5 to 8 garlic cloves, peeled
1 tablespoon dried rosemary, crushed
1 tablespoon olive oil
1/2 teaspoon salt
1 boneless pork loin roast (3 to 4 pounds)

Steps:

  • In a food processor, combine the garlic, rosemary, oil and salt; cover and process until mixture becomes a paste. Rub over the roast; cover and let stand for 30 minutes. , Place roast fat side up on a greased baking rack in a shallow roasting pan. Bake, uncovered, at 350° for 1 to 1-1/4 hours or until a thermometer reads 145°. Let meat stand for 10 minutes before slicing.

1/3 c. balsamic vinegar
5 garlic cloves, minced
1/3 c. plus 1/4 cup olive oil, plus more for the pans
4 tsp. dried oregano
2 tsp. kosher salt, plus more to taste
1 1/2 tsp. black pepper
2 pork tenderloins (each slightly over 1 pound)
6 sweet potatoes, each cut into 6 wedges
6 shallots, quartered
Chopped fresh parsley, for topping

Steps:

  • Whisk the balsamic vinegar, garlic, 1/3 cup olive oil, 2 teaspoons oregano and 1 teaspoon each salt and pepper in a small bowl.
  • Place the pork in a large resealable plastic bag and pour in the marinade. Seal the bag, place in a dish and marinate for 30 minutes at room temperature or 2 hours in the refrigerator.
  • Position racks in the upper and lower thirds of the oven and preheat to 450˚. Toss the sweet potatoes and shallots with the remaining ¼ cup olive oil, 1 teaspoon salt, 2 teaspoons oregano and ½ teaspoon pepper in a large bowl.
  • Lightly oil 2 sheet pans. Put a pork tenderloin on each pan (let some of the marinade drip off first) and season lightly with salt. Arrange the sweet potatoes and shallots cut-sides down around each tenderloin.
  • Roast, rotating the pans halfway through and shaking them to loosen the potatoes, until a thermometer inserted into the thickest part of the meat registers 140˚ to 145˚ and the potatoes are tender, 20 to 30 minutes. Slice the pork and serve with the vegetables. Top with parsley.

This Tuscan roast pork is made from a seared pork loin rubbed with a garlic, rosemary, and sage paste and then slowly roasted in the oven. Easy, elegant, and certain to impress. (Keto)

4 large garlic cloves (peeled)
2 tablespoons fresh rosemary leaves
2 tablespoons chopped fresh sage leaves
1 oil-packed anchovy fillet or 1 teaspoon anchovy paste (optional)
5 tablespoons extra-virgin olive oil
2 pounds boneless center-cut pork loin (not tenderloin) (thick fat cap left on)
2 bay leaves (optional)
About 3/4 teaspoon kosher salt

Steps:

  • Preheat the oven to 225°F (110°C) and position a rack in the center of the oven.
  • Meanwhile, in the bowl of a small food processor, combine the garlic, rosemary, sage, anchovy (if using), and 3 tablespoons oil and process until a coarse paste forms. (Alternatively, you can use a mortar and pestle.)
  • If desired, use kitchen string to tie the pork tightly crosswise about every 2 inches (5 cm). You can slip the bay leaves under the twine if you like. If you do not tie your pork, but wish to use bay leaves, simply carve a couple slits in the pork and tuck the bay leaves into the slits.
  • Season the pork on all sides with the salt, rubbing the meat to coat it.
  • In a large ovenproof skillet over medium-high heat, heat the remaining 2 tablespoons oil until shimmering. Add the pork and sear, starting with the fatty side and using tongs to turn it, until dark golden brown on all sides, 8 to 10 minutes total. Turn off the heat and let the pork in the skillet.
  • Using an offset spatula or pastry brush, coat the pork with the herb mixture. If you're the sort who likes the punch of raw garlic, reserve 1 tablespoon of the herb mixture to coat the pork after it comes out of the oven.
  • Transfer the skillet to the center rack in the oven and roast until the meat is tender and the internal temperature is around 180°F (82°C), 2 to 3 hours. (Rest assured, if you just got alarmed at those numbers, that although this is a much higher internal temperature than we typically cook pork, it works.)
  • Remove the skillet from the oven. If desired, brush the top and sides of the pork with the reserved 1 tablespoon herb mixture. Let the pork cool for at least 5 minutes.
  • Transfer the pork to a cutting board, reserving the cooking juices in the skillet. Remove and discard the string and bay leaves, if using.
  • Slice the pork very thinly (about 1/8 inch | 4 mm thickness) and arrange the slices on a serving platter. Drizzle with the juices and herbs from the pan. Serve warm or at room temperature.

