This is a real Southern chicken dish. The buttermilk tenderizes the bird and the bacon fat brings back the down home flavor!

Steps:
- Place the cut up chicken into a large resealable bag or a 9x13 inch casserole dish. Pour the buttermilk over the chicken, seal or cover and refrigerate for 24 hours.
- Remove the chicken from the buttermilk. In a bowl, stir together the salt, black pepper, cayenne pepper, thyme, flour and sugar; pour onto a plate.
- Heat the shortening and bacon drippings in a large skillet or electric skillet to 365 degrees F (185 degrees C). Dredge the chicken in the flour mixture and place it into the hot fat. Fry on one side for 10 minutes, then turn and fry 10 minutes on the reverse side. If softer skin is desired, cover the skillet for the last 10 minutes. Remove and drain on brown paper grocery bags. (The smaller pieces will be finished first. The chicken is done when the juices run clear.)

- Heat the olive oil in a large skillet. Add the onions, red bell peppers, garlic and jalapeno and saute until tender, 3 to 4 minutes. Add the chicken and saute until browned, breaking it up with the back of a wooden spoon as you cook. Stir in the chili powder and cumin and let toast for a few stirs. Add the beans and let cook until warmed through.
- Mix the yogurt and salsa together in a small bowl.

- Place the chicken breasts in a wide pot or pan and cover by about an inch with cold water. Season the water with salt. Optionally, you can add aromatics of your choice. Read my poached chicken recipe for more details.
- Turn the heat to medium until it reaches a gentle simmer. Then reduce the heat back to low and cover the pan. Let the chicken simmer for 8-12 minutes, or until the internal temperature reaches 160-165 degrees Fahrenheit. Remove the chicken and let it rest for a couple of minutes. Then chill in the fridge.
- Transfer the cooled chicken to a cutting board and dice it into 1/2-inch pieces.
- Slice and dice the celery, green onion, grapes, parsley and tarragon. Add those ingredients to a mixing bowl along with the mayonnaise, Dijon mustard, and lemon juice. Season with salt and pepper.
- Mix everything together until it's well combined. Let it chill in the fridge until you're ready to serve.

- Take the chicken out of the fridge 30 minutes before cooking.
- Boil water in a saucepan. Add chicken, put the lid on, let the water come back up to a simmer, then remove from stove. Set aside for 20 minutes (even up to 45 min is fine). (Note 4)
- Remove chicken from water and shred, then cool.
- Place ingredients in a jar. Shake well. Taste and adjust as required. It should be a balance of tangy / sweet / salty / hint of spice. (Note 5)

- 1. Boil the chicken until very tender. Pull off the bone and place in large mixing bowl. With a hand chopper chop chicken fine.
- 2. Chop the celery up fine, I use a food chopper to chop it fine. Add to chicken

- Rinse chicken thoroughly and place in a large pot of water. Turn on the heat and bring to a boil.
- Reduce heat and simmer until chicken is done (about 45 minutes to an hour). When you are ready, remove the chicken from the pot and place on a plate. With your fingers or a fork, pull all of the meat off the bones, chop into bite-sized chunks and set aside.
- Chop all of your fruits and veggies and place them in a bowl with the chicken.
- In another bowl mix mayonnaise, yogurt (or sour cream), lemon juice, brown sugar and salt and pepper to taste.
- Add the dill (or oregano or cilantro...whatever makes your skirt fly up) and if you're feeling a bit brazen throw in a dash of cayenne pepper!
- When the dressing tastes just right (you must taste test for appropriate saltiness especially), pour it over the chicken/veggie/fruit mixture and stir gently until everything is thoroughly mixed. Stir in the almonds. If you are feeling naughty, add a sprinkling of bacon bits.
- Allow the salad to chill for several hours (or even overnight). Serve on a bed of lettuce or in a sandwich or heck, eat it straight out of the bowl with a serving spoon. Try it soon-you'll love it!

- Heat your oven to 400 degrees. Put your eggs in a boiler with water and cook on high for approximately 13 minutes. In a casserole dish or pyrex dish, place the chicken breast side by side in there. Put water in the bottom of the dish. Make sure it is enough to cover the bottom of the dish. Spray your chicken with the Pam cooking spray, then sprinkle the seasoning salt, or the greek seasoning, or the Mrs. Dash blend you choose on top of the chicken. Cover the dish with aluminum foil. This will allow the chicken to cook faster and stay tender. Place in the oven for about 20-25 minutes, or until cook all the way through. Meanwhile, take the olives, and dice them into pieces, and set aside. Get your bowl, and put the sour cream and mayonnaise in there. Add your crushed pineapples, relish, diced olives, and onions if you are using them. Once your eggs are done, rinse with cold water for easier peeling, diced the eggs and put in a the bowl with the mixture. Once your chicken is done, let cool. You can dice the chicken for chunkier chicken salad or, you can chopped them finely for a thinner chicken salad. For either option, once you are finished dicing or chopping add to the bowl with the mixture and stir all ingredients. Add sugar, salt, and pepper to taste. You can add more of any of the ingredients to suit your tastes and desires.

- Place chicken breasts in a large Dutch oven, then pour chicken broth over them and add thyme sprigs. Bring mixture to a boil over medium high heat, and cook, 15 minutes, or until chicken is done and registers 160`F on a meat thermometer inserted in the thickest portion of the breast meat.
