1 chicken (whole)
2 tablespoons vegetable oil
2 tablespoon salt
1 teaspoon pepper
3 tablespoons poultry seasoning
1 can beer (half full)

Steps:

  • Preheat your oven to 350 degrees.
  • Prepare chicken by removing any giblets, etc, and discard. Rinse the chicken and pat dry.
  • Rub the chicken with your oil. Use salt, pepper and dry rub all over the inside and outside of the bird. Set aside.
  • Pour 1/3 to 1/2 of your can of beer into the base of the roasting pan.
  • Place the beer can directly inside the cavity of the chicken.
  • Place your chicken into the oven and roast for one hour and fifteen minutes. Check your temp with a meat thermometer - you'll want to see 180 degrees fahrenheit in the thickest part of the thigh, 165 in the breast (internal).
  • Let chicken rest for 10 minutes. You can even make a loose tent over the chicken to create a moisture trap. Carve and serve.

How to Cook an Oven-Roasted Beer Can Chicken image

Note: You can use root beer, Coke or experiment with other sodas. Or simply take an empty can and create your own flavored liquid. For example, squeeze mandarin oranges and drop them in the can and top with water to 3/4 full. Or add a combination of lemon juice, herbs and some water. 1 whole chicken
12 ounces beer (1 regular size can, any type of beer )
3 tablespoons olive oil
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon sage
salt
pepper
1 garlic clove
1/4 cup paprika
1 teaspoon kosher salt
1 teaspoon pepper onion salt
1 teaspoon pepper
1 tablespoon white sugar
1 tablespoon brown sugar
olive oil

Steps:

  • Wet Rub: Mix all together the olive oil, thyme, rosemary, sage, a bit of salt and pepper; and garlic. Rub all over the chicken.
  • Dry Rub: Mix all together the paprika, kosher salt, pepper onion salt, pepper, white sugar and brown sugar. Rub the chicken with a bit of olive oil and then coat the chicken with the dry rub.
  • Preheat your oven to 375 or 190.6°C You may have to remove the second rack in your oven and move the other rack lower, so that the chicken will fit in while standing upright.
  • In a large bowl, apply your rub of choice all over the chicken. Rub under the wings, legs, and even inside of cavities. Leave the chicken in the bowl until you are ready to place it on your can.
  • Place the can on a baking sheet or oven-safe griddle. Place the chicken over the can. Open the rear cavity of the chicken and carefully place it over the can, so only about an inch of the can is showing.
  • Place the chicken in the oven and roast to an internal temperature of 165 or 73.9°C Depending on the size of your chicken, this can take about 75-90 minutes or so. Once the chicken has reached the appropriate internal temperature, let it rest for about 10-15 minutes before serving.

1 (4 lb) whole chickens
1 (16 ounce) can beer (tall boy)
2 tablespoons salt
1 teaspoon black pepper
3 tablespoons dry rub seasonings (your favorite)
2 tablespoons vegetable oil

Steps:

  • Set up your grill for indirect cooking.
  • On a charcoal grill, this means spreading the coals around the outer edges, but not directly below the food.
  • On a gas grill the outer burners are lit, but not the middle one.
  • Once the grill is covered (which it should always be for indirect grilling) the circulating heat works like a convection oven, so there is no need to turn the food.
  • Remove neck and giblets.
  • Discard.
  • Rinse chicken inside and out; pat dry with paper towels.
  • Rub chicken lightly with oil, then rub inside and out with salt, pepper and dry rub.
  • Set aside.
  • Open beer can and take several gulps (make them big gulps so that the can is half full).
  • Place beer can on a solid surface.
  • Grabbing a chicken leg in each hand, plunk the bird cavity over the beer can.
  • Transfer the bird-on-a-can to your grill and place in the center of the grate, balancing the bird on its two legs and the can like a tripod.
  • Cook chicken over high indirect heat, with the grill cover on for approximately 1 1/4 hours or until the internal temperature registers 165°F in the breast area and 180°F in the thigh, or until the thigh juice runs clear when stabbed with a sharp knife.
  • Remove from grill and let rest for 10 minutes before carving.

