CRANBERRY SAUSAGE QUICHE

I'm going through recipes I've collected over the years and posting ones that sound interesting here, so I'll be able to find them later! I don't even remember where this one came from. I've never made it, so prep time is just a guess, but it sounds yummy.

1 9-inch frozen deep dish pie shell
1/2 lb bulk sausage, sage-flavored
1/4 cup yellow onion, chopped
3/4 cup dried cranberries
1 1/2 cups shredded monterey jack cheese
3 eggs, lightly beaten
1 1/2 cups half-and-half
parsley or sage leaf, as garnish

Steps:

  • Preheat oven to 400 degrees.
  • Let frozen pie shell stand at room temperature for 10 minutes.
  • Do not prick the shell.
  • Bake pie shell for 7 minutes.
  • Remove from oven and set aside.
  • Reduce oven temperature to 375 degrees.
  • Crumble sausage, and cook in a large skillet with onion over medium-high heat until sausage is thoroughly cooked.
  • Drain off excess fat.
  • Remove from heat.
  • Stir in cranberries.
  • Sprinkle cheese on the bottom of the pie shell.
  • Top cheese evenly with sausage mixture.
  • Combine eggs and half and half in medium bowl.
  • Whisk until blended but not frothy.
  • Pour egg mixture over sausage mixture in pie shell.
  • Bake for 40-45 minutes or until knife inserted in center comes out clean.
  • Let stand for 10 minutes before serving.
  • Garnish with fresh parsley or sage.

A delicious holiday appetizer! Very pretty, easy to make and a nice mixture of flavors. Also can be made ahead. I used premade filo dough tartlette shells found in the freezer section of my grocery store. I use chicken sausage to cut down on fat. I also substitute minced onion for the scallions and it works just fine!

1 1/2 cups cranberries
1/2 cup sugar
1/2 cup orange juice
1 lb mild sausage, removed from casing
1 cup scallion, minced
48 prepared tart shells

Steps:

  • Combine cranberries, sugar, and juice in a saucepan.
  • Bring to a boil, simmer until cranberries are soft and some have popped, about 15 minutes.
  • Remove from heat and set aside.
  • Meanwhile, saute sausage - keep breaking it apart into crumbled sausage.
  • Add scallions/onions to sausage for about 1 - 2 minutes.
  • Drain off fat (if you use chicken sausage there won't be any!), stir in cranberry mix.
  • Fill precooked shells.
  • Serve!
  • You can make the filling the day before, just don't fill the shells until just before serving so they don't get soggy (although the filo ones hold up very well!).

Mixes in minutes, so it's great for a last-minute emergency holiday dessert. If you make it a day ahead, the cranberries mellow a little. Great with orange-nutmeg whipped cream!

2 cups cranberries, washed
1/2 cup pecan pieces
1/2 cup sugar
12 tablespoons butter, very soft or melted
1 cup sugar
2 eggs
1 teaspoon almond extract or 1 teaspoon Amaretto
1 cup flour

Steps:

  • Grease a 10- to 12-inch pie or flan dish. Spread the berries, pecans in the dish. Sprinkle with sugar.
  • Combine the butter, sugar, eggs and extract. Stir or beat in the flour. Spread over the berries. Bake at 325 degrees for 35-40 minutes.
  • Serve with whipped cream flavored with Grand Marnier or orange peel, or ice cream or custard sauce.

I make these tarts for dinner parties and people go crazy over them. You can also freeze these tarts (I put them back in the tart trays) and take them out whenever you need a quick and easy appetizer.

1 lb sausage, cooked & crumbled
2 cups shredded cheddar cheese
8 ounces ranch dressing (liquid not the powder)
1/4 teaspoon red pepper
60 miniature phyllo cups (4 boxes of 15)

Steps:

  • Mix together sausage, cheese, ranch and red pepper.
  • Scoop into tart shells.
  • Bake@ 375 for 10-12 minutes.
  • These also freeze very well.

This recipe came from whatscookingamerica.net. Recipe says that it comes from a restaurant who serves these with their breakfast meals. These are yummy, pretty little "tarts" that are really more like a rich muffin. I think they would be good with chopped cherries in place of the cranberries. Nice for a tea or ladie's luncheon with fruit salad.

3/4 cup butter, melted
3/4 cup sugar
3 eggs
1 teaspoon almond extract
1 cup all-purpose flour
1 cup chopped cranberries (fresh or frozen)
3/4 cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F. Spray a mini-muffin or mini tart pan with non-stick vegetable spray.
  • In a large bowl, whisk together butter and sugar. Add eggs and almond extract; continue whisking until blended. Add flour and continue to whisk until well blended. Using a spoon, mix in cranberries and pecans.
  • Fill each cup of prepared mini-muffin pan 1/2 full of cranberry dough. Bake 15 minutes.

12 cups bread cubes, baked until slightly dry
1 lb sweet Italian sausage, casings removed
1/4 cup butter
6 cups coarsely chopped leeks
4 teaspoons poultry seasoning
2 cups chopped celery
3 tart apples, peeled cored and chopped
1 cup dried cranberries
2 teaspoons dried rosemary, crushed
1 1/3 cups chicken stock
salt
ground black pepper

Steps:

  • Saute sausage in a large skillet over medium heat, crumbling coarsely for about 10 minute Remove sausage to a large bowl iwth a slotted spoon & empty pan of grease.
  • Into the same pan melt the butter. Add the leeks, apples, celery and poultry seasoning. Saute until softened, about 10 minute Add the rosemary, dried cranberries and cooked sausage. Mix all with the dried bread cubes. Season to taste with salt and pepper. Moisten with the chicken stock.
  • Stuff turkey with about 5 cups for a 14 lbs turkey. Add additional chicken stock to moisten stuffing if needed. Remaining stuffing can be baked in a covered buttered casserole at 350 degrees for about 45 minute Uncover and bake for another 15 minute to brown top.