6 cloves garlic, minced
1/4 cup chopped fresh rosemary, plus a few sprigs
Fine sea salt
1/4 teaspoon red pepper flakes
1 bone-in center-cut pork loin rib roast (about 6 pounds)
1 lemon, halved
2 medium bunches fennel, stalks and fronds removed

Steps:

  • Toss the garlic, chopped rosemary, 1 tablespoon salt and the red pepper flakes in a small bowl. Make 3/4-inch-deep cuts between the rib bones of the pork. Stuff some of the garlic mixture into each cut. Rub the lemon halves over the pork, then rub with the remaining garlic mixture. Cover with plastic wrap and refrigerate overnight.
  • Bring the pork to room temperature, about 30 minutes. Position a rack in the upper third of the oven and preheat to 375 degrees F. Cut each fennel bulb in half, then cut each half into wedges. Scatter the fennel and rosemary sprigs in a medium roasting pan (it's best if the roast fits snugly in the pan). Place the pork in the roasting pan on top of the fennel, fat side up, and roast until a thermometer inserted into the center of the pork registers 145 degrees F, about 1 hour, 45 minutes. Transfer the pork to a platter or cutting board and cover loosely with foil; let rest 15 minutes.
  • Meanwhile, turn the fennel wedges and return the pan to the oven. Continue roasting until the fennel is caramelized, about 15 minutes. Cut the pork into chops and serve with the fennel.

4 teaspoons ground fennel
4 teaspoons dried rosemary
2 teaspoons dried oregano
2 teaspoons garlic salt
2 teaspoons kosher salt
Freshly ground black pepper
Two 1-pound pork tenderloins
6 tablespoons olive oil
6 ciabatta rolls
1 clove garlic
1/2 cup mayonnaise
1 lemon, zested
5 cups arugula
2 tablespoons balsamic vinegar
3 jarred roasted red bell peppers, sliced

Steps:

  • Preheat the oven to 350 degrees F.
  • Combine the fennel, rosemary, oregano, garlic salt, 1 teaspoon kosher salt and a generous amount of pepper in a small bowl.
  • Slice the pork tenderloins in half crosswise and rub evenly with the spice mixture. Heat 3 tablespoons olive oil in a large cast-iron skillet over a medium-high heat. Add the pork and sear, turning, until golden brown on all sides, about 5 minutes. Place the skillet in the oven and bake until the pork is cooked through and a thermometer inserted in the middle registers 140 degrees F, 18 to 20 minutes.
  • To toast the ciabatta rolls, place a dry skillet on a medium heat until it is hot, about 5 minutes. Slice the rolls in half and place the rolls in the skillet cut-side down until they are toasted how you like them, 15 to 30 seconds. Set aside.
  • Remove the pork to a cutting board and let rest for 5 minutes before slicing to your desired thickness.
  • Grate the garlic clove and combine it with the mayonnaise and lemon zest in a small bowl. Season with black pepper.
  • Add the arugula to a bowl, then drizzle over the remaining 3 tablespoons olive oil and the balsamic vinegar and toss to combine.
  • Generously spread the garlic mayonnaise on the tops and bottoms of the rolls. Place some pork slices on the bottom halves, then add slices of roasted red pepper and a generous amount of the arugula. Place the other halves of the rolls on top and serve.

Steps:

  • Preheat the oven to 375F degrees.
  • Mince the sage, rosemary, and garlic. Mix in the salt, black pepper, and ground fennel seeds.
  • Heat a skillet over medium-high heat. Add 1 tablespoon of olive oil. Sear the pork, turning occasionally, until golden on all sides, 8 to 10 minutes.
  • Rub the pork with the herb mixture and set aside.
  • Cut the baguette in half the long way and scoop out part of the soft insides.
  • Brush the inside of the baguette with the remaining 3 tablespoons olive oil.
  • Place the pork on the inside of the baguette so that the pork is almost completely enclosed.
  • Trim off the excess ends of the bread. Tie the baguette, at 1-to 2-inch intervals, with kitchen string.
  • Place the pork on a baking sheet and roast until done, 148°F on an instant-read thermometer inserted into the thickest part, 25 to 30 minutes.
  • Remove from the oven, let rest 10 minutes.
  • Remove the strings and cut into medallions.
  • Serve and enjoy!