If you don't yet have the Pampered Chef roasting set, you can still use any large roasting pan for the grill and a can of beer with or without a holder. You may also improvise by using an empty soup tin. If not using a beer can holder, prop the chicken up with the beer can inserted into the cavity and use the legs in tripod fashion. Steps:

  • Prepare grill for indirect cooking over medium heat.
  • Combine seasonings in small mixing bowl and mix well.
  • In large mixing bowl, combine vegetables, oil and ½ tablespoon (7 mL) of the seasoning; toss to coat.
  • Trim excess fat from chicken, if necessary. Sprinkle remaining seasoning all over chicken.
  • Pour out or drink about one-fourth of the beer. Place beer can in can holder (if using) in the BBQ Roasting Pan & Can Holder, if using. If not using the beer can holder, simply shove the chicken cavity over the beer can and prop upright using its legs to create a tripod effect. Arrange vegetables around chicken.
  • Place roasting pan on grid of grill. Grill, covered, 65-75 minutes or until thermometer registers 165°F (74°C) in thickest part of breast, rotating pan once during grilling. NOTE: if necessary when using charcoal, add 12 new coals on each side of grill after 30 minutes.
  • Remove roasting pan from grill. Carefully remove chicken from can holder.
  • Discard canned beverage and serve chicken with vegetables.

Never thought beer can chicken would taste so good! First time I've tried it. My whole family was really impressed. We couldn't stop eating it untill it was completly gone! lol. I didn't have any actual beer cans so I just emptied out a soup tin and used that instead.

1 teaspoon kosher salt
1 teaspoon paprika
1 teaspoon finely chopped rosemary
1 teaspoon dried thyme
1/2 teaspoon lemon zest
1/2 teaspoon fresh ground black pepper
1 roasting chicken, about 4 pounds
1 tablespoon extra virgin olive oil
12 ounces beer (room temperature)
2 sprigs fresh rosemary
1 -2 garlic clove, crushed
1 lemon, juice of
1 teaspoon dried thyme

Steps:

  • Mix rub ingredients in a small bowl. lightly rub the chicken all over with the oil. Season the chicken inside and out with the rub.
  • Open your beer can and drink about half of it. Put the rosemary, thyme, garlic, and lemon juice into the beer. Make a few more holes in the top of the beer can with a can opener. Shove the chicken cavity over the beer can. You can actually get special beer can chicken holders for this that make it a bit easier.
  • Grill over indirect medium heat(350-450 degrees F) until juices run clear and internal temperature reaches 180 degrees F in the breast, about 1 1/4 -1 1/2 hours. Let the chicken rest for about 10 minutes before removing from beer can and cutting up. Enjoy!

This method of cooking a chicken may look a little undignified, but it is guaranteed to keep the meat really tender and juicy

1.8kg chicken
3 tbsp olive oil
440ml can of beer
1 tbsp muscovado sugar
1 tbsp sweet smoked paprika
1 tsp cayenne pepper
2 tsp English mustard powder
2 tsp thyme
1½ tsp celery salt

Steps:

  • Light a lidded barbecue. Let the flames die down and the coals turn ashen, then mound the coal up on one side. If using a small barbecue, you will have to remove the grills and place a sturdy roasting tin on the floor of the barbecue, next to the coals - this will give you space to close the lid once the chicken is in. If you have a large barbecue, the chicken can sit directly on the grills (or on a tray on the grills, so that it doesn't topple over.)
  • To make the rub, mix all the ingredients together with a good grinding of black pepper. Drizzle the chicken with the oil, sprinkle over the rub and massage it into the skin, making sure you get into all the nooks and crannies, even inside the cavity.
  • Use a can opener to take off the top of the can of beer. Pour out half the beer (tip into a glass to drink!) and leave the rest in the can, as it will keep the chicken moist while it cooks. Pop the chicken onto the can, legs down, so that it looks like it is sitting upright with the can in its cavity. Stand the chicken and can upright on the barbecue, either in the roasting tin or directly on the grill, on the side with no coals. Close the lid and cook for 1 hr 20 mins until the chicken is browned, the meat tender and the juices run clear. If the juices aren't clear, cook for a further 10 mins, then check again. (To cook in the oven, heat to 200C/180C fan/gas 6. Sit the chicken on a baking tray, place in the bottom of the oven, and follow the same cooking time.)
  • Remove the chicken from the barbecue, cover lightly with foil and leave to rest for 20 mins before serving.
