6 ounces cream cheese, softened
1-1/3 cups sugar, divided
1/4 teaspoon coconut extract
6 tablespoons butter, softened
2 large eggs, room temperature
1 teaspoon clear vanilla extract
2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/8 teaspoon salt
1 cup 2% milk
FROSTING:
12 ounces cream cheese, softened
6 tablespoons butter, softened
1 tablespoon water
2 teaspoons clear vanilla extract
1-1/2 cups confectioners' sugar
1 cup sweetened shredded coconut

Steps:

  • Preheat oven to 350°. Line 18 muffin cups with paper liners. In a small bowl, beat cream cheese, 1/3 cup sugar and coconut extract until smooth., In a large bowl, cream butter and remaining sugar until light and fluffy. Add eggs, 1 at a time, beating well after each addition. Beat in vanilla. In another bowl, whisk flour, baking powder, baking soda and salt; add to creamed mixture alternately with milk, beating well after each addition., Spoon 1 rounded tablespoon of batter into each prepared cup. Drop cream cheese mixture by scant tablespoonfuls into center of each cupcake. Cover with remaining batter, about 1 scant tablespoon each., Bake 16-20 minutes or until a toothpick inserted in the cake portion comes out clean. Cool in pans 10 minutes before removing to wire racks to cool completely., For frosting, in a small bowl, beat cream cheese, butter, water and vanilla until blended. Gradually beat in confectioners' sugar until smooth. Frost cupcakes; sprinkle with coconut. Refrigerate leftovers.

1 package chocolate cake mix (regular size)
6 ounces cream cheese, softened
1/3 cup sugar
1 large egg, room temperature
1/8 teaspoon salt
1 cup semisweet chocolate chips
1/4 cup sweetened shredded coconut, optional

Steps:

  • Prepare cake mix according to package directions for cupcakes. Fill 30 paper-lined muffin cups half full. In a large bowl, beat cream cheese and sugar until fluffy. Beat in egg and salt until smooth. Stir in chocolate chips and, if desired, coconut. , Drop about 2 teaspoons cream cheese mixture into the center of each cupcake. Bake at 350° for 25-30 minutes or until cake springs back when lightly touched. Cool for 5 minutes before removing from pans to wire racks. Store in the refrigerator.

1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon salt
2 large eggs, separated
1 stick unsalted butter, at room temperature
1 cup granulated sugar
1 tablespoon finely grated orange zest
1 teaspoon orange oil (available at specialty stores)
1/2 cup fresh orange juice (from 2 oranges)
2 sticks unsalted butter, at room temperature
1 teaspoon pure vanilla extract
4 cups confectioners' sugar, sifted
2 to 3 tablespoons whole milk or heavy cream
Orange and/or white sanding sugar, for topping
Orange gummy candies, for topping

Steps:

  • Make the cupcakes: Preheat the oven to 350 degrees F. Line 18 muffin cups with paper liners. Sift the flour, baking powder and salt into a medium bowl; set aside. Beat the egg whites in a large bowl with a mixer on medium-high speed until stiff peaks form, about 4 minutes; set aside.
  • Beat the butter, granulated sugar, egg yolks, orange zest and orange oil in a separate large bowl with a mixer on medium speed until smooth and combined, about 4 minutes. Reduce the speed to low; beat in the flour mixture in three batches, alternating with the orange juice. Fold in the beaten egg whites. Spoon the batter into the muffin cups, filling each about halfway. Bake until a toothpick inserted into the centers comes out clean, about 15 minutes. Let cool 10 minutes in the pans, then remove to racks to cool completely.
  • Make the frosting: Beat the butter and vanilla in a large bowl with a mixer on medium-high speed until light and fluffy, about 6 minutes. Reduce the speed to low; gradually beat in the confectioners' sugar. Add the milk, increase the speed to medium and beat until light and fluffy. Frost the cupcakes. Top with sanding sugar and orange gummy candies.
  • Orange oil gives the cupcakes an intense orange flavor that you can?t get from just extract or zest.

I got this idea after experimenting with my vanilla frappuccino cupcakes and filling. The icing is an orange flavored butter cream, the cupcakes themselves lightly orange flavored and the cream filling, in this case is just ordinary whipped topping with part of the icing recipe used in this. Please see my vanilla frappuccino recipe if you would like home made cream filling. Enjoy! And I welcome criticism. Can't improve if no input!

