DUTCH APPLE SALAD

Dutch Apple Salad image

There's plenty of crunch in this refreshing salad that's perfect for autumn when apples are ripe for the picking. The simple milk and sugar dressing allows the fruit and veggie flavors to shine. You could use vanilla yogurt in place of the cooked dressing. -Shirley Joan Helfenbein, Lapeer, Michigan

DUTCH APPLE PIE

Dutch Apple Pie image

The difference between classic apple pie and a Dutch apple pie recipe is all in the delicious crumb topping. Dutch apple pie topping is made with butter, Gold Medal™ flour, brown sugar and granulated sugar, and you'll know when it's ready to come out of the oven when the crumb toppings are a deep golden brown. Instead of a second pie crust, enjoy a generous blanket of sweet streusel crumbs-sprinkled over a tender spiced apple filling.

Provided by Stephanie Wise

Categories     Dessert

Time 2h45m

Yield 8

Number Of Ingredients 13

1 cup Gold Medal™ all-purpose flour
1/2 teaspoon salt
1/3 cup plus 1 tablespoon shortening
2 to 3 tablespoons cold water
8 cups sliced cored peeled apples
1/2 cup granulated sugar
1/4 cup Gold Medal™ all-purpose flour
1/4 teaspoon ground cinnamon
1 tablespoon lemon juice
1/2 cup unsalted butter, softened
1 cup Gold Medal™ all-purpose flour
2/3 cup packed brown sugar
1 tablespoon granulated sugar

Steps:

  • In medium bowl, mix 1 cup flour and the salt. Cut in shortening, using pastry blender (or pulling 2 table knives through ingredients in opposite directions), until particles are size of small peas. Sprinkle with cold water, 1 tablespoon at a time, tossing with fork until all flour is moistened and pastry almost leaves side of bowl (1 to 2 teaspoons more water can be added if necessary). Gather pastry into a ball. Shape into flattened round on lightly floured surface. Wrap flattened round of pastry in plastic wrap, and refrigerate about 45 minutes or until dough is firm and cold, yet pliable. This allows the shortening to become slightly firm, which helps make the baked pastry more flaky. If refrigerated longer, let pastry soften slightly before rolling.
  • Heat oven to 400°F. On surface sprinkled with flour, using floured rolling pin, roll pastry dough into circle 2 inches larger than 9-inch pie plate. Fold pastry into fourths; place in pie plate. Unfold and ease into plate, pressing firmly against bottom and side and being careful not to stretch pastry, which will cause it to shrink when baked. Trim overhanging edge of pastry 1 inch from rim of pie plate. Fold and roll pastry under, even with plate; flute as desired.
  • In large bowl, toss Filling ingredients. Pour into pie plate, mounding apples toward center.
  • In medium bowl, use pastry blender or fingers to mix butter, 1 cup flour and the brown sugar until a crumb forms. Sprinkle evenly over top of pie. Sprinkle 1 tablespoon granulated sugar on top.
  • Bake 45 to 55 minutes or until pie crust and crumb topping are deep golden brown and filling begins to bubble. Transfer to cooling rack to cool.

DUTCH APPLE CAKE

Dutch Apple Cake image

Provided by Food Network

Categories     dessert

Time 1h45m

Yield 12 squares

Number Of Ingredients 10

2 eggs
6 ounces caster sugar (superfine), plus 1/2 ounce extra sugar, for sprinkling
1/2 teaspoon vanilla extract
6 tablespoons butter
2 1/2 ounces milk
4 1/2 ounces all-purpose flour
1/2 teaspoon ground cinnamon
2 1/4 teaspoons baking powder
2 small or 1 large Granny Smith or Golden Delicious apples
2 1/2 ounces heavy cream, to serve

Steps:

