ANGEL SUGAR COOKIES

These angel sugar cookies are light and delicious. There is no rolling out or cutting required with these sugar cookies which makes them the easiest and most delicious cookies ever!.

2 large eggs
1 cup canola oil
1 cup. butter (softened)
1 cup sugar
1 cup powdered sugar
1 tsp pure vanilla extract (or could use almond)
4 cups all purpose flour (plus 2 Tbsp)
1 tsp salt
1 tsp baking soda
1 tsp cream of tartar

Steps:

  • Preheat oven to 350 degrees F.
  • To make the dough, use a large mixing bowl and cream together the eggs, oil, butter, sugars and vanilla
  • Add the rest of ingredients and mix until combined. Don't overmix.
  • Refrigerate the dough for 1 hour
  • Using a cookie scoop or spoon drop the balls of dough onto an ungreased cookie sheet
  • Wet the bottom of a glass, then dip it in the granulated sugar
  • Use the glass to flatten the balls of dough, dipping again into the sugar each time
  • Bake for 9-11 minutes or until the cookies are just barely turning brown around the edges
  • Do not overcook and let cool before eating and/or frosting

CHOCOLATE DOUGH:
1 cup butter, softened
1-1/2 cups sugar
2 large eggs, room temperature
2 teaspoons vanilla extract
2 cups all-purpose flour
2/3 cup baking cocoa
3/4 teaspoon baking soda
1/2 teaspoon salt
1 cup coarsely chopped pecans
5 ounces white baking chocolate, chopped
VANILLA DOUGH:
1 cup butter, softened
1-1/2 cups sugar
2 large eggs, room temperature
2 teaspoons vanilla extract
2-3/4 cups all-purpose flour
2 teaspoons cream of tartar
1 teaspoon baking soda
1/2 teaspoon salt
1 cup coarsely chopped pecans
4 ounces German sweet chocolate, chopped

Steps:

  • For chocolate dough, in a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Combine the flour, cocoa, baking soda and salt; gradually add to creamed mixture and mix well. Stir in pecans and white chocolate., For vanilla dough, in another large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Beat in eggs and vanilla. Combine the flour, cream of tartar, baking soda and salt; gradually add to creamed mixture and mix well. Stir in pecans and German chocolate. Cover and refrigerate both doughs for 2 hours. , Divide both doughs in half. Shape each portion into a 12-in. roll; cover. Refrigerate until firm, about 3 hours., Uncover and cut each roll in half lengthwise. Place a chocolate half and vanilla half together, pressing to form a log; repeat with remaining dough. Cover and refrigerate until the dough holds together when cut, about 1 hour. , Using a serrated knife, cut into 1/4-in. slices. Place 2 in. apart on greased baking sheets. Bake at 350° until set, 8-10 minutes. Remove to wire racks to cool.

1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup butter, softened
3/4 cup granulated sugar
1 egg
2 tablespoons grated lemon peel, divided
1 teaspoon vanilla
additional granulated sugar
1 cup powdered sugar
4 -5 teaspoons lemon juice

Steps:

  • Preheat oven to 375°F
  • Combine flour, baking powder and salt in small bowl; set aside. Beat butter and granulated sugar in large bowl with electric mixer at medium speed until light and fluffy. Beat in egg, 1 tablespoon lemon peel and vanilla until well blended. Gradually beat in flour mixture at low speed until blended.
  • Drop dough by level 1/4 cupfuls onto ungreased cookie sheets, spacing 3 inches apart. Flatten dough until 3 inches in diameter with bottom of glass that has been dipped in additional granulated sugar.
  • Bake 12 to 14 minutes or until cookies are just set and edges are golden brown. Cool on cookie sheets 2 minutes; transfer to wire racks. Cool completely.
  • Combine powdered sugar, lemon juice and remaining 1 tablespoon lemon peel in small bowl; drizzle over cookies. Let stand until icing is set.
  • Variation: To make smaller cookies, drop 2 tablespoons dough 2 inches apart onto ungreased cookie sheets. Bake 8 to 10 minutes or until cookies are just set and edges are golden brown. Cool on cookie sheets 2 minutes; transfer to wire racks. Cool completely. Continue with Step 5. Makes about 2 dozen cookies.