Number Of Ingredients 18

2 1/2 cups all-purpose flour (start cupcake)
1 teaspoon baking soda
1/4 teaspoon salt
1/2 cup buttermilk
1/2 cup sour cream
3 drops orange food coloring (optional)
1 cup unsalted butter, softened
2 cups granulated sugar
4 large eggs
1 tablespoon orange extract (end cupcake)
2 cups unsalted butter, softened (start icing)
4 cups confectioners' sugar
2 teaspoons vanilla extract
2 tablespoons water
1 teaspoon orange extract
3 drops orange food coloring (optional, end icing)
2 cups non-dairy whipped topping (start filling)
1 cup of left over orange buttercream frosting (from above. see instructions, end filling)

Steps:

  • Cupcakes: Preheat oven to 350°F Prepare baking pans with cupcake liners.
  • In a large bowl, whisk baking soda, flour and salt. In a small bowl, combine the buttermilk and sour cream; set aside.
  • In separate bowl, using an electric mixer at medium speed, beat butter until smooth. Slowly add sugar, beat until light and fluffy. Add eggs one at a time.
  • Add extract and 2 to 4 drops food coloring (optional), mixing well.
  • Add flour mixture alternating with buttermilk mixture. Mix until well combined.
  • Pour into baking cups to 3/4 full. Bake approximately 20 minutes, or until a toothpick inserted into the center of the cupcake comes out clean. Remove from oven, and allow to cool completely on wire rack before assembling.
  • Orange Buttercream Frosting: Blend butter until smooth; slowly add confectioners' sugar until combined. Add vanilla and water; mix at low speed 1 minute, then at high speed for 5 minutes. Set aside 1 cup frosting. Add extract and food coloring to remaining frosting, mixing well.
  • Vanilla Buttercream Filling: In a medium bowl, fold in non-dairy whipped topping, 1/2 cup at a time, into the 1 cup of reserved frosting. Whisk until smooth.
  • To assemble cupcakes: Fill a pastry bag fitted with a large open star tip with Vanilla Buttercream Filling. Insert the tip halfway into the center of the baked cupcake; press until the top of cupcake begins to rise slightly. After filling cupcakes, frost as desired.

3/4 cup tangerine juice
1/3 cup canola oil

1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 1/2 tablespoon poppy seeds
3 cups powdered sugar
1/2 cup vegetable shortening, such as Organic Spectrum
1/2 tablespoon lavender extract
Pinch salt
3 tangerines, peeled and slices separated, for garnish

Steps:

  • For the cake: Preheat the oven to 350 degrees F 15. Line a cupcake pan with 12 regular-size cupcake liners or 24 mini cupcake liners.
  • For the cake: Mix the flour, granulated sugar, baking soda and salt in a medium bowl. Combine the tangerine juice, canola oil, vinegar, orange extract and vanilla extract in a 5-quart mixer with a paddle attachment on first speed. Add the dry ingredients. Add the poppy seeds. Once all the dry ingredients are incorporated, turn the mixer up to second speed and mix well. Turn the mixer off.
  • Fill the cupcake liners half full with batter. Bake until baked through, about 20 minutes. Cool the cupcakes completely.
  • For the frosting: Whip the powdered sugar, vegetable shortening, 1/4 cup water, lavender extract and salt in a bowl with an electric mixer. Add additional water in very small amounts to get the creamy consistency if it is too thick. Put the frosting in a pastry bag and cut off 1/2-inch off the top.
  • To assemble: Frost each cupcake with the lavender frosting. Place a tangerine slice on top.

Steps:

  • To make the bottom layer, mix the flour and sugar together.
  • Cut in the butter until crumbly.
  • Pack into an ungreased 9" x 13" pan.
  • Bake in a 350 degree F oven for about 10 minutes or until golden.
  • To make the top layer, stir all five ingredients together in a bowl.
  • Spoon over the bottom layer and spread.
  • Bake in a 350 degree F oven for about 25 to 30 minutes or until set and golden in colour.

¾ cup creamy salad dressing (such as Miracle Whip®)

3 large eggs
2 tablespoons grated orange zest
1 (13 ounce) jar marshmallow creme
½ cup unsalted butter at room temperature
½ cup vegetable shortening
½ cup unsalted butter at room temperature
½ cup vegetable shortening
¼ cup freshly squeezed orange juice
1 tablespoon orange zest
¼ teaspoon vanilla extract
2 drops orange paste food coloring, or as desired
4 cups confectioners' sugar

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line 24 muffin cups with paper liners.
  • Beat together the orange cake mix, creamy salad dressing, whipped topping mix, 3/4 cup orange juice, eggs, and 2 tablespoons orange zest in a large bowl with an electric mixer on low speed until mixture is moist, about 1 minute. Scrape down the sides of the bowl with a spatula, then increase speed to medium and continue beating until well blended, about 2 minutes more. Fill the prepared cupcake cups about 2/3 full of batter.
