4 boneless chicken breast halves with skin
salt and freshly ground black pepper to taste
1 tablespoon chopped fresh herbs (thyme, parsley, rosemary)
2 tablespoons olive oil
¼ cup apple cider vinegar
4 tablespoons cold butter, cut into small pieces
1 tablespoon chicken broth (or water), if needed to thin sauce

Steps:

  • Season chicken on both sides with salt and pepper.
  • Heat olive oil in a heavy skillet over medium-high heat until it starts to shimmer. Place chicken breasts in skillet skin side down. Sprinkle with fresh herbs. Do not disturb the breasts until the skin side sears, 5 or 6 minutes. Turn chicken.
  • Cook until internal temperature reaches 150 degrees F, about 5 minutes. Add vinegar and butter to pan with chicken. Shake pan gently until butter melts and internal temperature of chicken reaches 160 to 165 degrees F, 2 to 3 minutes more. Add a splash of chicken broth or water if sauce needs to be thinned.

6 skinless boneless chicken breast halves
1/3 cup plus 3/4 cup extra-virgin olive oil
6 tablespoons fresh lemon juice
1 tablespoon dried herbes de Provence *
2 garlic cloves, pressed
2 teaspoons anchovy paste
2 16-ounce round sourdough bread loaves
4 tablespoons drained capers
2 large tomatoes, thinly sliced
1 small red onion, thinly sliced
4 large romaine lettuce leaves

Steps:

  • Using meat mallet, pound chicken breasts between sheets of plastic wrap to 3/4-inch thickness. Combine 1/3 cup oil, 2 tablespoons lemon juice, herbes de Provence, and half of garlic in large resealable plastic bag. Add chicken to bag; shake to coat with marinade. Chill at least 2 hours and up to 6 hours.
  • Prepare barbecue (medium-high heat). Remove chicken from marinade; shake off excess. Sprinkle chicken with salt and pepper. Grill chicken until cooked through, about 4 minutes per side. Cool. Cut chicken on diagonal into 1/2- to 3/4-inch-thick slices.
  • Whisk anchovy paste, remaining 4 tablespoons lemon juice, and remaining garlic in small bowl. Gradually whisk in remaining 3/4 cup oil. Season dressing to taste with salt and pepper.
  • Cut both bread loaves horizontally in half. Pull out and discard soft interior crumbs from top halves, leaving 1/2-inch-thick shell; drizzle 1/4 cup dressing over inside of each top. Drizzle 1/4 cup dressing over inside of each bottom half; sprinkle 2 tablespoons capers in each. Divide chicken, tomatoes, onion, and lettuce between sandwiches. Cover with tops, pressing to compact. Wrap sandwiches in foil, then place heavy skillet or food cans on top to weigh down. Refrigerate at least 2 hours. (Can be made 1 day ahead. Keep refrigerated. Let stand at room temperature 1 hour before serving.)
  • Cut each sandwich into quarters and serve cold or at room temperature.
  • A dried herb mixture available at specialty foods stores and in the spice section of some supermarkets. A combination of dried thyme, basil, savory, and fennel seeds can be substituted.

Steps:

  • Combine the soy sauce, sugar, garlic, ginger, spring onions, sesame seeds, black pepper, sesame oil and dry sherry in a bowl and mix well.
  • Cut the chicken breasts at an angle crossways to get wide 1/8" thick slices.
  • Use a meat pounder to flatten the slices a little more.
  • Put in a flat layer on the bottom of a shallow bowl.
  • Cover the pieces with some of the sauce.
  • Do all the chicken pieces in this way and set aside for at least an hour.
  • When ready to eat heat oil in a wide non-stick frying pan over a high heat.
  • When the oil is hot put in the chicken in a single layer, laying them out flat.
  • Reserve the marinade.
  • Cook for about a minute on each side until lightly browned.
  • Remove and keep warm.
  • Put the mushrooms and chillies into the frying pan and pour over the marinade.
  • Stir and cook for one minute.
  • Pour over the chicken and serve immediately with rice or noodles.

3 tablespoons japanese dark soya sauce
1 1/2 tablespoons sugar
2 cloves garlic, peeled and crushed
1 inch gingerroot, peeled and mashed
2 spring onions, sliced fine right upto the green section (scallions)
1 tablespoon roasted and then lightly crushed sesame seeds
ground black pepper
2 tablespoons sesame oil (Iuse only 1 with a non-stick pan)
2 tablespoons sake (rice wine or dry sherry should also do fine - I infact use a trick my aunt taught me of soaking ging)
350 g boneless skinless chicken breasts, slice into 1/8 inch thick slices and pounded
1 tablespoon vegetable oil
4 large mushrooms, sliced
2 fresh hot green chili peppers, cut crossways into 1 cm segments (you can deseed and use 1)

Steps:

  • Mix the soya sauce, sugar, garlic, ginger, spring onions, sesame seeds, black pepper (I use lots of it), sesame oil and sake in a bowl.
  • Spread the chicken slices in a dish and pour this marinade over it.
  • Keep for an hour atleast.
  • When ready to eat heat oil in a fry pan over med-high heat and when really hot put in as many of the chicken pcs the pan can take.
  • Cook till lightly browned on both sides.
  • Remove to a warm serving dish.
  • Now add the mushrooms and green chilli to the pan and pour the remaining marinade to the pan and stir for one minute.
  • Pour over the chicken pcs.
  • and serve hot.

