1 pound ground turkey

Parmesan, for serving

Steps:

  • Cook pasta according to package directions, adding broccoli during the last minute. Drain and return pasta and broccoli to the pot.
  • Meanwhile, heat 1 tablespoon oil in a large skillet over medium-high heat. Add turkey, garlic, fennel seed, and red pepper and cook, breaking up the meat with a spoon, until browned, 3 to 5 minutes, and then season with ½ teaspoon salt.
  • Toss the turkey mixture with pasta and broccoli and the remaining 2 tablespoons of oil. Serve with Parmesan.

300 - 400 g / 10 - 14oz chicken tenderloin (raw) (, breast or thigh, cut into 1.5cm / 3/5" pieces)
Salt and pepper
1 tsp dried thyme ((or other herbs and/or spices of choice))
250 g / 8 oz spiral pasta, uncooked ((See Note 1 for other shapes))
1 1/2 cups / 375 ml chicken broth/stock (, preferably warmed)
2 cups / 500 ml milk (, preferably warmed (any fat %))
1 large garlic clove (, minced)
1 - 2 tbsp /15 - 30g butter ((optional))
1 large broccoli or 2 medium broccoli or cauliflower (, broken into small to medium florets (Note 2 for subs))
100 - 150 g / 1 - 1.5 cups shredded cheese (, any melting type (Note 3))
1/4 cup / 35g flour (all purpose / plain)

Steps:

  • Preheat oven to 200C/390F (standard) or 180C/350F (fan forced / convection).
  • Sprinkle chicken with salt (be generous), pepper and thyme, toss to coat.
  • Spread pasta in a baking dish. Sprinkle over flour.
  • Pour over milk and broth, add garlic and butter. Stir.
  • Spread chicken over the top, then broccoli.
  • Cover with foil, bake for 15 minutes (or 20 minutes if milk & broth were cold).
  • Remove foil, STIR WELL. Add most of the cheese, then STIR WELL again. Top with remaining cheese.
  • Return to oven. Bake for 15 - 20 minutes until top is golden and sauce is thickened (See note 4 for troubleshooting).
  • Stand for a few minutes then serve immediately!

  • Cook the pasta, adding the broccoli for the final 4-5 mins and cooking until tender. Drain well, then heat the grill.

1/2 lb frozen broccoli florets
2 tablespoons butter

Steps:

  • Put the olive oil in a large skillet and heat.
  • Add the minced garlic and cook slightly (do not brown the garlic).
  • Add the frozen broccoli and cook about 8 minutes stirring occasionally, adding a little water now and then to make steam so that the broccoli cooks.
  • If you are adding chicken, add it now.

2 1/2 lbs fresh broccoli
2 garlic cloves, minced
1/3 cup olive oil
1 tablespoon butter or 1 tablespoon margarine

8 ounces linguine or 8 ounces thin spaghetti, cooked and drained

Steps:

  • Cut florets and parts of broccoli stems into bite-size pieces.

Few tablespoons water or pasta cooking water, if needed
2 cups penne pasta, cooked al dente

Steps:

  • In a large saute pan, heat the olive oil, garlic, and pepper flakes over medium heat until fragrant. Once the garlic has turned golden in color, remove it from the pan. You are left with garlic-infused oil in the pan. Add the broccoli to the pan.
  • Cook's Note: Be sure the broccoli is completely dry before tossing it into the pan.
  • Toss the broccoli to coat with the oil. Season with salt and pepper and saute over medium heat until the broccoli barely loses some of its crunch, about 5 minutes. Turn the heat up to high and deglaze the pan with the red wine vinegar. Add a few tablespoons of water, if needed.
  • Cook's Note: Use pasta water if the pasta was made fresh.
  • Add in the pasta and toss to coat with the oil. Top with Parmesan cheese for serving.

