Drunken Garlic Pintos with Pan-Roasted Poblanos image

These are my very own borrachos, "drunken beans" cooked with a little beer, onions, garlic, and my favorite - cumin! These are also delicious mashed with a little Oaxacan or Chihuahua white cheese crumbled on top, or with soft warm corn tortillas. The heat can be adjusted with more (or less) poblanos or hot sauce, and prep time includes soaking the beans (using my quick soak method).

1 1/2 cups pinto beans
1/2 onion, coarsely chopped
4 cloves garlic, chopped
1/2 small poblano pepper, finely minced
3 cups water
6 ounces bottles dark Mexican beer (I like Negra Modelo dark ale)
1 teaspoon ground cumin
1/2 teaspoon dried oregano
salt and pepper
1 dash garlic powder
1 dash Tabasco sauce

Steps:

  • Quick soak the pinto beans: bring beans to a boil; boil for 10 minutes.
  • Drain; soak in fresh water for one hour.
  • Drain again and now they're ready to use!
  • Saute poblano pepper in a small amount of olive oil until slightly browned.
  • Add soaked beans, onion, garlic, cumin, oregano and the 3 cups of water and 1/2 bottle of beer.
  • Bring to a boil, then simmer on low heat, covered, for 2 hours; continue to cook uncovered for about 45 minutes or until beans are tender and liquid is thickened a little.
  • Adjust seasonings: salt and pepper to taste, a couple dashes of garlic powder, and a few dashes of Tabasco sauce.
  • *Don't salt beans while they're cooking, only after they are tender.

These beans are wonderful. If you're short on time, you can even use canned pinto beans. But try making from scratch, as it makes a HUGE difference! This is Rick Bayless' version of Frijoles Charros.

1 1/4 cups dried pinto beans
5 cups water
1/2 cup pork shoulder, cubed (or extra bacon)
4 slices bacon, thick, cut into 1/2 inch pieces
1 small white onion, cut into 1/4 inch dice
2 serrano chilies or 1 jalapeno chile
3/4 teaspoon salt
1 1/2 tablespoons tequila, to taste
1/4 cup cilantro, roughly chopped

Steps:

  • BEANS:.
  • Sort and rinse the beans thoroughly. Scoop into a 4 quart saucepan.
  • Add 5 cups water; remove any beans that float.
  • Add the cubed pork (or extra chopped bacon) and bring to a boil.
  • Reduce heat and gently simmer, partially covered, until tender, about 2 hours.
  • Stir gently occasionally, and keep water level a good 1/2 inch above the level of the beans.
  • FLAVORINGS:.
  • In a medium skillet, fry the bacon until crisp. Remove the bacon but leave behind the drippings.
  • Pour off all the drippings except 2 Tablespoons.
  • Return pan to medium heat.
  • Add the onions and chiles and fry until deep golden brown, about 10 minutes.
  • Scrape the onion mixture into the beans; taste and season with salt.
  • Continue simmering, stirring occasionally, for 20 minutes to blend the flavors.
  • If the beans seem soupy, boil over medium heat until they are the consistency of a nice brothy bean soup.
  • You can also take 1/4 of the beans and run them through the blender with a bit of broth, then return to pan.
  • Just before serving, stir in the tequila and cilantro.
  • Serve in warm bowls topped with the crumbled bacon.

GRILLED POBLANOS IN GARLIC OIL

2 1/2 pounds fresh poblano peppers
2 cloves garlic, sliced extra thin
Salt
freshly ground black pepper
1 1/2 cups extra virgin olive oil
4 to 6 sprigs fresh thyme
1 loaf country bread (optional)
Pickled white anchovies (optional)

Steps:

  • Heat a grill or griddle until very hot. Place whole peppers on cooking surface (if using a grill, lay a sheet of aluminum foil under peppers) and cook until skin is completely black and flesh is soft, about 20 minutes. Turn peppers every 2 to 3 minutes for even cooking.
  • When completely charred, wrap peppers in newspaper or place in paper bag; set aside to cool at least 15 minutes. When cool enough to handle, remove stems, seeds and skin, working gently to limit breakage.
  • Cut peppers lengthwise in half, then into strips about 1/4-inch thick. Arrange peppers in a shallow dish and sprinkle with sliced garlic, salt and pepper. Add olive oil and thyme, cover and marinate at least 2 hours or, preferably, overnight.
  • Serve at room temperature with crusty bread as an appetizer, or as a side dish with grilled fish, steak or pork. To serve on toast, slice bread and toast or grill just before serving. Drizzle toast with a little oil from dish, add a few pepper strips, and top with an anchovy.

4 poblano chiles (1 lb)
1 fresh jalapeño chile
8 medium tomatoes (2 lb), coarsely chopped
3 tablespoons chopped fresh oregano
2 tablespoons chopped fresh cilantro
1/3 cup green (hulled) pumpkin seeds
4 ears fresh corn, kernels cut off
1 large white onion, cut into 1/2-inch-thick rounds
3 garlic cloves, minced
1 teaspoon ground cumin
1/4 cup olive oil
12 oz short pasta such as gemelli or rotini
1 1/2 cups crumbled queso fresco (Mexican fresh cheese) or ricotta salata cheese
Garnish: fresh cilantro leaves

Steps:

  • Lay chiles on their sides on a metal rack set over grates of gas burners set on moderately high. (Or broil chiles on rack of a broiler pan about 2 inches from heat.) Roast chiles, turning them with tongs, until skins are blackened, 5 to 8 minutes. 3Transfer chiles to a bowl, then cover and let steam 10 minutes.
  • Peel poblanos and discard seeds and ribs, then coarsely chop. Peel jalapeño and chop with seeds (omit seeds if you want a less spicy salad). Transfer chiles to a large serving bowl and stir in tomatoes and herbs.
  • Toast pumpkin seeds in a dry well-seasoned 9- to 10-inch cast-iron skillet over moderate heat, stirring, until puffed and lightly browned, 2 to 3 minutes (seeds will pop as they puff). Transfer seeds to a small bowl.
  • Add half of corn to skillet and dry-roast over moderate heat, stirring frequently, until browned in spots, 4 to 5 minutes. Transfer to tomato mixture and cook remaining corn in same manner, adding it to tomato mixture.
  • Add onion to skillet and dry-roast, turning frequently, until browned but still slightly crisp. Transfer to a cutting board and coarsely chop. Stir into corn mixture.
  • Cook garlic and cumin in oil in skillet over moderate heat, stirring, until fragrant, about 30 seconds. Stir into corn mixture and season vegetables with salt and pepper.
  • Cook pasta in a large pot of boiling salted water until al dente, then drain. Add pasta to corn mixture and toss. Season with salt and sprinkle with pumpkin seeds and cheese. Serve warm or at room temperature.
