- Wash the salad greens, let drain and refrigerate.
- Cut the turkey into 1/2-inch pieces to measure 2 cups. Thinly slice the celery to measure 1 cup. Peel and cut the green onion into 1/8-inch slices. Drain the orange segments and water chestnuts in a strainer.
- In a large bowl, mix the yogurt and ginger. Stir in the turkey, celery, onion, orange segments, water chestnuts and grapes. Cover with plastic wrap; refrigerate at least 2 hours.
- On 4 plates, arrange the salad greens. Top greens with turkey salad.

- In a large bowl, gently toss the turkey, celery, celery leaves, apple, grapes, and pecans until combined. In a small bowl, whisk together the yogurt, mayonnaise, honey, and 1/4 teaspoon salt until well combined. Put the celery root in a small bowl, add 2 tablespoons of the dressing, and toss to coat completely. Add the remaining dressing to the turkey mixture, season with salt and pepper, and toss gently to evenly dress the salad.
- To serve, spread the celery root evenly onto a serving platter, top with the dressed salad, garnish with celery leaves and serve immediately.

- In a large nonstick skillet, heat 1 teaspoon oil, ginger and garlic. Add turkey; stir-fry for 8-10 minutes or until no longer pink. Remove turkey and keep warm. Add remaining oil to the skillet; stir-fry cauliflower for 3 minutes. Add red pepper and onions; stir-fry 1 minute longer., Cut pineapple in half and remove fruit, leaving 1-in. shells; set shells aside for serving. Cut fruit into cubes; set aside 1-1/2 cups (refrigerate remaining pineapple for another use). In a large bowl, combine the turkey, vegetables, spinach and reserved pineapple. - Combine chicken and celery in bowl.
- Mix salad dressing (I used Miracle Whip), salt, poultry seasoning, onion salt and pepper.
- Pour over chicken and celery; toss.
- Cover; chill at least 2 hours.
- For variation, fold in one of the following: 1 cup chilled fruit (mandarin orange segments, chopped apple, seedless green grapes or pineapple tidbits) or: 1/4 cup chopped sweet pickle or: 4 slices bacon, crsply fried and crumbled or: 1/3 cup chopped nuts.
TURKEY SALAD OVER MIXED GREENS WITH FRUIT
I originally saw a version of this on the Robin Miller show. The dressing is so delicious, although it will be much thinnner than typical dressings. I added additional fruits to the recipe, you can really use whatever fruits you like and certainly can add more veggies if you wish. I used turkey meat I purchased in a huge hunk at the grocery store (rotisserie style, skinned and boned roasted breast meat). Next time I make this I plan to serve sliced avocado with it as well.