1/4 cup freshly grated Parmesan cheese
2 tablespoons chopped fresh Italian parsley
1 teaspoon lemon zest

Two 1 1/2-pound pork tenderloins, butterflied and lightly pounded
6 slices provolone cheese
1/2 cup dry white wine
One 25-ounce jar marinara sauce

Steps:

  • In a small bowl, mix together the breadcrumbs, Parmesan, parsley, lemon zest, 1/2 teaspoon salt, red pepper flakes and 2 tablespoons olive oil. Lay the tenderloins open and flat on a board in front of you. Season each loin evenly all over with 1/2 teaspoon salt. Lay 3 slices of provolone on each loin. Divide the breadcrumb mixture over the provolone. Roll the loins back up into their original shape and tie in 4 spots with kitchen twine.
  • Heat a medium straight-sided skillet over medium-high heat. Add the remaining 2 tablespoons olive oil to the skillet. Sear the pork tenderloins until evenly golden brown all the way around, about 3 minutes per side. Remove to a plate to rest. Deglaze the skillet with the white wine and add the marinara sauce. Nestle the pork back in the sauce. Cover the skillet and simmer until the pork is just cooked through and registers 145 degrees F on an instead-read thermometer, about 20 minutes. Remove from the heat and allow to rest uncovered for 10 minutes before slicing and serving with the sauce.

ITALIAN-STYLE ROAST PORK WITH CRISPY CRACKLING

A take on the fennel-seasoned Italian dish porchetta, this Sunday lunch-worthy loin has a layer of perfect crackling

3 garlic cloves , finely chopped
3 bay leaves , roughly chopped
1 tsp black peppercorn
2 tsp sea salt
1 ½ tbsp fennel seed
2 ½ tbsp olive oil
1.8kg rolled pork loin , untied with the skin scored
1 onion , cut into wedges
1 lemon , cut into wedges
2 tbsp plain flour
125ml Marsala or red wine
500ml vegetable or chicken stock

Steps:

  • Pound the garlic, bay, pepper, 1 tsp sea salt and 1 tbsp of the fennel seeds using a pestle and mortar, then stir in 1 tbsp oil. Place the pork, skin-side up, in a clean sink and pour over a kettleful of boiling water (this tightens the skin - the first step towards great crackling). Drain, pat dry and place, skin-side down, on a chopping board. Rub the garlicky paste all over it, then roll up the loin and tie it at intervals with kitchen string. Arrange the onion and lemon in the centre of a roasting tin and sit the pork on top, skin-side up. Rub the rind with the remaining salt and leave at room temperature, uncovered, for 1 hr.
  • Heat oven to 230C/210C fan/gas 8. Rub the skin of the pork with the remaining oil. Lightly crush the remaining fennel seeds and scatter over the meat. Roast for 30 mins, then turn the heat down to 180C/160C fan/gas 4 and continue to roast for 1 hr 20 mins. Remove the pork, cover loosely and leave to rest for 30 mins. If your crackling isn't crisp, pop the joint under a hot grill for a few mins, but watch it as it will burn very easily.
  • Meanwhile, make the gravy. Tip away all but 1 tbsp of fat from the tin and put on the hob. Add the flour and mix with the onion and lemon, scraping any bits from the bottom. Pour in the Marsala and let it bubble, then gradually add the stock and any of the resting juices, and simmer gently for 8-10 mins. Season, if needed, and strain through a sieve before serving.

2 1/2-3 lbs boneless pork loin
1 medium green pepper (sliced into thin strips)
1 medium onion (sliced thin)
1 (26 ounce) jar spaghetti sauce (I use Ragu extra chunky with mushrooms)
3 tablespoons red wine vinegar
1 tablespoon italian seasoning
2 teaspoons garlic powder
1 teaspoon thyme
1 teaspoon fennel seed
2 bay leaves
salt & pepper

Steps:

  • Place peppers and onions in the bottom of crock pot.
  • Rub pork loin with salt, pepper, Italian Seasoning, garlic powder, Thyme and Fennel seed.
  • Place the pork loin on top of the peppers and onions in crock pot.
  • Pour spaghetti sauce over the pork loin making sure to cover the roast.
  • Pour the red wine vinegar in the spaghetti sauce jar and replace the cover; shake the jar so the vinegar mixes with any sauce left in the jar.
  • Pour the vinegar around the pork loin.
  • Add the two bay leaf.
  • Cook at low setting for 8-10 hours.
  • Remove pork loin and slice and put the slices back into the sauce in the crock pot.
  • Serve with your favorite pasta.

