Sweet strawberries, salty feta and crunchy walnuts jazz up a simple spinach salad. The balsamic vinaigrette is incredibly easy; fresh shallots add more zip than you'll find in any commercial dressing.

Steps:
- Whisk oil, vinegar, shallot, salt and pepper in a large bowl. Let stand for 5 to 10 minutes to allow shallots to soften and mellow a bit.
- Add spinach, strawberries, feta and walnuts to the bowl and toss to coat with the dressing.

SPINACH, STRAWBERRY AND WALNUT SALAD
I went to a wedding this past summer and had a delicious spinach salad. I was able to reproduce it quite well and am sharing it here. It's absolutely delicious on a hot summer day and the sugar encrusted walnuts make it extra tasty.

Steps:
- Preheat oven to 350 degrees.
- Mix the water and 1 1/2 teaspoons of sugar and heat up until all the sugar is dissolved.
- In a bowl toss the walnuts in the sugary water.
- Place the walnuts on a cookie sheet and bake in the oven for about 15 minutes or until the nuts are "dry" to the touch.
- Remove nuts and set aside to cool.
- To make the salad dressing mix the remaining 1/2 teaspoon of sugar, olive oil, vinegar, lemon juice, salt, garlic, and basil in a small bowl and mix thoroughly with a fork until the salt and sugar has dissolved.
- In a large salad bowl add the spinach, strawberries and green onions.
- Add the salad dressing and toss the all the ingredients.
- Finally add the walnuts and toss lightly.
- Serve the salad with bread or as a side dish.
STRAWBERRY SPINACH SALAD

- For the dressing: In a small jar, combine the olive oil, lemon juice, honey, vinegar, poppy seeds, mustard, salt, and pepper. Seal the jar; shake vigorously to combine. Set aside.
- For the salad: Just before serving, add the spinach to a large bowl or platter; top with half of the strawberries and orange slices. Drizzle with half of the dressing; gently toss to coat. Top the salad with the remaining berries, orange slices, pecans, and goat cheese. Drizzle with your desired amount of the remaining dressing, and serve the remainder on the side, if you like.
SPINACH BERRY SALAD WITH CANDIED WALNUTS
Steps:
- For the dressing: Whisk together the vinegar, mustard, honey, jam, 1/2 teaspoon salt and 1/4 teaspoon pepper in a small bowl. Whisk in the oil in a slow stream and continue whisking until the dressing is emulsified.
- For the salad: Toss together the spinach, blackberries, onions and Candied Walnuts in a large salad bowl. Drizzle with the dressing and toss. Using a vegetable peeler, shave some cheese over the top.
- Line a baking sheet with parchment paper and set aside.
- Melt the butter in a medium saucepan over low heat. Add the walnuts and stir to coat. Raise the heat to medium, add the sugar and cook until the sugar is dissolved and caramelized, stirring often, about 5 minutes. Stir in the cinnamon, 1/2 teaspoon salt and 1/4 teaspoon pepper, then transfer the mixture to the baking sheet. Spread the nuts in a single layer. Let the walnuts cool until hardened, about 15 minutes.

- Heat the oven to 375.
- Place the walnuts on a rimmed baking sheet and bake until fragrant and toasted, about 8 minutes.
- Transfer to a cool plate.
- Toss the spinach with the strawberries in a large bowl.
- In a small bowl, whisk together the honey, mustard, vinegar, and salt.
- Drizzle 3/4 of the dressing over the salad and sprinkle the walnuts on top.

- In a small heavy saucepan, combine the first 5 ingredients; stir gently to moisten all the sugar. Cook over medium-low heat, gently swirling pan occasionally, until sugar is dissolved. - For the Maple Glazed Walnuts: Heat a skillet over medium heat on the stove-top. Add the walnut halves, maple syrup and a pinch of salt. Cook, stirring constantly, until caramelized and toasted, about 3 minutes. Remove to a sheet of parchment paper and using a fork, quickly separate nuts so they are not touching each other. Allow to cool at room temperature, then store in an air-tight container in the refrigerator until needed.
- For the Maple Vinaigrette: Combine all ingredients in a small bowl or a jar. Stir/shake together right before pouring over greens.
- To assemble the salad: Place some baby spinach and watercress in to a large bowl. Shake or stir vinaigrette and drizzle a bit over the greens. Toss until lightly moistened, then remove to serving plate or bowl.
