APPLE PIE CHEESECAKE BARS

2 cups all-purpose flour
1/2 cup packed brown sugar
3/4 cup cold butter cut into cubes
2 8 oz packages cream cheese (softened (the brick, not the tub style))
1/2 cup plus 2 tablespoons sugar (divided)
1 teaspoon vanilla extract
2 large eggs
3 medium apples (granny smith is great, peeled and chopped into 1/4 to 1/2" pieces)
1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
3/4 cup flour
3/4 cup firmly packed packed brown sugar
1/2 cup quick cook oats
1/3 cup cold butter cut into cubes

Steps:

  • Preheat oven to 350 degrees F.
  • In your food processor combine and pulse flour, brown sugar and cut up cold butter until a crumb type mixture forms. Press into a 13x9 inch pan that has been lined with either parchment paper or foil and sprayed lightly with non-stick cooking spray. Bake for 15 minutes and remove from oven.
  • In the bowl of an electric mixer beat cream cheese until light and fluffy. Add in 1/2 cup sugar and vanilla and beat until smooth. Add eggs, one at a time, and mix until just combined. Spread mixture over crust ( careful, remember your crust pan is hot from baking!).
  • In a bowl combine chopped apples, cinnamon, nutmeg and remaining 2 TBSP of sugar. Stir to combine. Sprinkle apple mixture over cream cheese mixture.
  • Once again in your food processor, combine flour, brown sugar, oats and remaining cold cubed butter, pulsing food processor until mixture starts to form crumbs. Sprinkle this topping over the apples.
  • Bake for 25-30 minutes or until filling is set. Remove from oven. Once cooled to room temperature, transfer to refrigerator. Store in refrigerator. When serving top with a drizzle of caramel sauce if desired.

1 ½ cups graham cracker crumbs, or more as needed
⅓ cup butter, melted
2 (8 ounce) packages cream cheese, at room temperature

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly butter a 9x13-inch baking pan.
  • Mix graham cracker crumbs and melted butter together in a bowl until crumbly, adding more crumbs if mixture is too wet. Press crust into the prepared baking pan.
  • Bake in the preheated oven until golden and set, 7 to 8 minutes. Remove from the oven and set aside.
  • Beat cream cheese and 1/2 cup sugar using an electric mixer in a large bowl until smooth. Add eggs, one at a time, beating after each addition. Beat in vanilla extract on low speed until mixture is blended. Pour filling over warm crust.
  • Stir apples, 2 tablespoons sugar, cinnamon, nutmeg, and allspice together in a separate bowl; spoon evenly over filling.
  • Mix brown sugar, flour, walnuts, and cinnamon for streusel together in a bowl. Mix or cut butter into walnut mixture using your fingers or a knife until crumbly. Sprinkle over apple layer.

1 tube (8oz.) refrigerated crescent rolls
8oz. cream cheese-softened at room temperature
½ cup sugar
1 teaspoon vanilla
2 medium apples (Granny Smith or Golden Delicious) - peeled and chopped in small pieces
¼ cup sugar
½ teaspoon cinnamon
1/8 teaspoon nutmeg
1 tablespoon cornstarch
3 Tablespoons melted butter
7 Tablespoons sugar
2 teaspoons cinnamon

Steps:

  • Preheat the oven to 375F. Grease 8 x 8 inch baking dish with non-stick spray, set aside.
  • To make the cheesecake filling beat together cream cheese, ½ cup sugar and vanilla extract until smooth and creamy, set aside.
  • To make apple pie filling stir together diced apples, ¼ cup sugar, cinnamon, nutmeg and cornstarch, until evenly coated, set aside.
  • Unroll crescent rolls and cut in two halves. Place 1 half of dough (4 crescents) at the bottom of baking dish. Pinch together the perforation and stretch the dough to make the bottom crust.
  • Spread cheesecake filling and smooth the top. Drain any excess of juice from the apple filling and
  • scatter diced apples over cheesecake filling.
  • On a sheet of baking paper spread remaining dough, seal the perforation and stretch to create the top crust. Invert the crust over apples.
  • Pour melted butter and spread on top of the crust. Sprinkle with cinnamon sugar.
  • Bake for about 35 minutes. Tent the top with aluminum foil if it starts to brown too quickly.
  • Cool completely before slicing and serving.
  • Store leftovers in the fridge.

1/2 cup firm butter or margarine

2 tablespoons Gold Medal™ all-purpose flour
1 teaspoon vanilla
1 egg
1 can (21 oz) apple pie filling
1/2 teaspoon ground cinnamon
1/4 cup chopped walnuts

Steps:

  • Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray.
  • Place cookie mix in large bowl. With pastry blender or fork, cut in butter until mixture is crumbly and coarse. Reserve 1 1/2 cups crumb mixture; press remaining crumbs in bottom of pan. Bake 10 minutes.
  • Meanwhile, in large bowl, beat cream cheese, sugar, flour, vanilla and egg with electric mixer on medium speed until smooth.
  • Spread cream cheese mixture evenly over partially baked crust. In medium bowl, mix pie filling and cinnamon. Spoon evenly over cream cheese mixture. Sprinkle reserved crumbs over top. Sprinkle with walnuts.

1/4 cup (50 g) firmly packed light brown sugar
1/2 cup (113 g or 1 stick) unsalted butter (room temperature)
1 1/2 cups (12 ounces) cream cheese (room temperature)
1/3 cup (67 g) granulated sugar
1 large egg (room temperature)
1 teaspoon vanilla extract
2 small apples (peeled, cored and chopped¹)
1 tablespoon granulated sugar
1/4 teaspoon ground cinnamon
Pinch of ground nutmeg (optional)
1/2 cup (100 g) firmly packed light brown sugar
1/2 cup (62 g) all-purpose flour
1/4 cup (25 g) rolled oats

Steps:

  • Preheat oven to 350° F. Line an 8x8-inch baking pan with parchment paper and set aside.

1/4 cup caramel ice cream topping

Steps:

  • Preheat oven to 350°F
  • Spray 9-inch springform pan with nonstick cooking spray.
  • Combine crumbs and butter in small bowl. Press into bottom of prepared pan. Bake 9 minutes; cool.
  • Beat cream cheese, sugar and vanilla in large bowl with electric mixer until well blended. Add eggs and beat well.
