1/2 cup white vinegar
1/4 cup sugar
1/8 teaspoon salt
2 medium carrots, julienned
1/2 medium onion, cut into thin slices
FILLING:
1 pound ground pork
1 tablespoon minced fresh gingerroot
1 garlic clove, minced
2 tablespoons reduced-sodium soy sauce
1 tablespoon mirin (sweet rice wine)
1/4 teaspoon salt
1/4 teaspoon pepper
1 teaspoon fish sauce, optional
ASSEMBLY:
8 Bibb lettuce leaves
1/2 English cucumber, finely chopped
1 small sweet red pepper, finely chopped
3 green onions, chopped
1/2 cup each coarsely chopped fresh basil, cilantro and mint
1 jalapeno pepper, seeded and finely chopped
1/4 cup salted peanuts, chopped
Hoisin sauce
Lime wedges

Steps:

  • In a small bowl, mix vinegar, sugar and salt until blended. Stir in carrots and onion; let stand at room temperature 30 minutes., In a large skillet, cook pork, ginger and garlic over medium heat 6-8 minutes or until pork is no longer pink, breaking up pork into crumbles; drain. Stir in soy sauce, mirin, salt, pepper and, if desired, fish sauce., To serve, drain carrot mixture. Place pork mixture in lettuce leaves; top with cucumber, red pepper, green onions, carrot mixture and herbs. Sprinkle with jalapeno and peanuts; drizzle with hoisin sauce. Squeeze lime juice over tops. Fold lettuce over filling.

1 head of bib lettuce
1.5-2 lbs of ground pork
1/2 yellow onion
1/2 cup shredded carrots
2 Tbsp. fresh ginger, grated
2 Tbsp. fresh garlic, minced
2 Tbsp. olive oil
3 green onions, chopped with the white bottoms separated from the green tops
1/2 cup of hoisin sauce
2 Tbsp. soy sauce
1 Tbsp. rice wine vinegar
1 Tbsp. Sriracha
1 Tbsp. sesame oil

Steps:

  • In a pan, heat olive oil and then add garlic and yellow onion until they're translucent. Continue stirring so they don't burn.
  • Add the ginger and cook an additional 2 minutes.
  • Add the pork and brown.
  • While the pork cooks and in a separate bowl combine the hoisin sauce, sesame oil, rice wine vinegar, Sriracha, soy sauce and the white bottoms from the green onions. Whisk it all to combine.
  • Wash and dry your lettuce leaves.
  • Once the pork has cooked through drain the excess grease and add the carrots.
  • Add the sauce and cook for another five minutes.
  • Serve immediately. Add additional raw carrots, tops from the green onions and cilantro.

1 tablespoon olive oil
1-lg. ground pork
1 medium onion, diced
2 cups colorful coleslaw mix
1 (8-oz.) can whole water chestnuts, drained and diced
salt and pepper, to taste
1 /4 cup hoisin sauce
2 tablespoons soy sauce
2 tablespoon rice vinegar
1 tablespoon freshly grated ginger
2 cloves garlic, minced
2 heads Boston bibb lettuce
sliced green onions (optional)
toasted black sesame seeds (optional)
lime wedges (optional)

Steps:

  • Add 1 tablespoon of olive to a large skillet set over medium-high heat. Add the ground pork, season it with a little salt and pepper, and brown it, breaking it up as it's cooking. Continue cooking it until there's no pink remaining, about 5-6 minutes.
  • Add in the diced onions and stir in the sauce ingredients: garlic, fresh grated ginger, hoisin sauce, soy sauce, and rice vinegar. Continue cooking until the onions become translucent, about 1-2 minutes.
  • Turn off the heat, and then stir in the coleslaw mix and chopped water chestnuts. Season with additional salt and pepper to taste.
  • To serve: spoon approximately 1/4 cup of the ground pork mixture into the lettuce leaf of your choice. Add toppings as desired. Roll or fold like a taco and enjoy!

1 1/4 cups white rice
2 teaspoons vegetable oil, plus more for brushing
1/4 cup low-sodium soy sauce
1 tablespoon Sriracha (Asian chile sauce), plus more for drizzling
1 1/2 teaspoons grated peeled ginger
1 large pork tenderloin (about 1 1/4 pounds), halved lengthwise
2 carrots, diced
1/2 English cucumber, diced
2 tablespoons fresh lime juice, plus wedges for serving
2 teaspoons packed light brown sugar
12 large Bibb or Boston lettuce leaves
Chopped fresh cilantro, for topping

Steps:

  • Combine the rice and 1 1/2 cups water in a medium saucepan; bring to a simmer over medium-high heat and cook until most of the water is absorbed, about 4 minutes. Reduce the heat to low; cover and continue cooking until all of the water is absorbed, about 12 more minutes. Uncover and transfer to a large bowl to cool slightly.
  • Preheat a large grill pan or grill over medium heat and brush with oil. Combine 2 tablespoons soy sauce, the vegetable oil, 1 1/2 teaspoons Sriracha and 1 teaspoon ginger in a bowl; rub all over the pork. Transfer the pork to the grill pan; cook about 8 minutes per side for medium doneness. Transfer to a cutting board and let rest 5 minutes; thinly slice.
  • Stir the remaining 2 tablespoons soy sauce, 1 1/2 teaspoons Sriracha and teaspoon ginger into the rice. Add the carrots, cucumber, lime juice and brown sugar and toss. Serve the rice and pork in the lettuce leaves; top with cilantro and drizzle with more Sriracha. Serve with lime wedges.