3 heaping cups broccoli (cut into small florets)
2 tablespoons butter
1/2 tablespoon flour
1-2 cloves garlic (minced)
1/4 cup chicken or vegetable broth
2 teaspoons lemon juice
1/4 teaspoon Italian seasoning
1 cup heavy/whipping cream
1/3 cup freshly grated parmesan cheese
Salt & pepper (to taste)

Steps:

  • Boil a large, salted pot of water. Cook the pasta al dente according to package instructions. When the pasta is 2-3 minutes away from being done, you will add the broccoli to the water.
  • Add the butter to a skillet over medium-high heat, and once it's melted, stir in the flour and cook for 1-2 minutes.
  • To the skillet, add in the garlic, broth, lemon juice, and Italian seasoning. Let it bubble for a minute or so.
  • Whisk in the cream and let it cook for a few minutes until it's thickened up to your liking, then stir in the parmesan cheese and take the pan off the heat.
  • Drain the pasta and broccoli and add it to the skillet. If the sauce has thickened up too much, add a small splash of the pasta water prior to draining it. Season the pasta with salt & pepper (I'm generous with both) as needed and serve immediately with extra parmesan grated on top if desired.

This is a simple dish my grandmother made for me when I was a child. Now I make it for my daughter, Xea, and she loves it. As the broccoli takes on a toasty brown color, it develops a delicious nutty flavor that even picky kids will like.

1 cup olive oil, or more if needed
2 large heads broccoli, cut in 1-inch florets (about 6 cups)
1 tablespoon kosher salt, plus more for salting the pasta water
8 garlic cloves, roughly chopped
1 pound penne rigate (Penne rigate is my favorite because the ridges give it more texture.)
1/2 cup shredded or grated Parmigiano-Reggiano cheese
2 tablespoons chopped Italian flat-leaf parsley, for garnish

Steps:

  • Heat the water for your pasta while you prepare the broccoli.
  • In a shallow, 10-inch saute pot, heat the 1 cup olive oil over medium-high heat (see Cook's Note). Add the broccoli to the oil and season it with salt. Saute the broccoli for about 4 minutes, or until it takes on a toasty color. The broccoli will absorb a lot of the oil, so if you find your pot getting dry, just add a little more oil to it. Throw in the garlic and cook for about another minute, until it's slightly brown. Don't burn the garlic! Take the broccoli off the heat and set it aside.
  • Prepare the penne according to the package directions. Drain the pasta and toss it in the pot with the broccoli, garlic, and olive oil. If the mixture seems dry, add a little more oil.
  • Toss in the Parmigiano-Reggiano cheese, stir, and garnish with the parsley.

Two large heads of broccoli
1 c of shredded cheddar cheese

  • First, you must bring a large pot of lightly salted water to the boil, then start to cook the pasta in the pot as per the instructions on the packet (remember, fresh pasta always takes far less time to cook than dried pasta!).
  • Use a sharp knife to chop your broccoli heads into much smaller pieces.
  • Next, mix the sauce for your broccoli noodles together in a mixing bowl, or shake them together in a jar.
  • Two in the recipe minutes before the pasta has cooked, add the chopped heads of broccoli to the pot and allow to cook.
  • Once cooked, remove 1 c of pasta water from the pot and add this to the sauce. Mix thoroughly.
  • Drain the broccoli and pasta, then mix together with the broccoli pasta sauce before finally stirring through the shredded cheddar cheese.
  • Season your creamy broccoli pasta with salt, pepper, and added red pepper flakes to taste.
  • Serve your broccoli cheese pasta fresh and hot with added parmesan!

