Tasty side dish when green beans are fresh. If you have access to Chinese yard-long beans you can use those too, just cut into 2-3 inch lengths. In any case the beans must be fresh, not canned or frozen. The canned and frozen forms have too much moisture in them to fry properly.

1 lb fresh green beans
2 tablespoons oil
1/4 cup walnuts, coarsely chopped
1 teaspoon dried chili pepper flakes
salt and pepper

Steps:

  • Wash green beans and dry thoroughly. Snap off stems.
  • Heat oil in large skillet or wok over medium high heat until almost at the smoking point.
  • Add the dry beans to the hot oil and stir-fry until the beans start to get some dark brown spots.
  • Add the walnuts and continue to stir-fry to cook all sides of the beans and toast the nuts.
  • Sprinkle on the chili flakes and toss to distribute evenly.
  • Remove from heat, salt and pepper to taste.

1/4 cup vegetable oil, for shallow frying
5 ounces green beans
2 large red chilies
1 1/2 tablespoons hoisin sauce
1 garlic clove, finely chopped
1/4 teaspoon sea salt
1/4 teaspoon vegetable oil

Steps:

  • Heat the oil in a hot wok set over a high heat.
  • Fry the beans for 1- 2 minutes, until just tender and slightly wilted. Remove from the oil, drain on kitchen paper and set aside.
  • Cut the chilies in half lengthways and scrape out the seeds.
  • Carefully empty the hot oil from the wok and wipe it clean with kitchen paper.
  • In the clean wok, combine the hoisin sauce, garlic, salt and oil.
  • Stir in the chilies.
  • Toss the cooked beans into the sauce and stir-fry for 2-3 minutes, coating them in the sauce. Serve at once.

  • Marinate minced pork with all the seasonings in a small bowl for around 15 minutes just before cooking. Prepare the green beans and drain with paper.
  • Heat up oil in wok (or you can use a small deep pot) until you can see light smoke on the surface over high fire. Add drained green beans to fry for 3 to 5 minutes over low to medium fire. Stir the beans occasionally during the process. They will be well deep-fried when there are obviously withered. Transfer out and filter the extra oil out.
  • Leave around 1 tablespoon of cooking oil in wok and pour out the extra. Be carefully during the process as the oil is extremely hot. Add minced pork and fry until for 1 minute until aroma and then put ginger, garlic, Szechuan pepper, ginger, Ya Cai (if you happen to have some in kitchen) and dried pepper. Fry for another 1 to 2 minute. Return green beans along with salt, sugar and light soy sauce. Fry until everything is well combined. Serve hot!
