GREEK LEEKS AND RICE - PRASORIZO

1 pound (450 g) leeks sliced in ½ inch wide slices (white and pale green parts only)
1/3 cup olive oil
2 tablespoons chopped dill
2 teaspoons tomato paste
½ cup medium grain rice (uncooked)
1 ¼ cup boiling water (more as needed)
salt and pepper as needed
Lemon for serving

Steps:

  • Wash and slice the leeks. Place the leeks in a pot of boiling water and boil for 2-3 minutes. Strain leeks and set aside.
  • In a pot or deep pan, heat the olive oil on medium low heat and add the leeks and sauté until leeks are soft (about 6-7 minutes). Note: You do not want to brown them.
  • Add the dill and the tomato paste and stir a couple of times, than add the rice and about 1 ¼ cup of hot water. Add salt as needed (I added about ½ a teaspoon) and mix well.
  • Cover the pot with its lid and simmer at low heat for about 20 minutes, until rice is soft. Check regularly and add additional hot water as needed. Turn off the heat and let it sit for 10 minutes with the lid on.
  • Serve as a main course with a few drops of lemon juice and freshly ground pepper.

Some think that Risotto is just too much trouble, but when you have guests that are in the kitchen drinking wine, and keeping you company it really isn't that bad. This is my stand-by risotto, we usually serve with fresh grilled steelhead. I got this from my friend Stephanie don't know where she got it from.

1 tablespoon butter
2 -3 leeks, white part and a little green chopped
1/2 cup light cream (or dairy substitute)
salt and pepper
5 cups chicken broth
2 tablespoons butter
1 tablespoon olive oil
1/3 cup minced onion
1/2 cup dry white wine
1 1/2 cups arborio rice
1/3 cup grated parmesan cheese
1 tablespoon parsley

Steps:

  • Put chicken broth in sauce pan and bring to a slow simmer.
  • In thick bottomed 2 quart pan melt 1 tablespoons butter, saute chopped leeks, till softened.
  • Add 1/2 cup light cream. (I use goat milk)
  • salt and pepper to taste.
  • Continue cooking until most of the liquid is gone. Set aside.
  • In another pan or the same one that has been cleaned, add 2 tablespoons butter and 1 Tbsp of olive oil.
  • Saute the minced onions, when softened, add the Arborio rice, stir until the grains turn opaque.
  • Add the dry white wine, stir until no liquid is left.
  • Add broth to rice 1/2 cup at a time stirring until incorparated.
  • 5 minutes before finished add the leeks and the Parmesan cheese.
  • Continue cooking until thickened to desired level, stirring constantly.
  • Garnish with parsley or stir in before serving.

3/4 lb asparagus, trimmed
2 tablespoons extra virgin olive oil
salt and pepper, to taste
1 1/2 cups sliced leeks (white and light green parts only)
1 cup arborio rice or 1 cup short-grain rice
3 cups chicken broth
1/3 cup freshly grated parmesan cheese
2 tablespoons chopped fresh parsley
1/2 teaspoon lemon zest
1 tablespoon lemon juice
1/4 teaspoon freshly ground coarse black pepper
1 lemon, sliced

Steps:

  • Roast asparagus: place asparagus in a single layer on a baking s heet. Brush evenly with 1 T. olive oil; lightly sprinkle with salt and black pepper. Bake, uncovered, in 450-degree oven about 10 minutes or until crisp-tender. Cool slightly. Cut two-thirds into 2-inch pieces; set aside all asparagus.
  • While the asparagus is roasting, cook leeks in a large saucepan in 1 T. olive oil until tender. Stir in uncooked rice. Cook and stir over medium heat about 5 minutes or until rice begins to turn golden brown.
  • In another saucepan bring broth to boiling. Reduce heat and simmer. Carefully stir 1 cup of hot broth into rice mixture. Cook, stirring frequently, over medium heat until liquid is absorbed. Then add 1/2 cup broth at a time, stirring frequently until broth is absorbed before adding more broth (about 22 minutes in total).
  • Stir in any remaining broth. Cook and stir just until rice is tender and creamy.
  • Stir in asparagus pieces, cheese, parsley, lemon zest, lemon juice, and pepper. Top with asparagus spears and lemon slices.

