7-UP BISCUITS RECIPE FROM SCRATCH
Soft and fluffy biscuits made with lemon-lime soda. No Bisquick needed.

Steps:
- Preheat oven to 450 degrees F.
- Melt butter and pour into 8" square or 9"x7" rectangular dish.
- In a large mixing bowl, whisk together flour, baking powder, and salt. Add shortening and cut it in with a fork or pastry cutter. The dough should resemble coarse crumbs.
- Add sour cream and stir in with wooden spoon.
- Add 7-UP and stir in. The dough will be sticky and shaggy.
- Flour flat surface (like your countertop) and place the dough onto it. Form into square or rectangle, roughly the same size as your dish. It is helpful to place the dish right next to the dough for a visual reference.
- Cut the dough into biscuits. (see note)
- Place biscuits in a dish with butter.
- Place in oven and bake for 16 to 18 minutes or until the tops of the biscuits are golden.
- Remove from oven and let cool.

- Preheat oven to 450 degrees.
- Cut the sour cream into your biscuit mix. "Cutting in" is simply incorporating your sour cream, butter or shortening into your dry baking mix without using a mixer. You can use a fork, knife, pastry cutter or the tools God gave you, your fingers. You just want to make sure that each portion of your {wet} ingredient gets coated with the dry mix.
- Stir in 1/2 cup 7 Up. The dough will be very soft, don't worry.
- Sprinkle additional baking mix on to your counter, about a 1/2 cup seems to work just fine.
- Knead and fold dough until coated with your baking mix. Pat dough out, (no rolling pin needed) and cut biscuits using a round biscuit/cookie cutter. Don't have one, no problem, you can certainly use a glass or empty soup can to cut out your biscuits. Where there's a will, there's a way! Improvising is fine.
- Melt butter in a 9 inch square pan. I stick my pan and butter in the oven for a few minutes. Just a few though, the butter will burn, so watch it.
- Place cut biscuits on top of melted butter and bake for 12-15 minutes or until brown.

- Preheat oven to 425 degrees F (220 degrees C). Put butter in a 9x13-inch baking dish and place dish in the preheating oven until butter is melted.
- Mix baking mix, lemon-lime soda, and sour cream together in a bowl until dough holds together and is sticky. Turn dough onto a floured work surface and roll into 1-inch thick circle. Cut circles out of dough using a cookie cutter or the rim of a wine glass and place in the melted butter.

- Heat oven to 200C/180C fan/gas 6. Put the butter in a bowl and beat it using an electric whisk until soft and creamy. Beat in the sugar, then the egg and vanilla or lemon, and finally the flour to make a dough. If the dough feels a bit sticky, add a little more flour and knead it in.
- Cut the dough into six pieces and roll out one at a time to about 5mm thickness on a floured surface. The easiest way to do this is to roll the mixture out on a baking mat. Cut out letter and number shapes (we used 7 x 4cm cutters) and peel away the leftover dough at the edges. Re-roll any off-cuts and repeat.
- Transfer the whole mat or the individual biscuits to two baking sheets (transfer them to baking parchment if not using a mat) and bake for 7-10 mins or until the edges are just brown. Leave to cool completely and repeat with the rest of the dough. You should be able to fit about 12 on each sheet. If you are using two sheets, then the one underneath will take a minute longer.
- Ice the biscuits using the pens to make stripes or dots, or colour in the whole biscuit if you like. They will keep for five days in an airtight container.

- Mix flour, baking powder and salt together and then cut in the shortening until mixture resembles fine crumbs. Mix this with sour cream and then stir in the lemon-lime soda. Only stir until just barely combined - you don't want to overmix!
- Pat lightly onto a floured surface. The dough should be about 1" thick, but you can make the biscuits a little bit thinner if you want to make more of them. You should be able to make about 9-12 biscuits, depending on how thick you make them. This is a wet dough so make sure to flour the surface well. Cut out biscuits and place 2 inches apart on ungreased cookie sheet. I like to use these biscuit cutters, but you can use the rim of a glass or the lid to a jar - just make sure to grease them before cutting the biscuits.
