DRIED MANGOES
My kids love dried mangoes - but nothing is worse then seeing all those processed ingredients on the packages you get from the store. Which is why we now make our own! So easy and so good.

Steps:
- Mix honey and lemon juice in a small bowl. Stir until the honey is dissolved.
- Peel and slice mangoes into small even strips.
- Dip each strip into the lemon/honey mixture, shake off any excess. Place on dehydrator sheets.
- Dehydrate for 10 - 12 hours at 135 degrees. (I'd start checking around 8 or 9 hours. Times will vary based on humidity levels. Mine took about 11 hours.)

- Peel the mangos and slice thinly. If you want thicker slices, feel free to do so - just be
- aware that they will take longer to dehydrate
- Arrange the mangos on the dehydrator sheet. If you are using the oven method, place on a
- parchment-lined tray.
- Set the dehydrator to the "Fruit" setting and allow it to dehydrate until desired consistency.
- Times will vary based on humidity levels. Mine took about 11 hours and sometimes it takes about 18 hours.
- If you are using an oven, set it as low as possible and dehydrate until very dry and crispy.
- Since the oven will be at a higher temperature this may only take 10-12 hours. Check
- every 30 minutes after the 10 hour mark until you are happy with the level of dryness.
- To store: Store in an airtight container in the fridge, or enjoy right away
DRIED MANGO

- Start with clean hands, equipment, and countertops.
- If using frozen mango, thaw and cut into smaller, ½" cubes, then place the mango on dehydrator trays. Use a mesh liner if your trays have larger holes.
- If using fresh mango, peel the skin then slice ¼" strips off the two broad sides of the mango until you hit the pit. Then, slice strips off the remaining thin sides. Arrange on dehydrator trays.
- Dehydrate at 135°F / 57°C for 8-10 hours until dry and pliable (see Note 2).
DRIED MANGO CHUTNEY
Use as a condiment on your favourite sandwich; spoon on grilled or seared meats; enjoy with a slice of good cheese and fruit. A delicious chutney that you'll make over and over again.

- Place all ingredients in a medium saucepan. Bring to a boil, reduce heat to low, and simmer until thick, about 30-35 minutes, stirring often to keep from scorching. Let cool, and store in an airtight container.

- Rich in protective antioxidants. Mangos are a good source of protective antioxidants, plant chemicals that include gallotannins and mangiferin. These have been studied for their ability to counter the oxidative stress associated with day to day living or exposure to toxins.
