2 cups macaroni ((I use ditalini))
1½ cups mayonnaise
2 stalks celery, (finely chopped)
4 whole green onions, (finely chopped (white and green parts))
1½ tablespoons mustard
1 tablespoon onion powder
salt & pepper, (to taste)
4 large hard-boiled eggs, (chopped)
paprika, (for garnish)

Steps:

  • Prepare the pasta according to package directions. Rinse under cold water and set aside to drain well.
  • In a medium bowl, whisk together the mayonnaise, celery, green onion, mustard, onion powder, salt and pepper.
  • Place the drained, cooled pasta in a large bowl. Add the mayonnaise mixture and stir into the pasta until well combined. Gently stir in the chopped egg. Sprinkle with paprika, cover with plastic wrap, and chill for at least a couple of hours before serving.

¼ cup sweet relish
½ cup onion, finely chopped

  • Reserve 2 tablespoons relish juice; place the rest in a large bowl with onion, bell pepper, carrot, and egg.

This is a completely unpretentious, down-home macaroni and cheese recipe just like my grandma and mom always made. A simple white sauce where you add cheese and a few other flavors with macaroni and a potato chip crust. This recipe makes a lot, I like to make two pans so I can take one to a pot luck and have the other one to keep in the fridge for later. It's an easy recipe to adjust down if you only want to make one pan. If you aren't cooking it right away, just keep the topping separate until you are ready to put it in the oven.

¾ cup butter
¾ cup all-purpose flour
6 cups milk, divided
1 tablespoon Worcestershire sauce
1 teaspoon mustard powder
1 teaspoon onion powder

1 (8 ounce) package shredded Cheddar cheese, divided
3 (8 ounce) packages shredded American cheese
1 (8 ounce) bag potato chips (such as Lay's®), crushed
1 cup shredded Cheddar cheese
⅓ cup grated Parmesan cheese

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes; drain.
  • Melt butter in a large pot over medium-low heat. Slowly add flour to butter, whisking constantly; cook until brown and the mixture no longer smells of flour, about 5 minutes. Pour 1 cup milk into the flour mixture, whisking continually until fully incorporated, about 45 seconds; repeat twice. Add remaining 3 cups milk to the mixture, whisking to incorporate.   • Mix crushed potato chips, 1 cup shredded Cheddar cheese, and Parmesan cheese in a bowl. Top the macaroni with the potato chip mixture evenly. Spray the potato chip mixture with cooking spray.

2 c elbow macaroni noodles
4 stalks celery (chopped)
3 radishes (chopped)
1 red bell pepper (chopped)
1 small sweet onion (diced)
2 tbsp. minced parsley
1/4 c apple cider vinegar
1 c light mayo
1 tbsp. Dijon mustard
1/2 c honey
1/2 t. kosher salt
1/2 t. fresh ground pepper

Steps:

  • In a large pot, fill the pot with water and salt it. Bring the water to a boil.
  • Cook the pasta to the directions on the back of the box. Make sure they are cooked al-dente. Do NOT overcook the pasta.
  • Drain the pasta and immediately rinse with cold water to stop the cooking process.
  • Prep your vegetables by washing them, drying them, then dicing them up. Chop them all into ½ inch pieces. You want them to be as close to size as possible so they are the same size as the macaroni noodles.
  • Add the vegetables to the elbow macaroni in a large bowl along with the chopped parsley. Set aside. In a medium sized bowl or measuring cup make the dressing. Combine the honey, mayo, apple cider vinegar, Dijon mustard, salt, and pepper. You can add more salt and pepper to taste if preferred.
  • Combine the dressing with the macaroni and vegetables. Cover and allow to set in the fridge for 3-4 hours for the best taste.

2 cups Hellmann's mayonnaise (or homemade)
1/4 cup cider vinegar
2 tablespoons mustard (plain yellow prepared)
2 tablespoons sugar (more or less to taste)
1 teaspoon salt
1 teaspoon ground black pepper (more to taste)
2 cups celery (celery - thinly sliced)
1 cup red bell pepper (seeded and chopped)
1/2 cup onion (peeled and chopped)
1/4 cup carrot (grated)
1 cup salad olives with pimentos (drained )

Steps:

  • Bring a large pot of salted water to a boil.
  • Pour in elbow macaroni and cook until very tender.
  • Drain completely but don't rinse.
  • Stir a little mayonnaise into the macaroni to keep it from sticking.
  • Cool completely.
  • Combine mayonnaise, mustard, vinegar, salt, pepper, and sugar in a small bowl and mix well. Taste and adjust seasoning and sweetness.
  • Put the cooled macaroni, celery, carrot, onion, peppers, and olives in a large bowl.
  • Pour mayonnaise mixture over and stir gently to combine.
  • Cover with plastic wrap and chill overnight if time permits.
  • Add a little more dressing if necessary before serving
  • Store in the refrigerator for up to 5 days - keep chilled if you are bringing it to a cookout or picnic.

This recipe gets requested more often then any other from my very fussy 12 year old niece so it's a real winner with kids too.

6 cups hot water
8 ounces macaroni
1/2 lb strong cheddar cheese, grated
1 cup sour cream
3 tablespoons butter
paprika

Steps:

  • Place water in a large microwave-safe bowl.
  • Microwave, covered, at high for 10 minutes to bring to boil.
  • Add the macaroni, stir and cover.
  • Microwave 7 to 8 minutes at high.
  • Stir, cover and let stand 3 minutes.
  • Drain.
  • Place half the cooked macaroni in a buttered 6-cup microwave-safe baking dish.
  • Sprinkle with half the cheese, top with half the sour cream and dot with half the butter.
  • Repeat with remaining ingredients.
  • Sprinkle with paprika.
  • Microwave, uncovered at high for 8 to 10 minutes.
  • My notes: I cook macaroni on stove top instead of microwaving it.
  • My microwave is so old it takes forever to boil water.
  • I also will mix up the cheese sometimes using different cheddars but it's really great if you use some freshly grated pecorini cheese as well in the mix.

1 large shallot, chopped

3 tablespoons sweet pickled relish

Steps:

  • To make the hard-boiled eggs: Add the eggs to a medium-sized saucepan. Cover with cold water and bring up to a boil over medium heat. Cover with a lid and turn off the heat. Let the eggs sit in the hot water for 14 minutes. Drain and cool under cold running water. Peel the eggs and chop. Reserve.
  • While the eggs are cooking, bring a large pot of salted water to a boil over high heat and add the macaroni. Cook until al dente. Drain and rinse with cold water.
  • In a large serving bowl, combine the eggs, ham steak, celery, shallots and lemon juice Add the macaroni and stir to combine.
  • In a separate bowl, whisk together the mayonnaise, mustard, pickled relish, and salt and pepper, to taste. Add the dressing to the macaroni and toss to coat. Season with more salt and pepper, if needed. Cover and chill for 2 hours for the flavors to meld.
