THE BEST SWEET POTATO POTATO SALAD

Steps:
- In a bowl, mix together the cornichons or relish, mustard, honey, celery, lemon zest and juice and red onion. Season with salt and pepper and let sit while the potatoes cook.
- Put the potatoes in a large saucepan and add enough cold water to cover by 1 inch. Season the water generously with salt. Bring to a boil over medium-high heat. Reduce the heat to a simmer and cook until the potatoes are tender, about 10 minutes.
- Drain the potatoes in a colander, put back in the saucepan, add the vinegar and, using a rubber spatula, toss gently to combine.
- Add the mayonnaise, chives and parsley to the celery-onion mixture and stir to combine. Add the warm potatoes to the dressing and toss. Season to taste. Garnish with extra chives and parsley.

SOUTHERN POTATO SALAD
Steps:
- Peel and cut up cooked potatoes and put into a large bowl.
- Mash hard-boiled eggs with a fork and set aside.
- In a large bowl, combine the mayonnaise, Durkee's, mustard, onion powder, celery salt, Lawry's seasoning salt, sweet relish. Mix well. Then add the mashed eggs, salt and pepper. Pour the dressing over the potatoes and mix well. Refrigerate and serve well chilled.
DURKEE SWEET POTATO SALAD
I've never liked traditional sweet potato casserole with marshmallow and all that, but I'm SO GLAD someone talked me into trying a bit of this! It's more savory than sweet. The Taste and texture of hard-boiled egg bits and crunchy celery in the smooth, tangy potatoes is terrific! The Durkee's "Famous" Sauce Dressing comes bottled and can be usually be found with steak sauces, Hollandaise and the like. Feel free to bake 3-4 sweet potatoes versus using canned ones. Prep time doesn't include boiling the eggs. ENJOY!

- Heat oven to 200C/180C fan/gas 6. Toss the sweet potato chunks with the olive oil and some seasoning, and spread on a baking parchment-lined baking sheet. Roast for 30 - 35 mins until tender and golden. Cool at room temperature.
- When just about cool whisk together all the dressing ingredients with a little more seasoning and gently toss through the potato chunks - use your hands to avoid breaking them up.

- Place potatoes into a large saucepan, and fill with enough water to cover. Bring to a boil, and cook for about 8 minutes, or until tender. Drain, and cool slightly.

- Bake 3 large sweet potatoes until tender. When cool enough to handle, peel and maish. Cream butter and sugar and add beaten eggs. Stir in potaotes and remaining ingredients except marshmallows. Blend well. Pour into greased baking dish. Bake at 375 degrees for 20 minutes. Remove and top with marshmallows. Reduce oven to 300 degrees and return to oven until tops of marshmallows are browned.

- Boil potatoes and big sweet potatoes for about 25 minutes -- you want to just be able to get your fork in them, but not so soft that you would/could mash them.
- Shock potatoes in ice-cold water -- set aside until you can easily handle them.
- Boil yams (the small, American sweet potatoes -- not the true "yam") for about 7 minutes -- you want to just be able to get your fork in them, but not so soft that you would/could mash them.

- Whisk together Mustard, Vinegars, EVOO, Salt and Pepper in a small bowl. Feel free to use your favorite mustard or vinegar (I use a spicy whiskey mustard and some lingonberry infused apple-cider vinegar) -- this is your dressing, it should be thick, but somewhat viscous so you can easily mix into your salad.
- Cut white potatoes into 2 inch cubes (more or less), cut the sweet potatoes slightly smaller, and slice the yams thinly, dice onion finely.
- Mix dressing into potatoes and onions, add edamame, and mix again -- chill for 2 hours, and eat.
