1 lb extra-lean (at least 93%) ground beef
1 jar (16 oz) Muir Glen® organic mild salsa
1 cup Muir Glen® organic tomato sauce (from 15-oz can)
1 1/2 cups water
2 cups uncooked regular or multigrain elbow macaroni
1 cup Green Giant® Valley Fresh Steamers™ Niblets® frozen corn
1/2 cup shredded reduced-fat sharp Cheddar cheese (2 oz)

Steps:

  • 1.In 12-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. 2.Stir in salsa, tomato sauce and water. Heat to boiling. Stir in macaroni and corn. Reduce heat; cover and simmer 12 to 15 minutes, stirring occasionally, until macaroni is tender. 3.Sprinkle with cheese. Cover; let stand 1 to 2 minutes or until cheese is melted.

Steps:

  • In 12-inch skillet, cook beef over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain.
  • Stir in salsa, tomato sauce and water. Heat to boiling. Stir in macaroni and corn. Reduce heat; cover and simmer 12 to 15 minutes, stirring occasionally, until macaroni is tender.
  • Sprinkle with cheese. Cover; let stand 1 to 2 minutes or until cheese is melted.

  • In large, deep skillet with a lid (or a dutch oven), heat olive oil over medium-high heat. Once the oil is hot but not yet smoking, add the ground chicken, onion, and red and green bell peppers. Brown the meat, breaking it apart with a spoon, until it is fully cooked through and the onions are translucent, about 8 minutes.
  • Add the garlic, chili powder, cumin, oregano, salt, and pepper and cook just until the garlic is fragrant, about 30 seconds. Add the water, salsa, tomato sauce, pasta, and beans.
  • Reduce the heat to medium low, then cover the pan. Let simmer gently, stirring occasionally, just until the pasta is al dente and most of the liquid is absorbed (more liquid will absorb as it cools), about 12 to 15 minutes. As you stir the pasta while it cooks, check to make sure it's not becoming dry. If it is, stir in water as needed to keep it moist and simmering.
  • Remove the pan from the heat and stir in half of the cheese, then sprinkle the remaining cheese on top. Serve hot with any of your favorite toppings.

  • Heat oil in a large skillet over medium. Add onion and ¼ teaspoon salt; cook, stirring often, until softened, about 4 minutes. Add noodles and cook, tossing with tongs and shaking skillet occasionally to redistribute into an even layer, until noodles are toasted and golden in spots, 4 to 5 minutes. Add garlic and cook, tossing with tongs, until fragrant, about 1 minute.
  • Stir in tomatoes, adobo sauce, bay leaf, 1 cup stock, and remaining ¾ teaspoon salt; bring to a simmer over medium. Reduce heat to low and cook, stirring often and redistributing into an even layer, until noodles are tender, about 12 minutes. Stir in remaining ¼ cup stock, scraping up browned bits from bottom of skillet with a wooden spoon. Remove from heat. Cover and let stand for about 5 minutes. Remove and discard bay leaf.
  • Mix sour cream and 2 tablespoons water in a bowl. Stir noodle mixture in skillet. Top with sour cream, cheese, avocado, and cilantro.