  • This cake has been made at Ballymaloe for years. We even have guests who ask for it specifically every time they visit. The fruit sinks to the bottom as it cooks, leaving a light sponge on top with a lovely sugary crust.
  • Preheat the oven to 400 degrees F. Line the sides and base of a 8 by 8-inch square cake pan with parchment paper.
  • Using an electric whisk or hand held mixer, whisk the eggs, 6 ounces caster sugar, and vanilla extract in a large bowl, until the mixture is thick and mousse-like, and the whisk leaves a figure of eight pattern, this will take about 5 minutes.
  • Melt the butter in a saucepan with the milk, and then pour the mixture onto the eggs, whisking continuously. Sift in the flour, cinnamon, and baking powder, and fold carefully into the batter so that there are no lumps of flour. Pour the mixture into the prepared pan, and smooth the surface.
  • Peel and core the apples, and cut them into thin slices, and then arrange them over the batter. They will sink to the bottom. This is meant to happen! Sprinkle the cake with the remaining 1/2 ounce sugar, and bake in the oven for 10 minutes. Reduce the oven temperature to 350 degrees F, and bake until well risen and golden brown, about 20 to 25 minutes.
  • Allow the cake to cool in the tin, cut into squares and serve warm. It is delicious with cream!

APPLE-CHEDDAR DUTCH BABY

Apple-Cheddar Dutch Baby image

This dish would be just as welcome on the brunch table as on the dinner table, and I wouldn't fault you for adding a little maple syrup.

Provided by Jenna Helwig

Yield 4 or 5 servings

Number Of Ingredients 7

4 tablespoons (½ stick) unsalted butter
2 apples (such as Honeycrisp), cored and sliced
1 teaspoon kosher salt, divided
8 large eggs
1 cup milk
1 cup all-purpose flour
1½ cups shredded cheddar cheese (preferably smoked or extra sharp; about 6 ounces)

Steps:

  • Preheat the oven to 425°F.
  • Heat the butter in a 10-inch oven-safe skillet over medium heat. Once it's bubbling, add the apples and ¼ teaspoon of the salt. Cook, stirring occasionally, until the apples are just tender, 5 to 7 minutes.
  • While the apples cook, whisk together the eggs, milk, flour, and remaining ¾ teaspoon salt until mostly smooth. It's okay if a few small lumps remain.
  • Pour the egg mixture into the pan with the apples. Top with the shredded cheese. Transfer the pan to the oven and bake until puffed and golden, 20 to 25 minutes. Cut into wedges to serve.

PULL-APART DUTCH APPLE PIE

Pull-Apart Dutch Apple Pie image

Provided by fabeveryday

Categories     Desserts     Pies     Apple Pie Recipes

Time 50m

Yield 10

Number Of Ingredients 6

2 (14.1 ounce) packages refrigerated pie dough (such as Pillsbury®)
1 (21 ounce) can apple pie filling
⅓ cup all-purpose flour
⅓ cup packed brown sugar
3 tablespoons cold unsalted butter, cubed
¼ teaspoon ground cinnamon

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Roll out each circle of pie dough to 1/8-inch thickness. Cut circles into the dough using a 2 1/2-inch round cookie cutter (as many circles as you can).
  • Fold each circle in half and pinch the ends of each side together to make a boat shape with an open top. Spoon about 1/2 tablespoon of pie filling into the dough "pocket" and place it face-up at the edge of a 9- or 10-inch springform pan. Repeat with the remaining dough circles, wrapping around the edge of the pan and overlapping with the last piece slightly until the pan is full.
  • Mix flour, brown sugar, butter, and cinnamon together with a fork or pastry cutter in a bowl until mixture forms into crumbs. Spoon crumble topping on top of the pieces of pie.
  • Bake in the preheated oven until the edges of the dough and the crumble topping turn golden, 17 to 20 minutes. Cool for a few minutes before serving.
  • Place the pan on a serving platter and remove the side of the springform pan, leaving the pie and the base of the pan on the serving dish. Pull apart the amount of pieces you'd like to eat.