1 pound orecchiette
1 large head of broccoli
6 cloves garlic
1/3 cup olive oil
1/4 cup extra virgin olive oil
1/2 cup pecorino cheese
1/2 tsp chili flakes
2 cups pasta water

Steps:

  • Bring a large pot of salted (2 Tbsp kosher salt per gallon) water to boil. Remove and discard lower stems from broccoli and break into bite size florets. Add florets to boiling water and cook for 8 minutes until tender. When finished, set cooked broccoli aside making sure to not drain boiling water.
  • Cook pasta in boiling water to al dente. While pasta cooks, in a large pan saute 6 cloves of chopped garlic in a 1/3 cup of olive oil over medium-low heat until golden. After golden (about 2-3 minutes) add 1/2 tsp of crushed red pepper flakes to oil.
  • Add the precooked broccoli to the pan and continue to saute for 2-3 more minutes to further soften broccoli. Before draining pasta reserve at least 2 cups of pasta water.
  • Add 1 cup of pasta water to the pan to make the broccoli sauce and cook for 1 minute. Add the pasta into the pan along with a 1/2 cup of grated pecorino. Stir to thoroughly combine and continue to cook for 1 more minute.
  • Taste test the pasta and adjust salt and pepper if necessary. Also, add more pasta water if required to achieve a loose consistency. Remove pan from heat and drizzle the 1/4 cup of extra virgin olive onto the pasta. Serve with more pecorino cheese, crushed red pepper, and extra virgin olive oil. Enjoy!

1 lb(s) (500 g) pasta shells, or other dried pasta shapes
2 Tbsp (25 mL) salt
1 Tbsp (15 mL) olive oil
2 clove garlic, minced
¼ tsp (1 mL) hot pepper flakes
½ cup (125 mL) ricotta or Parmesan cheese

Steps:

  • Bring a large pot of water to a boil. Add salt. Meanwhile, separate broccoli florets from the stalks (or peel the broccoli stems and cut into small cubes.) Add the broccoli to the boiling water and cook until tender but still bright green, about 5 minutes. Remove broccoli with slotted spoon.
  • Add pasta and cook to desired doneness, 8-12 minutes(check package guidelines). Drain reserving 1 cup (250 mL) of the pasta water.
  • In a small skillet, heat olive oil over medium heat and add garlic and hot pepper flakes. Saute until garlic is fragrant, about 1 minute. Add drained broccoli. Mix in ricotta cheese and pasta, until sauce is creamy. If sauce is too dry, add as much pasta water as desired to get a creamy consistency.

2 Tablespoons minced garlic
1 ½ cups water
1 cup low-sodium vegetable broth

2 Tablespoons nutritional yeast
1 teaspoon onion powder
1 teaspoon garlic powder
2 Tablespoons dried minced onions
½ teaspoon dried oregano
¼ teaspoon Italian Seasoning
¼ teaspoon dried basil
¼ to 1 teaspoon sea salt (+/-) *
¼ teaspoon black pepper
1 - [ 14 oz. or 16 oz. package ] frozen broccoli and cauliflower florets *
10 to 12 oz. GF pasta *

Steps:

  • Fill a large stock pot full of water. Add some sea salt to the water. Bring the water to a boil then add the pasta. Stir occasionally to prevent sticking. Check package directions on cooking times and/or boil the pasta until el dente, drain, rinse with cold water to remove any excess starch, shake well, set aside.
  • Place the frozen broccoli and cauliflower florets into a bowl and microwave until it has reached your desired tenderness, set aside.
  • Place the Spice/Herb Ingredients in a small bowl, mix well, set aside.
  • In a large ceramic/enamel-lined pot or similar stock pot, add the diced onions, sauté over medium-high heat until the onions are softened, approximately 9 to 10 minutes, stirring periodically to prevent burning. Add a tablespoon or so of water if they start to stick and/or to prevent burning.
  • Add the minced garlic, sauté for 1 minute, then add all the remaining Base Ingredients and Spice/Herb Mix, stir well to combine. Bring the mixture to a boil, then lower to a low-boiling simmer. Simmer for 4 minutes, then add the cooked cauliflower and broccoli florets. Simmer for several more minutes.
  • Add the cooked pasta and simmer for several minutes to ensure the pasta has been thoroughly heated through. Stir well, then remove from the stove and allow to sit for 5 minutes to allow the flavors to marry.
  • Serve topped with freshly chopped parsley and/or Vegan Parmesan Cheese.
