APPLE PIE CHEESECAKE BARS

Steps:
- Preheat oven to 350 degrees F.
- In your food processor combine and pulse flour, brown sugar and cut up cold butter until a crumb type mixture forms. Press into a 13x9 inch pan that has been lined with either parchment paper or foil and sprayed lightly with non-stick cooking spray. Bake for 15 minutes and remove from oven.
- In the bowl of an electric mixer beat cream cheese until light and fluffy. Add in 1/2 cup sugar and vanilla and beat until smooth. Add eggs, one at a time, and mix until just combined. Spread mixture over crust ( careful, remember your crust pan is hot from baking!).
- In a bowl combine chopped apples, cinnamon, nutmeg and remaining 2 TBSP of sugar. Stir to combine. Sprinkle apple mixture over cream cheese mixture.
- Once again in your food processor, combine flour, brown sugar, oats and remaining cold cubed butter, pulsing food processor until mixture starts to form crumbs. Sprinkle this topping over the apples.
- Bake for 25-30 minutes or until filling is set. Remove from oven. Once cooled to room temperature, transfer to refrigerator. Store in refrigerator. When serving top with a drizzle of caramel sauce if desired.

- Preheat the oven to 350 degrees F (175 degrees C). Lightly butter a 9x13-inch baking pan.
- Mix graham cracker crumbs and melted butter together in a bowl until crumbly, adding more crumbs if mixture is too wet. Press crust into the prepared baking pan.
- Bake in the preheated oven until golden and set, 7 to 8 minutes. Remove from the oven and set aside.
- Beat cream cheese and 1/2 cup sugar using an electric mixer in a large bowl until smooth. Add eggs, one at a time, beating after each addition. Beat in vanilla extract on low speed until mixture is blended. Pour filling over warm crust.
- Stir apples, 2 tablespoons sugar, cinnamon, nutmeg, and allspice together in a separate bowl; spoon evenly over filling.
- Mix brown sugar, flour, walnuts, and cinnamon for streusel together in a bowl. Mix or cut butter into walnut mixture using your fingers or a knife until crumbly. Sprinkle over apple layer.
- Bake in the preheated oven until cheese filling is set, 30 to 35 minutes.
- Remove from the oven and let cool completely, about 30 minutes. Cut into small squares and refrigerate until ready to serve.

- Preheat the oven to 375F. Grease 8 x 8 inch baking dish with non-stick spray, set aside.
- To make the cheesecake filling beat together cream cheese, ½ cup sugar and vanilla extract until smooth and creamy, set aside.
- To make apple pie filling stir together diced apples, ¼ cup sugar, cinnamon, nutmeg and cornstarch, until evenly coated, set aside.
- Unroll crescent rolls and cut in two halves. Place 1 half of dough (4 crescents) at the bottom of baking dish. Pinch together the perforation and stretch the dough to make the bottom crust.
- Spread cheesecake filling and smooth the top. Drain any excess of juice from the apple filling and
- scatter diced apples over cheesecake filling.
- On a sheet of baking paper spread remaining dough, seal the perforation and stretch to create the top crust. Invert the crust over apples.
- Pour melted butter and spread on top of the crust. Sprinkle with cinnamon sugar.
- Bake for about 35 minutes. Tent the top with aluminum foil if it starts to brown too quickly.
- Cool completely before slicing and serving.
- Store leftovers in the fridge.

- Heat oven to 350°F. Spray bottom and sides of 13x9-inch pan with cooking spray.
- Place cookie mix in large bowl. With pastry blender or fork, cut in butter until mixture is crumbly and coarse. Reserve 1 1/2 cups crumb mixture; press remaining crumbs in bottom of pan. Bake 10 minutes.
- Meanwhile, in large bowl, beat cream cheese, sugar, flour, vanilla and egg with electric mixer on medium speed until smooth.

- Preheat the oven to 350 degrees F. Grease a 9x13 baking pan.
- For the crust, combine all crust ingredients in a mixing bowl and combine until crumbly and butter pieces are no longer visible. Press the mixture on bottom of prepared pan.

- Preheat oven to 350° F. Line an 8x8-inch baking pan with parchment paper and set aside.
- In a medium bowl, whisk together flour and brown sugar. Add the butter and use a pastry blender (or two forks) to cut butter into mixture until crumbly. Press mixture evenly into prepared pan. Bake 12 to 14 minutes or until light golden in color.
- In a large bowl, beat together cream cheese and 1/3 cup sugar using an electric mixer at medium speed until creamy and smooth, about 1 minute. Then add egg and vanilla. Beat to combine. Pour over warm crust.
- In a small bowl, stir together chopped apples (I suggest using an apple peeler), 1 tablespoon sugar, cinnamon, and nutmeg. Distribute evenly over cheesecake mixture.
- In a small bowl, combine brown sugar, flour, oats, cinnamon and butter. Either stir ingredients together using a wooden spoon or, better yet, use your clean hands to combine the butter into the mixture.
- Sprinkle streusel topping evenly over the apple layer. Bake 35-40 minutes, or until streusel is light brown and filling is set. Let bars cool in the pan to room temperature, then transfer to refrigerator to chill for at least 3 hours. Serve cold and enjoy!

- Preheat oven to 350°F
- Spray 9-inch springform pan with nonstick cooking spray.
- Combine crumbs and butter in small bowl. Press into bottom of prepared pan. Bake 9 minutes; cool.
- Beat cream cheese, sugar and vanilla in large bowl with electric mixer until well blended. Add eggs and beat well.
- Pour cream cheese mixture over crust. Bake 40-50 minutes or until center is almost set. Refrigerate at least 3 hours. Carefully run knife around edge to loosen pan. Remove side of pan.
