MINI FUDGE BITES

Nonstick cooking spray
1 1/2 cups semisweet chocolate chips
7 ounces sweetened condensed milk (half a 14-ounce can)
2 tablespoons unsalted butter
Pinch kosher salt
1/2 cup walnuts, toasted and finely chopped
1/2 teaspoon pure vanilla extract
One 16.5-ounce package ready-to-bake sugar cookie dough
All-purpose flour, for dusting
Store-bought royal icing
1 to 2 drops gel food color (any color you like)
Candied violets (see Cook's Note)

Steps:

  • For the fudge: Spray a 9-by-9-inch baking dish with cooking spray and line with parchment paper, leaving an overhang on two opposite sides so the fudge can be easily removed.
  • In a medium saucepan, combine the chocolate chips, sweetened condensed milk, butter and salt. Bring to just short of boiling over medium heat, until the mixture is loose and the chocolate chips are melted, 3 to 5 minutes. Remove from the heat and stir in the walnuts and vanilla using a wooden spoon.
  • Pour the hot mixture into the prepared baking dish and refrigerate until cool and set, about 2 hours. Then, using a 1-inch square cookie cutter, cut the fudge into cubes.
  • For the cookies: Meanwhile, preheat the oven to 350 degrees F. Line a baking sheet with parchment paper. Remove the cookie dough from its packaging and transfer to a lightly floured surface; roll to 1/4 inch thick. Transfer to the prepared baking sheet and parbake for 10 to 11 minutes.
  • Using the 1-inch square cookie cutter, cut the parbaked cookies and return to the prepared baking sheet. Bake the cookies until they are lightly golden around the edges, 5 to 6 minutes. If they have puffed up and lost their shape, use the same cookie cutter to punch out the cookies again while they are still warm, for cleaner edges. Transfer the cookies to a wire rack to cool.
  • For the assembly and decorations: In a medium bowl, combine the royal icing with gel food color and mix until completely incorporated. Transfer to a piping bag fitted with a round number 2 tip. Pipe a dab of the royal icing onto the center of each cookie and adhere a cube of fudge on top. Decorate each fudge bite with more royal icing then top with a candied violet. Transfer to a platter to serve.

We all know Duff can bake cakes, but he can sure make fudge too! Prep time does not include 5 hours of sitting time before slicing.

3/4 cup sugar
1 cup evaporated milk
1/4 cup light corn syrup
1/2 cup unsweetened cocoa powder
1/2 cup butter
1 tablespoon vanilla extract
1 pinch salt
1 1/4 cups toasted chopped walnuts

Steps:

  • Line a 9-inch square pan with parchment paper; butter lightly.
  • Combine sugar, evaporated milk and corn syrup in a large saucepan over medium-high heat. Stir to combine. Insert candy thermometer; cook, without stirring, until mixture reaches 236-237 degrees F (soft ball stage). Remove pan from heat.
  • Add cocoa powder, butter, vanilla and salt; stir 60 seconds. Stir in walnuts. Pour into prepared pan.
  • Let sit 1 hour; cover and let sit at least 4 hours before placing. Slice into 18 3x1-1/2 inch bars.

WONDERFUL LASAGNA

This is not low fat, and is nothing but pure comfort food. Serve with yummy garlic bread and a salad. It also includes 8 hours of sitting time for the sauce, but I think everyone knows how much better Italian tastes the day after. This 8 hours of sitting lets the sauce develop. The cook time does not include the 8 hours of chilling time, so plan for that! I make the meat sauce the day before, and assemble the next day.

