1-1/2 cups all-purpose flour
1/4 cup sugar
1/4 teaspoon salt
1/2 cup cold butter, cubed
1 large egg, room temperature, lightly beaten
FILLING:
4 ounces cream cheese, softened
1/4 cup sweetened condensed milk
2 tablespoons lemon juice
Assorted fresh berries
2 tablespoons apricot preserves

Steps:

  • In a large bowl, combine the flour, sugar and salt. Cut in butter until mixture resembles coarse crumbs. Add egg; mix with a fork until blended. Shape dough into a ball. Cover and refrigerate for 1 hour or until easy to handle., Divide dough into six portions. Press each portion into a greased 4-1/2-in. tart pan. bake at 350° for 15-20 minutes or until edges are lightly browned. Cool for 10 minutes before removing from pans to wire racks to cool completely., In a small bowl, beat cream cheese until smooth. Beat in sweetened condensed milk and lemon juice. Spoon 2 rounded tablespoonfuls into each cooled tart shell. Arrange berries over filling., In a small saucepan, melt preserves over medium heat; stir until smooth. Brush over berries.

4 cups frozen peaches, mostly thawed
1 frozen pie crust, thawed, rolled out
1/4 teaspoon nutmeg
1/2 teaspoon cinnamon
1/4 cup sugar
4 teaspoons flour
2 teaspoons lemon juice or 2 teaspoons rum
2 ounces milk
parchment paper

Steps:

  • Preheat oven to 375 degrees.
  • Place pie crust on a parment paper lined cookie sheet.
  • Put the remaining ingredients, except the milk, into a large zip-close bag and shake until peaches are coated.
  • "Dump" peach mixture into a mount in the center of the crust and "pat down" so the peaches are about 1 inch from the sides.
  • Fold the lip of the pie crust over the edge of the peaches.
  • Coat the edge of the crust with milk.
  • Bake 35 minutes or until mixture is bubbly and crust is golden brown.
  • Allow to set before serving.
  • (If your crust bakes faster than your peaches, just cover the it with some foil.).

1 cup cold milk
1 cup thawed COOL WHIP Whipped Topping
1 oz. BAKER'S White Chocolate
1 cup quartered fresh strawberries
1 can (11 oz.) mandarin oranges, drained
1 kiwi, peeled, cut lengthwise in half, then sliced crosswise
3 Tbsp. apricot preserves
2 tsp. water

Steps:

  • Heat oven to 400ºF.
  • Unroll pastry on baking sheet. Fold over edges of pastry to form 1/2-inch rim; press firmly to base to seal. Prick pastry sheet with fork. Bake 10 to 15 min. or until puffed and golden brown. Cool completely. Place on tray.
  • Beat pudding mix and milk in large bowl with whisk 2 min. Stir in COOL WHIP; spread onto pastry.
  • Melt chocolate as directed on package. Arrange fruit over pudding mixture. Mix preserves and water; brush onto fruit. Drizzle with chocolate. Let stand until chocolate is firm.

8 ounces cream cheese
1/4 cup powdered sugar
1/2 teaspoon vanilla
fresh fruit, as desired (about 2 cups total)
lemon juice (optional)

Steps:

  • Preheat oven to 400°F.
  • Put pie crust flat on cookie sheet and fold the edge over 1/2 inch.
  • Bake pie crust 10-12 minutes until golden.
  • Cool.
  • Meanwhile, mix cream cheese and powdered sugar until smooth and well blended.
  • Blend in vanilla.
  • Spread cream cheese mixture over crust to within 1/2 inch of the edge.
  • Arrange fruit over cream cheese attractively.