Found in several Southeast Asian countries, Larb usually features seasoned ground meat served with sticky rice or lettuce cups, topped with fresh vegetables and herbs. Toasted rice powder is typically mixed into the seasoning for some crunch and to help thicken the dressing. Katie opts for ground peanuts instead to achieve a similar texture and nutty flavor. These can also be made with ground chicken, duck, turkey, or crumbled tofu in place of the ground pork. Fresh and flavorful, these lettuce cups are super easy to make at home any night of the week.

1 teaspoon grated fresh ginger (from about 1/2-inch piece)
1 teaspoon sesame oil
1 medium carrot, grated or julienned
1 bunch scallions, thinly sliced
Juice of 1 lime
1 tablespoon vegetable oil
1 pound ground pork
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon kosher salt
4 cloves garlic, minced
One 1 1/2-inch piece ginger, peeled and finely grated (about 1 tablespoon)
1 shallot, minced
2 tablespoons hoisin sauce
2 tablespoons soy sauce
1 head Bibb, butter or iceberg lettuce, separated into leaves
Fresh cilantro leaves, for serving
Fresh mint leaves, for serving
1/2 cup roasted salted peanuts, chopped
Sriracha, for serving

Steps:

  • For the scallion and carrot relish: Toss the soy sauce, ginger, sesame oil, carrots, scallions and lime juice in a medium bowl. Set aside in the refrigerator until ready to serve.
  • For the pork: Heat a medium skillet over medium-high heat. Add the vegetable oil, and once hot, the pork. Cook the pork, breaking it up with the back of your spoon until it browns and is no longer pink, 5 to 6 minutes. Stir in the red pepper flakes, salt, garlic, ginger and shallots. Cook until they are aromatic and incorporated, another minute. Add the hoisin and stir to combine, then add the soy sauce. Cook until the pork is sticky and glazed, about 3 minutes. Transfer the pork to a serving bowl.
  • Serve the pork with the lettuce leaves, some scallion and carrot relish, cilantro leaves, mint leaves, peanuts and sriracha, letting everyone build their own wraps with all the fixings.

16 Boston Bibb or butter lettuce leaves
1 pound lean ground beef
1 tablespoon cooking oil
1 large onion, chopped
¼ cup hoisin sauce
2 cloves fresh garlic, minced
1 tablespoon soy sauce
1 tablespoon rice wine vinegar
2 teaspoons minced pickled ginger
1 dash Asian chile pepper sauce, or to taste
1 (8 ounce) can water chestnuts, drained and finely chopped
1 bunch green onions, chopped
2 teaspoons Asian (dark) sesame oil

Steps:

  • Rinse whole lettuce leaves and pat dry, being careful not tear them. Set aside.
  • Heat a large skillet over medium-high heat. Cook and stir beef and cooking oil in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease; transfer beef to a bowl. Cook and stir onion in the same skillet used for beef until slightly tender, 5 to 10 minutes. Stir hoisin sauce, garlic, soy sauce, vinegar, ginger, and chile pepper sauce into onions. Add water chestnuts, green onions, sesame oil, and cooked beef; cook and stir until the onions just begin to wilt, about 2 minutes.
  • Arrange lettuce leaves around the outer edge of a large serving platter and pile meat mixture in the center.

1 head of any leaf lettuce, romaine, iceberge, boston bibb
1 carrot
1 lime, wedged
sliced red onion
1 lb ground beef
1 teaspoon chili-garlic sauce (Lee Kum Kee)

red onion, chopped
1 dash red pepper flakes (optional)
1 dash rice wine vinegar (optional)
soy sauce
cooked rice

Steps:

  • Start making rice ( I like Basmati Jasmine Rice) remember, do not open the lid while cooking the rice, it makes it mushy --.
  • Heat a large pot, or wok, on high, add ground beef, garlic, chopped onion, red pepper, soy sauce. Make sure to move the meat alot so it all breaks up and cooks evenly.
  • Slice carrots thin with a vegetable peeler, cut lime into wedges, and slice onions thin.
  • Meat should be done shortly, do not drain the meat. Fluff the rice with a fork.
  • Place all of the fresh ingredients on a plate, lettuce leafs, carrots, limes, and onions.
  • Place rice, and meat in separate bowls.
  • Serve by placing rice in lettuce add meat, and then the fresh veggies that you would like, wrap it up, and eat it.
  • This really only takes about 20-30 minutes. Really, really good.
