PEANUT BUTTER GRANOLA
I found this recipe at hillbillyhousewife.com, a very interesting site. My kids love this granola...they eat it plain, or on top of yogurt with fruit, like a sundae.

Steps:
- Melt together margarine, peanut butter and honey.
- Add vanilla and salt.
- Add oatmeal and toss to coat completely.
- Spread on baking sheet.
- Bake at 375 about 10 minutes. Stir after 5 minutes.
- Store at room temperature in sealed container.
- Note.watch it closely while it bakes -- it burns easily, especially around the edges where it's spread thinner on the pan.
- Also note -- I omit the salt without noticing any change in flavour.
IRRESISTIBLE PEANUT BUTTER GRANOLA
My favorite homemade peanut butter granola recipe! It's quick and easy to make, it's naturally sweetened with honey, and it's ridiculously, irresistibly, completely delicious. Feel free to customize with any add-ins that you prefer.

Steps:
- Heat oven to 325°F. Line a large baking sheet with parchment paper.
- Combine oats and nuts in a large mixing bowl. Set aside.
- In a separate bowl, stir together the peanut butter, honey, coconut oil, vanilla, salt and cinnamon. Heat briefly in the microwave (for 20-30 seconds) or in a small saucepan (over medium heat for 3-4 minutes) until warm, but not bubbly. Stir again until smooth.
- Pour the peanut butter mixture over the oats mixture, and stir until evenly combined.
- Spread the granola out evenly on the prepared baking sheet. Bake for 25 minutes, stirring once halfway through, and keeping an eye on the granola to ensure that it doesn't burn. Remove pan from the oven, sprinkle the coconut on top, and give the mixture a good stir. Bake for 4-5 more minutes, or until the granola is lightly toasted and golden.
- Remove from the oven and transfer to a wire baking rack. Let the granola cool until it reaches room temperature. Then stir in the chocolate chips (if using), and any other optional add-ins you might prefer.
- Serve immediately, or store in an airtight container at room temperature for up to 1 month.

Steps:
- You seriously can switch it up however you like. for chewier bars, use 3 cups oats and no rice krispies. I usually throw in a little vanilla, peanut butter, sesame seeds, any other chopped nuts, a couple tablespoons of brown sugar, a sprinkle of cinnamon, maybe some coconut or raisins.
- mix all together.
- grease a small cookie sheet and flatten down (if the pan is too large, just use half of it, the bars won't spread).
- Press down firmly.
- Bake on 325 degrees for about 20 minutes (just browned around the edges). Bake longer if you prefer crispier bars.

Steps:
- Preheat oven to 375 and line a baking sheet with Silpat mat or parchment paper. Mix peanut butter, coconut sugar, and almond milk with a silicone spatula. Then, add in 2T coconut flour, baking soda, and a dash of salt and mix until all combined. Mixture will be quite sticky. If seems TOO sticky, add the 3rd Tbsp of coconut flour.
- Use a spoon and the silicone spatula to scoop into rounds on the baking sheet, lightly shape with your fingers. Top with a generous dash of sea salt flakes if desired, and bake for 12 - 14 minutes. Remove, and after ~2 minutes out of the oven, while the cookies are still warm, gently press down with your hands, or the bottom of a glass, to flatten the cookies to desired shape.
- Top with even more sea salt if desired and a PB drizzle! Now, LET COOL COMPLETELY for cookies to firm up (That's the hardest step!) Don't forget to tag me and use #thegranoladiaries in your posts!