1/4 cup chopped prosciutto
2 tablespoons chopped fresh parsley
2 tablespoons chopped sun-dried tomatoes packed in oil
1/4 cup chopped onion
2 -3 garlic cloves, minced
1 1/2 lbs pork tenderloin, cut into 1/2 inch strips
1/2 cup chicken broth
1/2 cup heavy cream
1/4 teaspoon salt
1/2 teaspoon ground black pepper

Steps:

  • Heat the oil in a skillet over medium-high heat.
  • Saute the prosciutto, parsley, sun-dried tomatoes, onion and garlic 5 minutes, until onion is tender.
  • Mix the pork strips into the skillet and brown about 10 minutes, turning once.
  • Stir the broth and heavy cream into the skillet, and season with salt and pepper.
  • Bring to a boil.
  • Reduce heat to low, and simmer 20 minutes, stirring occasionally until pork reaches a minimum temperature of 160 degrees and sauce is thickened.

  • Oven at 350°F.
  • Trim fat from pork.
  • Combine rosemary, garlic, salt, pepper, and olive oil.
  • Melt butter in roasting dish and then place onions over top of the butter.
  • Rub rosemary mixture all over pork loin.
  • Sear on all sides in a hot skillet.
  • Place pork on top of onions in roasting pan and then cover with foil.
  • Bake for an hour or until meat thermometer reads 160°F.
  • To make a real tasty onion gravy for the meat, combine 1 tablespoon of flour in 1 cup of cold water. Pour pan drippings with onions into a small sauce pot and bring to a gentle boil. Add water and flour mixture. Whisk and boil until thickened. Serve with pork loin roast.

2 1/2 pounds boneless pork shoulder
Coarse salt and pepper
1 large yellow onion, diced small
3 cloves garlic, minced
1 stalk celery, diced small
3/4 teaspoon fennel seeds
1/2 cup dry red wine, such as Cabernet Sauvignon or Merlot
1 can (28 ounces) crushed tomatoes
4 cups prepared couscous, for serving

Steps:

  • In a large skillet, heat oil over medium-high. Season pork with salt and pepper and cook, turning occasionally, until browned on all sides, about 8 minutes. Transfer pork to a 5- to 6-quart slow cooker. Reduce heat to medium and add onion, garlic, celery, and fennel seeds to pan; cook until onion is softened, about 4 minutes.
  • Add wine and cook, scraping up browned bits with a wooden spoon, until reduced by half, about 2 minutes. Add to slow cooker along with tomatoes. Cover and cook on high until pork is very tender, 4 hours (or 8 hours on low).

3 lbs pork loin roast
8 ounces Italian sausages, casings removed and crumbled (about 4)
salt & pepper
olive oil
1 large onion, chopped
2 -3 garlic cloves
1 cup chicken stock
2 bay leaves
1 teaspoon dried basil
1 teaspoon thyme
1 (15 ounce) can diced tomatoes
1 tablespoon fresh rosemary
1 tablespoon sage
1 tablespoon parsley
1 teaspoon hot pepper flakes (to taste)

Steps:

  • Season the roast with salt and pepper.
  • Brown on all sides in Olive oil.
  • Remove to a plate.
  • Brown sausage meat.
  • Saute onion and garlic with sausage.
  • Add chicken stock, bay leaves, Basil, & thyme.
  • Cook for 3 minutes.
  • Add diced tomatoes.
  • Place Roast in sauce.
  • Add rosemary, sage, and parsley.
  • hot pepper flakes to taste.
  • Bake at 350° F till an internal temp of 140° F is reached.

3 lbs pork loin
1 teaspoon salt
3 garlic cloves, crushed
2 tablespoons olive oil
2 tablespoons fresh rosemary, chopped
1 tablespoon freshly grated lemon zest
1/2 cup vermouth
2 tablespoons white wine vinegar

Steps:

  • Tie kitchen string around pork in three places (prevents flattening). Mix salt and garlic into a paste. Stir in oil, rosemary and zest.
  • Rub mixture into pork. Refrigerate, uncovered, 1 hour.
  • Preheat oven to 375°F Place in roasting pan.
  • Roast 45 minutes, turning once or twice.
  • Remove from heat & let rest 10 minutes.
  • Add vermouth and vinegar to roasting pan and place over medium-high heat.
  • Simmer, scraping browned bits on bottom of pan, 3-4 minutes until half reduced.
  • Remove string and slice roast.
  • Add any juices to sauce and serve.