1 cup evaporated milk
1/4 cup butter
1/4 teaspoon salt
1 1/2 cups miniature marshmallows
3/4 cup chopped nuts
1 teaspoon vanilla
1 (12 ounce) package semi-sweet chocolate chips
1 (12 ounce) package milk chocolate chips

Steps:

  • Grease 8 inch pan.
  • Bring to rolling boil: sugar, milk, butter, and salt- stirring constantly.
  • Boil 6 minutes, stirring occasionally.
  • Remove from heat and stir in till well blended: marshmallow, nuts, and vanilla.
  • Blend 2 cups of hot mixture and semi-sweet chips. Stir until smooth. Pour into pan.
  • Add milk chocolate chips to remaining hot mixture. Stir until blended and spread evenly over first layer.
  • Chill about 4 hours.

My dad is a PB fanatic so I made these for Father's Day, he loved them! Inside the cookie is a ball of PB & powdered sugar and the outside is rolled in chopped peanuts, cinnamon and sugar. I got this recipe from Pillsbury's $1 million grand prize winner in 2008.

1/4 cup dry roasted peanuts, finely chopped
1/4 cup granulated sugar
1/2 teaspoon ground cinnamon
1/2 cup peanut butter, creamy
1/2 cup powdered sugar
16 1/2 ounces peanut butter cookie dough, instead of the roll I use my favorite PB cookie Irresistible Peanut Butter Cookies, chilled dough is easier to handle
cooking spray

Steps:

  • Heat oven to 375 degrees.
  • In a small bowl, mix chopped peanuts, granulated sugar and cinnamon; set aside.
  • In another small bowl, stir peanut butter and powdered sugar until completely blended. Shape into 24 (1") balls.
  • Cut roll of cookie dough into 12 slices. Cut each slice in half crosswise to make 24 pieces; flatten slightly. If using a homemade recipe divide dough into 24 pieces.
  • Shape 1 cookie dough piece around 1 peanut butter ball, covering completely. Repeat with remaining dough and balls.
  • Roll each covered ball in peanut mixture; gently pat mixture completely onto balls. On ungreased cookie sheets, place balls 2" apart. Spray bottom of drinking glass with cooking spray; press into remaining peanut mixture. Flatten each ball to 1/2" thickness with bottom of glass. Sprinkle any remaining peanut mixture evenly on tops of cookies; gently press into dough.
  • Bake 7-12 minutes or until edges are golden brown. Cool 1 minute; remove from cookie sheets to cooling rack. Store tightly covered.

6 tablespoons cocoa powder
1/2 cup butter or 1/2 cup margarine
1/2 cup milk
1 teaspoon vanilla extract
1 cup shredded coconut

Steps:

  • Combine sugar, cocoa, butter or marg and milk in large sauce pan and bring to a boil.
  • Remove from heat and add vanilla, coconut and rolled oats, stir until all in coated in chocolate mixture.
  • Drop by the spoonful onto greased cookie sheet, etc and allow to cool before eating.
  • These cookies set up best if cooled in the fridge.

I want to give a very big thank you to a Chef from here on " ZAAR " , who's recipe inspired me to make up my own recipe. :). The Chef who inspired me wants to remain nameless, so that's the way it will be. If you like almonds as much as I do, you really are going to enjoy this cookie.If you are using whole almonds chop them before measuring. Also if you like a cookie that has a sweet/salty thing going on, use the roasted and salted almonds. To flatten the cookies,use the flat bottom of a glass dipped in sugar.The way that this recipe is written gives me 32 cookies, depending on how big you make yours you might get more or less. The time for each cookie sheet is the time for baking. Please let cookies cool on cookie sheet for 2 to 3 minutes before removing, let finish cooling on wire racks. 1/4 cup dry roasted peanuts, finely chopped
1/4 cup granulated sugar
1/2 teaspoon cinnamon
1/2 cup creamy peanut butter
1/2 cup powdered sugar
14 ounces peanut butter cookie dough, Well Chilled (recommed Pillsbury)

Steps:

  • Heat oven to 375°F
  • In small bowl mix chopped peanuts, granulated sugar and cinnamon. Set aside.
  • In another small bowl, stir peanut butter and powdered sugar until completedly blended. Shape mixture into 24 balls, about 1 inch each.
  • Cut cookie dough slices in half crosswise to make 24 pieces, flatten slightly. Shape 1 cookie dough piece around 1 peanut butter ball, covering completely. Repeat with remaining dough and balls.
