- Preheat oven to 350°. In a large skillet, cook sausage over medium heat until no longer pink, breaking it into crumbles; drain and set aside. Combine soup, milk, onion, salt and pepper. , In a greased 2-qt. baking dish, layer half the potatoes, soup mixture and sausage. Repeat layers. , Cover and bake until potatoes are tender, 60-65 minutes. Sprinkle with cheese; bake, uncovered, until cheese is melted, 2-3 minutes. If desired, garnish with parsley.

- Heat the oil in a large frying pan and fry the potatoes and sausages for 5 mins.
- Add the onion and pepper and cook for a further 5 mins, turning the sausages occasionally until browned.
- Add the pasta sauce, rinse the jar out with a splash of water and add to the pan. Cook, covered for 15 mins. Serve.

HASH BROWN MAPLE SAUSAGE CASSEROLE
Steps:
- Preheat oven to 375°. In a large skillet, cook sausage and sweet potato over medium-high heat 5-7 minutes or until sausage is no longer pink, breaking up sausage into crumbles. Remove with a slotted spoon; drain on paper towels. , Meanwhile, coat bottom of a 12-in. ovenproof skillet with oil. Reserve 1/2 cup hash browns for topping; add remaining potatoes to skillet, pressing firmly with a spatula to form an even layer., Layer with cheese, kale and corn; top with sausage mixture and reserved hash browns. In a bowl, whisk eggs, cream, salt and pepper until blended; pour over top., Bake, uncovered, 45-55 minutes or until edges are golden brown and egg portion is set. Cover loosely with foil during the last 10 minutes if needed to prevent overbrowning. Let stand 20 minutes before serving. If desired, serve with syrup.

- Preheat oven to 375 degrees F (190 degrees C). Using two long sheets of aluminum foil on top of each other, fold one long edge together and open out to make a large sheet of foil. Line a 13x9 pan with the foil, allowing edges to hang outside pan
- Arrange the sliced potatoes, overlapping slightly, in bottom of pan. Pepper to taste. Top with half of the cheese. Cut sausage in half crosswise and lengthwise and place, cut side down on top. Top with remaining cheese, the dill weed, caraway seed and milk. Seal edges of foil tightly.
- Bake at 375 degrees F (190 degrees) for 1 hour.

A simple, delicious five-ingredient casserole that your family is sure to love! I made this from the top of my head last night for dinner. I had a pound of Maple sausage thawed and wanted something different. Turned out great!

Steps:
- Preheat oven to 350*.
- In large skillet, melt butter over medium-high heat. Add potatoes & onion. Cover and cook until onions are caramelized, stirring frequently.
- In the meantime, brown maple sausage in a separate skillet. Once browned, drain & rinse sausage to remove excess fat.
- Combine potato mixture with sausage in 9x13 pan. Cover with aluminum foil and bake for 25-30 minutes.
- Remove foil and sprinkle cheese over top of casserole.
- Return to the oven, uncovered, for 5-10 minutes until cheese is melted.
- Serve while hot.

I made this recipe up from what I had handy in my cupboard. Yummy! If you want to reduce the fat, try using my recipe for homemade chicken apple sausage instead of regular. It has half the fat of regular sausage, and adds delicious flavors to this casserole.

Steps:
- Saute sausage with water covered, about 8 minutes. Discard grease. Set aside.
- Saute potatos in about 2-3 T butter until tender. Set aside.
- Saute apples and onions in remaining 1 T butter until tender.
- Combine cider vinegar, sugar, and parsley.
- Return the sausage and potatoes to the saute pan along with the apples and onions. Add the vinegar, sugar, and parsley to the skillet. Mix well.
- Warm over medium heat until warmed through.
- Serve.
MAPLE SAUSAGE AND WAFFLE CASSEROLE
I found this recipe in Cook's Country magazine. They did a taste test on frozen waffles and it turned out that EGGO Homestyle waffles were the best out of eight brands that they tasted. Depending on the size and shape of your waffles, you will need 6 to 8. Don't use Belgian style because they are too thick for this recipe. You can double the recipe and use a 9 X 13-inch baking dish. Time does not include refrigerating one hour or overnight.

- Heat oven to 350°.
- Arrange waffles in single layer on baking sheet.
- Bake until crisp, about 10-minutes per side.
- Brown sausage in non-stick skillet over medium heat, breaking it apart with spoon, 8-10 minutes.
- Drain on paper towel-lined plate.
- Butter 8-inch square baking dish.
- Add half of waffles in single layer. (It's ok to break some to fit into corners if needed).
- Add half of sausage and 1/2 cup cheese.
- Repeat layering of waffles, sausage, and 1/2 cup of cheese.
- Whisk eggs, milk, maple syrup, salt, and pepper in medium bowl until combined.
- Pour egg mixture evenly over casserole.
- Cover with plastic wrap and place weights on top. (you can put another square baking dish on top and then weight with heavy canned goods or place a couple one pound boxes of sugar on the plastic wrap and top with a cast-iron pan.).
- Refrigerate for at least 1 hour or overnight.
- Adjust oven rack to middle position and heat oven to 325°.
- Let casserole stand at room temperature for 20 minutes.
- Uncover casserole and sprinkle remaining 1/2 cup cheese over top.
- Bake until edges and center are puffed, 45 to 50 minutes.
- Cool 5 minutes.
- Cut into pieces and serve.

- Spray 1 1/2 quart casserole with nonstick cooking spray, set aside.
