DOUBLE CHOCOLATE PUDDING PIE

14 graham cracker squares (7 full sheets)
2 tablespoons butter, melted
1 tablespoon water
1 tablespoon unflavored gelatin
1/3 cup boiling water
2/3 cup sugar, plus 1/2 teaspoon
1/3 cup cocoa
1/4 cup cornstarch
1/8 teaspoon salt
3 cups 1 percent low-fat milk
2 ounces bittersweet chocolate, chopped
2 teaspoons vanilla extract
1/4 cup heavy cream

Steps:

  • Preheat the oven to 350 degrees F. Spray a 9-inch pie plate with cooking spray.
  • In a food processor, process the graham crackers until finely ground. Add butter and water and process until the crumbs clump together. Press the crumb mixture into bottom of pie plate and about 1-inch up the sides. Bake for 10 minutes, then let cool.
  • In the meantime, make the pudding. Put the gelatin in a small bowl, add the boiling water and stir until dissolved. Set aside.
  • In a medium saucepan mix the 2/3 cup of sugar, cocoa, cornstarch and salt. Gradually add half of the milk, whisking until smooth. Whisk in the rest of the milk. Turn the heat on to medium and cook, whisking constantly, until the mixture thickens and comes to a boil, about 10 minutes.
  • Remove from the heat. Add the chocolate and stir until melted. Stir in the vanilla and reserved gelatin. Pour the mixture into the pie crust and let set for 3 hours in the refrigerator.
  • Whip the cream and remaining 1/2 teaspoon of sugar. Before serving, garnish the pie with the whipped cream.

3 tablespoons cornstarch
1/8 teaspoon salt
3/4 cup creamy peanut butter
2 cups semi-sweet chocolate chips
1 cup miniature marshmallows

  • 1. In medium saucepan whisk together milk and cornstarch. Stir in salt. Cook and stir over medium heat until mixture thickens and boils. Cook and stir for 1 minute more. Remove from heat.2. 1 tablespoon cold milk
1 cup peanut butter
1 (8 ounce) container frozen whipped topping, thawed
9 inches graham cracker crust
2 (4 ounce) packages instant chocolate pudding mix
2 cups cold milk
4 peanut butter cups, cut into 1/2 inch pieces

Steps:

  • In a large mixing bowl, mix cream cheese, sugar, 1 tablespoon milk and peanut butter until smooth.
  • Gently stir in 1 1/2 cups of whipped topping.
  • Spread mixture on bottom of pie crust.

This is a yummy Chocolate Layer Pie. Its a recipe I came up with through a recipe for a French Silk pie I make. :-) If you use oreos...PLEASE MAKE SURE THAT YOU SCRAPE OUT ALL OF THE FILLING! Dont leave any filling on the cookie, because this will cause your crust to get funky and it will burn. :-) I do not suggest using oreos...rather just use plain chocolate cookie crumbs. :-)

1 1/2 cups finely crushed chocolate cookies
3 tablespoons sugar
1/3 cup melted butter or 1/3 cup margarine

  • Combine cookie crumbs, 3 Tbs sugar and melted butter.
  • Press firmly into 9 inch pie plate covering bottom and sides evenly.
  • Bake at 350° F for 10 minutes.
  • In a medium sized bowl, beat cream cheese, sugar, and 1 tbs milk in large bowl until smooth.
  • Gently stir in 1/2 of the whipped topping.
  • Spread on bottom of baked crust.
  • In a medium saucepan, combine the 1/3 cup sugar and the cornstarch.
  • Stir in the milk, chocolate, and 1 tablespoon butter.
  • Cook on medium stirring constantly until thickened and bubbling.
  • Reduce heat; cook and stir 2 additional minutes.
  • Remove 1 cup of mixture from pan.
  • Gradually stir the 1 cup of mixture into egg yolks.
  • Return mixture to saucepan; bring to boil.
  • Cook, stirring constantly for 2 additional minutes.
  • Stir in vanilla.
  • Set pudding aside to cool for a few minutes.
  • Turn pie filling into pie pan on top of the cream cheese layer.
  • Refrigerate for 4 hours or until set.
  • Just before Serving spread remaining whipped toping over pudding layer, and garnish with shaved chocolate.

3 cups Kellogg's® corn flakes (crushed to 3/4 cup) or 3/4 cup Kellogg's® corn flake crumbs
2 tablespoons sugar
1/4 cup margarine or butter, softened
2 1/2 cups pineapple chunks (20-oz can)
1 (3-ounce) box lemon jello
1 (8-ounce) package cream cheese, softened

Steps:

  • 1. In medium mixing bowl, combine KELLOGG'S CORN FLAKES cereal, sugar and margarine. Press mixture evenly and firmly in bottom and on side of 8-inch pie pan to form crust. Chill.2. Drain pineapple chunks, reserving syrup. Chill pineapple. Add water to syrup to measure 1 cup. Place in 2-quart saucepan. Bring to boil over medium heat. Remove from heat and mix in gelatin, stirring until dissolved. Gradually stir 1/2 of hot gelatin mixture into cream cheese. Beat until smooth. Pour into chilled crust. Refrigerate pie until set. Let remaining gelatin set at room temperature. 3. Arrange pineapple on top of pie. Spoon remaining gelatin over pineapple. Chill until firm. Serve with whipped topping, if desired.
