Steps:
- Brown sausage in saute pan, then place in 9x13 baking dish.
- Place potatoes, peppers, onion and garlic on top of sausage.
- Pour crushed tomatoes over and sprinkle with basil, salt and pepper to taste.
- Cover and bake at 350 degrees for 50 minutes or until done.
- Remove cover and bake 20 minutes more.

- Preheat the oven to 375 degrees F. Brush a 9-by-13-inch casserole dish with the oil.
- Stir together the diced tomatoes with chiles, chicken broth, chili powder, cumin and salt in a large bowl. Add the black beans, frozen corn, chicken, tortilla wedges and half the cheese and stir to evenly distribute and moisten all of the ingredients. Transfer to the prepared casserole dish and spread into an even layer. Loosely cover with aluminum foil and bake for 25 minutes.
- Raise the oven temperature to 400 degrees F. Remove the foil and sprinkle the top with the remaining cheese. Continue to bake until the cheese is melted and just starting to brown, about 10 minutes. Top with dollops of sour cream and sprinkle with the red onion and cilantro. Serve hot.

- Preheat oven to 425 degrees F. Spray a 9 x 13-inch baking dish with cooking spray.
- In the prepared baking dish (or in a separate bowl), stir together uncooked pasta, marinara sauce, water, about ¾ of the package of pepperoni, and salt. Cover tightly with aluminum foil and bake for 25 minutes.
- Remove dish from oven, take off cover, and give the pasta a stir. At this point it should be almost done, but still a bit firm ("al dente").
- Sprinkle mozzarella over the top and place remaining pepperoni slices on top of the cheese. Return the dish to the oven and bake, uncovered, for about 5-10 more minutes (or until cheese is melted and pasta is tender).
- Garnish with optional grated Parmesan cheese and fresh herbs, if desired

- Preheat oven to 375 degrees. Spray an 8x11-inch baking dish with nonstick spray.
- Sprinkle salt & pepper on pork chops then dredge in flour, shaking off excess.
- Heat a medium frying pan with olive oil and brown pork chops on both sides.
- Place cauliflower tots in bottom of baking dish in single layer.
- Sprinkle 1-1/2 cups cheese over tots.
- Place browned pork chops over cheese.
- Mix soup with half and half then pour evenly over pork chops.
- Cover with aluminum foil and bake 45 minutes.
- Remove from oven and discard foil. Sprinkle with remaining 1 cup grated cheese.
- Bake for 15 minutes more. If you like your cheese browned, place under broiler for about 3-5 minutes.
