Quick Ambrosia Fruit Salad image

I start this with plenty of fruit, add the yogurt for dressing, then mix in just enough marshmallows and coconut so it tastes like the fresh and creamy version I grew up with. It's a well-loved recipe in my home now. -Trisha Kruse, Eagle, Idaho

1 can (8-1/4 ounces) fruit cocktail, drained
1 can (8 ounces) unsweetened pineapple chunks, drained
1 cup green grapes
1 cup seedless red grapes
1 cup miniature marshmallows
1 medium banana, sliced
3/4 cup vanilla yogurt
1/2 cup sweetened shredded coconut

Steps:

  • In a large bowl, combine all ingredients. Chill until serving.

1 (14 ounce) can sweetened condensed milk (can use reduced fat or fat free)
1 cup sour cream (can use reduced fat or fat free)
1/2 cup lime juice
1 (20 ounce) can pineapple chunks, drained
1 (11 ounce) can mandarin orange segments, drained
1 1/2 cups grapes, halved
1 medium banana, sliced (optional)
1 cup sweetened flaked coconut
1 cup miniature marshmallow
1/2 cup maraschino cherry, halved, well-drained & patted dry
1/2 cup nuts, chopped, for garnish (optional)

Steps:

  • In a large bowl, combine sweetened condensed milk, sour cream & lime juice; mix well. Stir in the remaining ingredients (except cherries & nuts); cover & chill at least 3 hours or overnight. To prevent cherries from "bleeding", fold them gently into the salad just before serving, and top with chopped nuts if desired.
  • Salad may also be frozen and served like ice cream.

Remember this classic? You might be surprised at how it satisfies a modern palate, even as it gives a retro wink to the last century.

Number Of Ingredients 8

1/2 cup pecans
3/4 cup heavy cream
1/3 cup sour cream
3 cups mini marshmallows
1 1/2 cups diced pineapple (1/2-inch dice)
1 cup sweetened shredded coconut
One 11-ounce can mandarin oranges in light syrup, drained well
One 10-ounce jar maraschino cherries, stems removed and halved

Steps:

  • Position an oven rack in the center of the oven and preheat to 350 degrees F.
  • Spread the pecans on a small baking sheet and bake, stirring once halfway through, until lightly browned and toasted, 6 to 8 minutes. Transfer the pecans to a medium bowl and cool completely.
  • Whip the heavy cream in a medium bowl with an electric mixer to stiff peaks. Stir in the sour cream by hand until combined. Stir in the marshmallows, pineapple and coconut. Gently fold in the mandarin oranges. Cover with plastic wrap and refrigerate until chilled, at least 2 hours and up to overnight.
  • Right before serving, roughly chop the pecans. Fold the pecans and maraschino cherries into the ambrosia salad. Transfer to a serving bowl and serve immediately.

2 Tbsp powdered sugar
1/2 c sour cream
1 1/2 c marshmallows, mini
1 c shredded sweetened coconut
1 can(s) mandarin oranges, drained
1 c fresh or canned pineapple
1/2 c maraschino cherries drained, stems removed
3/4 c toasted chopped pecans

Steps:

  • 1. Chill the bowl and beaters in the freezer for about 15-20 minutes. Combine the whipping cream and powdered sugar in the chilled bowl. Beat on medium high speed until medium to stiff peaks form.
  • 2. Add the sour cream, mini marshmallows, coconut, mandarin oranges, pineapple, maraschino cherries, and pecans.
  • 3. Using a spatula gently fold the ingredients together. For best results chill for 1 hour prior to serving.
