I made this for a St. Patrick's Day party and it went over great! Serve with crackers, chips, or veggies.

1 ½ cups shredded Irish Cheddar cheese (such as Dubliner®)
1 cup plain yogurt
½ cup finely chopped green onions
¼ cup mayonnaise
2 teaspoons prepared horseradish
1 teaspoon ground black pepper

Steps:

  • Stir Cheddar cheese, yogurt, green onions, mayonnaise, horseradish, and black pepper together in a bowl; refrigerate until chilled, at least 1 hour.

Dubliner Cheese Dip. I've lost track of the number of times I've been asked for this recipe. A delicious cheese spread recipe made even creamier with cream cheese and mayo.

7 ounces Dubliner Cheddar Cheese (grated)
4 ounces cream cheese (room temperature)
1 large red bell pepper (roasted and chopped)
1 medium shallot (peeled and diced)
1/4 cup mayonnaise
1/4 teaspoon garlic powder
pepper to taste
A splash of Sriracha - optional

Steps:

  • Mix all ingredients together until well blended and serve with your favorite crackers. We like this with Wheat Thins.

12 ounces artichoke hearts, chopped
1 cup mayonnaise
1 small clove garlic, minced
2 tablespoons oregano
2 tablespoons onion, grated
2 cups Kerrygold Dubliner Cheese, grated

Steps:

  • Combine all ingredients and spoon the mixture into an 8-inch baking dish. Bake for 30 minutes at 300 degrees F. Serve with crackers, pita chips, or flat bread.

Guinness Dubliner Dip - Simply Scratch image

In this Guinness Dubliner dip, caramelized onions are tossed with cream cheese, Dubliner cheese and Guiness beer, baked in the oven until golden and bubbly.

Number Of Ingredients 10

1 rye bread
olive oil
kosher salt
2 tablespoons unsalted butter
1 large yellow onion (thinly sliced)
kosher salt
8 ounces softened cream cheese
7 ounces Dubliner cheese (by Kerrygold, grated)
1/4 cup mayonnaise
1/4 cup Guinness beer

Steps:

  • Preheat your oven to 400°. Place the bread onto a rimmed, metal sheet pan. Brush both sides with olive oil and sprinkle with a few pinches of kosher salt. Bake for 10 to 12 minutes. Flipping the slices halfway through. Once cool, cut the toasts in half.
  • Meanwhile heat a 10-inch on medium-low and melt 2 tablespoons of butter. Add in the sliced onions, sprinkle in a generous pinch of salt and toss to coat. Cook slowly, tossing occasionally until the onions softened and eventually caramelize and turn golden brown about 25 minutes.
  • In a medium bowl, add the cream cheese, 4 ounces of the grated Dubliner cheese, mayonnaise and the caramelized onions. Pour in the Guinness and stir until all of the ingredients are incorporated.
  • Spread the mixture into a oven-safe baking dish or small cast iron skillet, sprinkle with the remaining cheese and bake for 25 to 28 minutes. Allow the dip to cool for 10 to 15 minutes before serving with the toasted rye slices.
