BEER CAN CHICKEN IN THE OVEN

Steps:
- Preheat your oven to 350 degrees.
- Prepare chicken by removing any giblets, etc, and discard. Rinse the chicken and pat dry.
- Rub the chicken with your oil. Use salt, pepper and dry rub all over the inside and outside of the bird. Set aside.
- Pour 1/3 to 1/2 of your can of beer into the base of the roasting pan.
- Place the beer can directly inside the cavity of the chicken.
- Place your chicken into the oven and roast for one hour and fifteen minutes. Check your temp with a meat thermometer - you'll want to see 180 degrees fahrenheit in the thickest part of the thigh, 165 in the breast (internal).
- Let chicken rest for 10 minutes. You can even make a loose tent over the chicken to create a moisture trap. Carve and serve.

HOW TO COOK AN OVEN-ROASTED BEER CAN CHICKEN
Note: You can use root beer, Coke or experiment with other sodas. Or simply take an empty can and create your own flavored liquid. For example, squeeze mandarin oranges and drop them in the can and top with water to 3/4 full. Or add a combination of lemon juice, herbs and some water. - Wet Rub: Mix all together the olive oil, thyme, rosemary, sage, a bit of salt and pepper; and garlic. Rub all over the chicken.
- Dry Rub: Mix all together the paprika, kosher salt, pepper onion salt, pepper, white sugar and brown sugar. Rub the chicken with a bit of olive oil and then coat the chicken with the dry rub.
- Preheat your oven to 375 or 190.6°C You may have to remove the second rack in your oven and move the other rack lower, so that the chicken will fit in while standing upright.
- In a large bowl, apply your rub of choice all over the chicken. Rub under the wings, legs, and even inside of cavities. Leave the chicken in the bowl until you are ready to place it on your can.
- Place the can on a baking sheet or oven-safe griddle. Place the chicken over the can. Open the rear cavity of the chicken and carefully place it over the can, so only about an inch of the can is showing.
- Place the chicken in the oven and roast to an internal temperature of 165 or 73.9°C Depending on the size of your chicken, this can take about 75-90 minutes or so. Once the chicken has reached the appropriate internal temperature, let it rest for about 10-15 minutes before serving.

- Remove Innards from chicken and wash thoroughly.
- Spread Butter all over outside of chicken (I can't believe it's not Butter spray works best) Coat chicken well with Garlic Salt and Lemon Pepper.
- Place chicken standing up on beer can inserted in the bottom and place in a roasting pan uncovered.
- Put Garlic Cloves up under the skin at top of Chicken and at bottom.
- Place a few cloves inside cavity Put a few drops of Hot Sauce inside the cavity if desired.
- Bake at 325 degrees for 4-5 hours.
- The beer will keep chicken from drying out.
- Check occasionally to make sure chicken is still standing upright on beer can and has not fallen over.
SPICE RUBBED BEER CAN CHICKEN

- Heat a gas or charcoal grill with a lid big enough to accommodate the bird. Put a drip pan below the grates.
- Mix the ingredients for the Spice Rub until they are well blended. (This will keep, covered, in the refrigerator for 1 week.) Rub it all over the chicken, inside and out.
- Open the beer and take a big swig or just pour out a couple of ounces. Sit the chicken on the beer can so the legs are at the bottom and the wings are at the top. Stand the beer can on the grates over the drip pan. Put the cover on and cook over indirect heat until the juices run clear, about 1 hour. (If using charcoal, push the coals to 1 side so the chicken is not over direct heat.)
- **(BTW, I wanted to mention that when I make a 3.5lb bird, it usually takes about 1 hour & 15-30 minutes and the larger birds closer to or over 4lbs, about 1 hour & 30-45 minutes. But, everyone's grills and heat levels are different, so just check it after an hour to see if it's ready and if not, then let it cook more as needed. -Althea753).
- Note: This chicken can also be cooked in a 350 degrees F oven. Just stand the beer can in a shallow roasting pan and cook about 1 hour or until juices run clear.

- Preheat the oven to 425 degrees F. Place a baking dish, roasting pan or dutch oven on a baking sheet. Open the can of beer and take a few sips and/or pour about 1/4 of it into the dish or pan. Set the can in the center of the dish.
- Remove the giblets and any other parts of the chicken and discard or set aside for another use. If desired, wash the chicken but either way – pat it TOTALLY dry with paper towels. You don’t want one speck of liquid.
- In a small bowl, stir together the sugar, salt, pepper, paprika, garlic powder, onion powder and chili powder.
- In another bowl, add the softened butter. Add a few pinches (about 1/3 of the mix) of the spice mix to the butter and stir together until combined and smooth. Gently lift the skin of the chicken and rub the butter all over the breasts (UNDER the skin) and the thighs, if you can get to them. You only have to add a thin layer because much of the butter will run out of the chicken as it cooks. Push it up underneath the skin as far as it can go. Slice one of the limes into 1/8-inch slices and slide them up underneath the skin – as many as you can fit in one layer. Gently sit the chicken on top of the can of beer which is in the dish (OMG, so many things), the beer can going into the cavity of the chicken. Or you might have one of those fancy contraptions that makes beer can chicken easier.
