CHOCOLATE DROP COOKIES
These were cookies my aunt made all the time when I was little--worth the wait and very good! I have never made them with nuts, but I'm sure they are good with them also.

Steps:
- Mix shortening, sugar and egg.
- Stir in sour milk and vanilla.
- Sift together flour, soda, salt and cocoa; stir.
- Add nuts.
- Chill 1 hour.
- Heat oven to 375°F.
- Drop by spoonfuls on greased cookie sheet.
- Bake 8-10 minutes.
- • Note: You can use plain milk with 1 tbsp vinegar to sour it. Works as well as the sour milk.

DOUBLE CHOCOLATE MOCHA DROP COOKIES

Steps:
- Preheat oven to 325 degrees and line 2 cookie sheets with parchment paper.
- Melt 1/2 cup of chocolate chips with coffee in a double boiler, or in metal bowl in pot of hot water, stirring until smooth. Set aside to cool slightly.
- Cream together butter or margarine and sugars, beating until light. Mix in eggs, one at a time, then add vanilla. Fold in chocolate mixture.
- Mix matzo cake meal, salt, baking powder, cinnamon and 2 tablespoons of ground coffee beans in bowl and stir into batter with 1/4 cup of chips. Let sit for an hour, covered.
- Drop cookie dough by tablespoons onto cookie sheets, about 2 inches apart. Press remaining chips on top of cookie dough and sprinkle on ground coffee.
- Bake for 15 minutes.

DOUBLE-SHOT MOCHA CHUNK COOKIES
This is a King Arthur cookie recipe described as dense, brownie-like drop cookies with pools of melting chocolate inside when hot from the oven. When Cooled the chocolate pools soldify into nuggets. Sounds soooo good.

Steps:
- Preheat oven to 350.
- Lightly grease or line with parchment two cookie sheets.
- In medium bowl, cream together butter, sugar, baking powder, espresso powder, and salt.
- Add eggs and vanilla, beating until smooth.
- Stir in cocoa powder, then flour; the dough will be stiff.
- Mix in chocolate chips and chunks.
- Drop cookies by tablespoonfuls (about 1 1/2" balls) onto prepared baking sheets, leaving about 1 1/2" between them.
- Bake for 10 minutes.
- Remove from oven, allow to cool on pan.

- In a large bowl, combine almond flour, cocoa powder, ground coffee, baking soda and salt.
- In a smaller bowl, stir together grapeseed oil, agave and vanilla.
- Stir wet ingredients into dry and then mix in chocolate drops (or chunks).
- Drop dough by heaping tablespoonfuls onto a parchment lined baking sheet.

- In a food processor, combine almond flour, cocoa powder, arrowroot powder, ground coffee, salt and baking soda.
- Pulse until ingredients are well combined.
- Pulse in agave nectar until the dough forms a ball.
- Remove dough from food processor and work in dark chocolate with your hands.
- Form dough into 2 logs on a parchment lined baking sheet.
- Bake at 350° for 15 minutes, then remove from oven and cool for 1 hour.
- Cut the logs into ½ inch slices on the diagonal with a very sharp knife.
- Spread slices out on a baking sheet and bake at 300° for 12-15 minutes.
- Remove from oven and allow to cool, set, and become crispy.
- Serve.

- Preheat oven to 350.
- Cream butter.
- Add both sugars and beat well.
- Add egg and mix well.
- Add flour, coffee powder, baking powder, salt, cinnamon, vanilla, and 1/2 c walnuts.
- Mix well.
- Wrap dough in wax paper and chill thouroughly in refrigerator (at least two hours).
- Remove dough from refrigerator.
- Using rounded teaspoonfuls of dough, shape into balls using palms of hands and place 2 inches apart on an ungreased cookie sheet.
- Bake 12-15 minutes.
- Remove cookie sheet from oven and working quickly place 3-4 chocolate chips in the center of each hot cookie.
- When chocolate has softened, spread over top and sprinkle with balance of walnuts.
- Remove to wire rack and cool.
MOCHA FROSTED DROPS
My most favorite cookie in the world. From BH&G. Prep/cooking time does not include time for cookies to cool before frosting.

Steps:
- Melt shortening and chocolate over low heat, stirring. Cool 10 minutes. Stir in brown sugar. Beat in egg, vanilla and buttermilk.
- Mix flour, baking powder and soda, and salt. Add to chocolate mixture. Stir in nuts and chocolate chips.
- Drop from teaspoon on greased cookie sheet. Bake at 375 for about 10 minutes. Remove from sheet and cool.
- Frost with Mocha Frosting. Top with a walnut half if desired.
- Mocha Frosting: Cream butter, cocoa, instant coffee and dash salt. Beat in confectioner's sugar, vanilla and enough milk so that it's spreadable.
