes with the white nonpareils. Place gold and white sugar pearls on the trees using a pair of kitchen-dedicated tweezers. Arrange the small candy cane sprinkles on the tree using the tweezers.
  • Melt the yellow candy wafers in a microwave-safe bowl in the microwave at 100% power in 30-second increments. Stir between heating until the candy is smooth. Transfer the melted candy to a small disposable piping bag. Pipe the candy into a small star candy mold with cavities approximately 1.1-inch in diameter, filling just 8 of the cavities. Place in the freezer for 5 minutes, or until hardened. Turn out the stars onto a baking sheet. Use leftover melted candy to attach the flat sides of two stars together, lining them up to match evenly. Let stand until firm, about 2 minutes. Place an assembled star on the top of each tree, pressing them into the icing to adhere firmly. Refrigerate the cakes until ready to serve.

2 1/4 cups milk
1/2 teaspoon vanilla extract
Oil, for deep frying, (ratio should be 1:1, canola oil to peanut oil)
1/4 cup granulated sugar
1 teaspoon cinnamon

Steps:

  • In a bowl, sift together the flour, baking powder and salt. Stir in the brown sugar. In a separate bowl, whisk the eggs. Add the milk and vanilla extract and whisk again. Whisk in the dry ingredients until smooth.
  • In a deep wide pan, heat frying oil top 375 degrees F. Hold your finger over the bottom of the funnel or use a funnel cake dropper and fill it with the batter. Hold the funnel over the hot oil and remove your finger then immediately start drizzling the batter into the oil, moving the funnel around to make a criss-cross or scribbly design. Fry until golden brown on one side then flip it over to fry the other side. Remove the funnel cake from the oil with a slotted spoon or spatula and drain on a paper towel. Mix the sugar with the cinnamon and sprinkle the funnel cakes heavily with it. Serve immediately.

Steps:

  • In the bowl of a standing mixer, fitted with a paddle attachment, cream together the butter and sugar.
  • In a separate bowl beat the egg and vanilla until light and fluffy (I'm not convinced we need to do this step but my grandma did. Will she strike me down if I take a shortcut? Only one way to find out). Add egg mixture to the butter mixture and combine.
  • In a separate bowl stir together the dry ingredients then add to the butter mixture and combine well. Roll dough into a log 9-inches long and 1 1/2-inches wide, then wrap waxed paper, and chill 2 hours or overnight.
  • Preheat oven to 350 degrees F. Cut dough into 1/4-inch slices and place on a greased cookie sheet. Bake until golden brown on the edges about 10 to 12 minutes.

PEPPERMINT STRIPE COOKIES

Inspired by a series of brushstroke paintings by Ellsworth Kelly, these sugar cookies are meant to be lined up in a tight grid, painted with bold red stripes and arranged randomly. To paint on cookies, they must be first coated with royal icing and allowed to dry, preferably overnight. Luster dust and petal dust, colored powders used in cake decorating, are mixed with peppermint extract (or lemon extract, if you prefer) as a medium. (The dusts are available from cake-decorating stores, craft stores or online.) Make sure the peppermint extract you use is primarily alcohol, which evaporates immediately, leaving the pigment behind, and not primarily peppermint oil, which might stain the cookies. Flat, soft art brushes work best to apply the color, and a plastic paint tray with wells is best for mixing them.

2 cups/245 grams unsifted confectioners' sugar, plus more if needed
2 egg whites (or 2 tablespoons meringue powder and 4 tablespoons water)
A few drops of glycerin, if desired to create more of a sheen (optional)
1 recipe Basic Sugar Cookies, dough flavored with 1/2 teaspoon peppermint extract (omit the vanilla extract), cut into 3-inch squares and cooled
Red and pink petal dust and luster dust

Steps:

  • Prepare the royal icing: In the bowl of a stand mixer fitted with the whip attachment, combine the confectioners' sugar, egg whites and glycerin, if using. Combine on low speed, then raise speed to high and beat until stiff peaks form, about 5 minutes. Remove bowl from mixer, and test some of the royal icing on a cookie: If it doesn't spread out to a smooth finish within 10 seconds, it's too thick. Add 1 to 2 tablespoons water as needed to thin the mixture, whipping it by hand using the whip attachment. If the royal icing runs off the edge of the cookie, it's too thin, so you'll need to whisk in more sugar to thicken. You should have 1 1/2 cups royal icing.
  • Transfer to a small airtight container and refrigerate. It can be left out for 1 or 2 days, but you'll need to refrigerate for longer storage. (The icing will keep, refrigerated, for several weeks.)
  • Decorate the cookies: Pour the royal icing into a wide bowl. (The icing can be used cold, but it may separate, so it needs to be whisked, and may need to be thinned out with water or thickened with confectioners' sugar.) Holding a cookie by the edges, with the top-side down, dip into the icing, moving the cookie around a bit to make sure the icing coats the whole surface. Gently shake the cookie from side to side to let the excess icing drip off.
  • Use a small offset spatula to stop the flow of icing, gently scrape cookie against edge of bowl, and flip the cookie over. Use the spatula to spread the icing to pop any air bubbles, and make sure it goes all the way to the edges. It should quickly smooth out on its own. If not, thin it out a bit until it does. Use your fingers to wipe away any icing on the outside edges. Repeat with all the cookies. Place on a cooling rack set over a parchment- or wax paper-lined baking sheet to dry completely, preferably overnight (or at least 4 hours).
  • When dry, set up the cookies on a baking sheet or other flat surface in four rows of five cookies (you may have a few extra cookies), so they are abutting one another with no spaces. Mix the petal dust and luster dust with enough peppermint extract to make a very loose "wash" and, using brushes of different widths, make continuous brushstrokes in a few different widths across the entire surface. If you run out of pigment as you're brushing, dip the brush again, and continue the line, allowing the brush texture to show in places. When dry, rearrange the cookies on a platter so the lines no longer match up. Cookies will keep in an airtight container for up to 2 weeks.