Creamy italian rice dish that is served as a main course. This is a reduced fat version. I have reduced the amount of oil and cheese used, but you can also sprinkle parmesan over the top once it's served. We make this at least one a week. It's wonderful!

6 cups chicken stock or 6 cups chicken broth (48 fl oz)
1 tablespoon olive oil
1 1/2 cups leeks, chopped
2 1/2 cups arborio rice (17.5 oz/545 g)
2/3 cup dry white wine
1/2 cup freshly grated parmesan cheese
salt and pepper

Steps:

  • Pour the stock or broth into a saucepan and bring to a simmer.
  • Keep liquid hot.
  • In a large, heavy saucepan over low heat, heat oil.
  • Add the leeks and saute about 5 minutes.
  • Add the rice and stir until white spots appear in the center of the grains, about 1 minute.
  • (It is very important to use Arborio rice!) Add the wine and stir until absorbed, about 2 minutes.
  • Add one ladleful of the hot stock or broth, adjust the heat to maintain a gentle simmer, and cook, stirring constantly, until the liquid is absorbed, about 2 minutes.
  • Continue adding the stock or broth, one ladleful at a time and stirring constantly, until the rice is just tender but slightly firm in the center and the mixture is creamy, 20-25 minutes longer.
  • Add the cheese and season with salt and pepper to taste.
  • Stir to mix well.
  • Serve at once.
  • Makes 8 cups.

This is a simple Greek dish - very easy to make and very easy to eat. It is not a risotto in the Italian sense of the word, so don't look for that technique here. Still, you will be pleasantly surprised with how we do it (it's easier!). I would make this using water for a meal suitable for the Lenten Fast. The stock adds richness and more depth and the parmesan is just plain delicious on it. In Greece we would eat this (without the parmesan) with a hefty slice of feta on the side, some kalamata olives, crusty bread and a glass of wine.

6 large leeks, cleaned and sliced into 1/2-inch pieces, washed well to remove all grit (this will be about 6-7 cups of sliced leek)
1 large red onion, minced
1/2 cup boiling water
1/2-3/4 cup olive oil (we use more olive oil in Greece than what you're probably used to)
1 tablespoon tomato paste
1 cup arborio rice (suitable for risotto) or 1 cup carnarola rice (suitable for risotto)
4 1/2 cups boiling water or 4 1/2 cups hot stock
3 tablespoons minced fresh dill
1/2 lemon, juice and zest of
freshly-grated parmesan cheese
freshly-cracked black pepper

Steps:

  • In a large saucepan, saute the leeks and onion in the olive oil until softened, 4-5 minutes. Add 1/2 cup water and tomato paste and bring temperature down to simmer. Cover saucepan and simmer for 20 minutes, stirring occasionally.
  • Add rice and 5 cups hot liquid, bring to boil, cover and simmer for 15 minutes, stirring occasionally.
  • Stir in dill and lemon zest and juice. Remove from heat and allow to 'sit' for anywhere from 35=45 minutes before serving. The risotto will absorb extra liquid during this time, but remain creamy and hot.
  • Serve with freshly-grated parmesan and cracked black pepper.

  • Heat the oil in a large frying pan or wok, and add the onion, garlic, spring onions and leek. Cook over a medium-low heat for around 5 minutes, until the vegetables are soft. Add the rice, and cook for a further 2-3 minutes.
  • Next, add the vegetable stock and oregano. Mix well, and leave to simmer gently over a fairly low heat, stirring every few minutes. The rice will absorb the stock, and any excess moisture will disappear. At this point, check that the rice is fully cooked - add a dash more water if not, and cook for a few more minutes.
  • When the rice is cooked and there is no more excess water, add the fresh parsley and pine nuts, and season to taste.