1 lb hot Italian sausage
1/2 lb ground chuck
1/2 cup green onion, minced
3 garlic cloves, crushed
3 -4 tablespoons olive oil
1 (29 ounce) can tomato sauce
1 (6 ounce) can tomato paste
1/4 teaspoon dried whole oregano
1 dash of dried whole basil
1/2 teaspoon salt
1/4 teaspoon black pepper, freshly ground
2 cups monterey jack cheese, shredded and divided (not pepper jack, just regular jack!)
1 cup ricotta cheese
1 cup cottage cheese
1/2 cup green onion, minced
1/2 cup fresh parsley, minced
1 egg, beaten
1/2 teaspoon dried whole basil, crushed
1/2 teaspoon dried whole marjoram, crushed
7 slices bacon
1 (10 ounce) package frozen chopped spinach, thawed and drained
1/2 cup parmesan cheese, freshly grated (not in the can...freshly grated)
1/2 cup soft breadcrumbs (put a couple of slices of bread in a mini food processor)
1 egg yolk
2 tablespoons olive oil (optional)
5 cooked lasagna noodles
1 (8 ounce) package sliced swiss cheese

Steps:

  • Remove the sausage from the casings. Cook the sausage, ground chuck, 1/2 cup green onions, and garlic in 3-4 tbsp olive oil in a large skillet until the meat is browned, stirring to crumble the meat; drain. Add the tomato sauce, tomato paste, 1/4 tsp oregano, dash of basil, salt and pepper; stir well. Bring to a boil; cover, reduce heat, and simmer for 30 minutes, stirring frequently. Cover and chill for 8 hours.
  • Combine the Monterey Jack cheese, ricotta cheese, cottage cheese, 1/2 cup minced green onions, parsley, beaten egg, basil, and oregano in a medium bowl; stir well, and set aside.
  • Cook the bacon until crisp; crumble the bacon. Combine the bacon, spinach, Parmesan cheese, breadcrumbs, egg yolk, and if desired, 2 tbsp olive oil.
  • Spoon half of the reserved meat sauce in a lightly greased 13 x 9 x 2 inch baking dish. Layer half of the reserved ricotta cheese mixture over the meat sauce; top with half of the spinach mixture. Arrange the noodles evenly over the spinach mixture. Repeat layers with half of the meat sauce, ricotta cheese mixture, and spinach mixture.
  • Sprinkle the remaining 1 cup of Monterey Jack cheese evenly over the lasagna mixture; top evenly with Swiss cheese slices.
  • Bake at 350 degrees for 40 to 45 minutes or until the cheese melts and the mixture is hot and bubbly.

COOKIE CUTTER FUDGE

1 1/2 cups semi-sweet chocolate chips
1 cup peanut butter chips
14 ounces sweetened condensed milk
2 tablespoons butter, softened
1 teaspoon vanilla extract
decorator icing (optional) or decorative candies (optional)

Steps:

  • Place six 3x1/2" cookie cutters in simple shape, on 5-inch squares of foil.
  • Seal foil around outside of cutters.
  • Place on cookie sheet.
  • Spray cutters with cooking spray.
  • In glass bowl, mix chips, milk and butter.
  • Microwave uncovered on high 1 to 2 minutes, stirring every 30 seconds, until chips are almost melted.
  • Stir in vanilla.
  • Pour mixture into cookie-cutter molds, filling to tops.
  • Refrigerate uncovered 2 hours or until firm.
  • Decorate as desired.
  • Carefully remove foil. Gently press fudge out of molds.
  • Recipe note: Run a thin knife around the cutters before attempting to push out fudge from the bottom.
  • You can use an 8-inch square pan instead.
  • Line with foil and pour the fudge into pan.
  • Cover and refrigerate 2 hours. Cut into squares.

1 cup corn flake crumbs
1/2 cup sugar
1/2 teaspoon cinnamon

Steps:

  • At least 5 hours in advance: Combine crumbs, sugar, and cinnamon in a shallow pan.
  • Let ice cream soften slightly for 5 minutes.
  • Make 6 balls of ice cream; roll in crumb mixture until well-coated, pressing coating into ice cream.
  • Wrap in aluminum foil and freeze for 5 hours.
  • Heat oil to 450°F.
  • Unwrap each ball and fry in hot oil VERY BRIEFLY, about 2 seconds.
  • Place in dessert dish; decorate with toppings, whipped cream, and a cherry.

Steps:

  • Line 8-inch square baking pan with foil.
  • In 2-quart saucepan, combine sugar, marshmallow creme, milk, butter, Kahlua and salt.

  • Remove from heat; add all chocolate.