4 skinless (boneless chicken breasts (about 6 to 8 ounces each))
salt to your taste (I use fine sea salt)
freshly ground black pepper (to your taste)
1 teaspoon chili flakes
4 cloves of garlic (minced)
2 tablespoons chopped fresh sage
freshly squeezed lemon juice (from a 1/2 lemon)
1/3 cup extra virgin olive oil (plus more for drizzling)
8 ciabatta buns
8 slices of prosciutto
1/2 cup artichoke pesto
Boston lettuce or any green lettuce of your choice
8 fried large sage leaves (optional, recipe below)

Steps:

  • PREPARE THE CHICKEN
  • Slice each chicken breast into 2 pieces widthwise across the grain.
  • Rinse each chicken breast piece with cold water and place them between two pieces of plastic wrap. (Do not pat dry)
  • Use a meat pounder to pound each piece of chicken to about a 1/4 each thick.
  • Transfer the chicken breasts on a baking sheet placing them in a single layer.
  • Season each slice of chicken with salt, pepper and chili flakes on both sides.
  • Mix together the minced garlic and chopped sage then rub this over both sides of the chicken breasts.
  • Drizzle the lemon juice and the oil on both sides of the chicken breasts while rubbing the meat to coat all over.
  • Cover and refrigerate the chicken for 20 minutes.
  • Meanwhile, in a small frying pan heat about 1/4 cup of vegetable oil till hot and fry the sage leaves for about 5 seconds on each side. Take care not to brown them otherwise they will be bitter.
  • Transfer the fried sage leaves to a tray lined with paper towels till ready to use.
  • Reserve the oil to brush over the sliced buns and toast in the oven @ 350 degrees F for about 5 minutes.
  • While the breads are toasting, remove the chicken from the fridge.
  • Grease a ridged grill pan with oil and heat until hot.
  • Arrange the chicken breasts on the hot grill pan, taking care not to crowd the pan and grill for 1 to 2 minutes on each side. (this will depend on the size and thickness of the chicken slices)
  • Transfer the cooked chicken to a serving platter and repeat with the remaining slices.
  • Drizzle the grilled chicken with a little bit of extra virgin olive oil and start assembling the Panini.
  • Spread the panini halves with the artichoke pesto and top with a layer of lettuce, prosciutto and grilled chicken.
  • Place the top panini bun on and enjoy!

Steps:

  • Heat a grill pan over medium-high heat. Remove the tenderloins from the chicken breast and set aside for another use. Brush the chicken lightly with oil, then season the skin with salt and pepper. Place the chicken on the grill skin-side down, and cook until the edges turn opaque, about 6 minutes. (To get nifty cross-hatch grill marks, about half way through cooking reposition the breast about 45 degrees from their original position.) Season with salt and pepper, and turn chicken over, and cook until firm to the touch, about 6 more minutes.
  • While the chicken cooks, make the gremolata: Chop the garlic, add the salt, and continue chopping to make a paste. In a small bowl, stir the garlic together with the lemon zest, parsley and olive oil Season with pepper, to taste.
  • Slice the breasts, against the grain and serve with the gremolata.

1 tablespoon plus 1 teaspoon neutral oil, such as canola or safflower oil

1/2 teaspoon garlic powder

Steps:

  • Pat the chicken with paper towels until very dry; transfer to a plate or baking sheet. Brush the chicken thighs all over with 1 tablespoon oil.
  • Heat a large cast-iron grill pan over medium heat. Stir together the salt, paprika, cumin, onion powder, garlic powder, lemon pepper seasoning and cayenne in a small bowl. Sprinkle the chicken all over with the spice mixture.
  • Brush the grill pan with the remaining 1 teaspoon oil. Add the chicken thighs to the grill pan skin-side down. Cook, rotating the pan on the burner several times to ensure even browning, until the skin has deep-brown grill marks (check the underside by gently lifting up each thigh with tongs), 10 to 12 minutes. Rotate each chicken thigh 90 degrees and continue grilling until deep brown crosshatch marks are visible and the skin is quite brown all over, about 5 minutes.
  • Flip the chicken thighs over and grill the flesh side until an instant-read thermometer inserted into the thickest part of the thigh (near but not touching bone) registers 160 degrees F, 6 to 9 minutes. Let the thighs rest 5 minutes before serving.
