These chicken breasts are fast, easy, and delicious. By 'pan-roasting,' you can easily monitor the internal temp. Leaving the skin on adds a lot of flavor and much needed moisture.

Steps:
- Season chicken on both sides with salt and pepper.
- Heat olive oil in a heavy skillet over medium-high heat until it starts to shimmer. Place chicken breasts in skillet skin side down. Sprinkle with fresh herbs. Do not disturb the breasts until the skin side sears, 5 or 6 minutes. Turn chicken.
- Cook until internal temperature reaches 150 degrees F, about 5 minutes. Add vinegar and butter to pan with chicken. Shake pan gently until butter melts and internal temperature of chicken reaches 160 to 165 degrees F, 2 to 3 minutes more. Add a splash of chicken broth or water if sauce needs to be thinned.

- Using meat mallet, pound chicken breasts between sheets of plastic wrap to 3/4-inch thickness. Combine 1/3 cup oil, 2 tablespoons lemon juice, herbes de Provence, and half of garlic in large resealable plastic bag. Add chicken to bag; shake to coat with marinade. Chill at least 2 hours and up to 6 hours.
- Prepare barbecue (medium-high heat). Remove chicken from marinade; shake off excess. Sprinkle chicken with salt and pepper. Grill chicken until cooked through, about 4 minutes per side. Cool. Cut chicken on diagonal into 1/2- to 3/4-inch-thick slices.
- Whisk anchovy paste, remaining 4 tablespoons lemon juice, and remaining garlic in small bowl. Gradually whisk in remaining 3/4 cup oil. Season dressing to taste with salt and pepper.
- Cut both bread loaves horizontally in half. Pull out and discard soft interior crumbs from top halves, leaving 1/2-inch-thick shell; drizzle 1/4 cup dressing over inside of each top. Drizzle 1/4 cup dressing over inside of each bottom half; sprinkle 2 tablespoons capers in each. Divide chicken, tomatoes, onion, and lettuce between sandwiches. Cover with tops, pressing to compact. Wrap sandwiches in foil, then place heavy skillet or food cans on top to weigh down. Refrigerate at least 2 hours. (Can be made 1 day ahead. Keep refrigerated. Let stand at room temperature 1 hour before serving.)
- Cut each sandwich into quarters and serve cold or at room temperature.
- A dried herb mixture available at specialty foods stores and in the spice section of some supermarkets. A combination of dried thyme, basil, savory, and fennel seeds can be substituted.

- Combine the soy sauce, sugar, garlic, ginger, spring onions, sesame seeds, black pepper, sesame oil and dry sherry in a bowl and mix well.
- Cut the chicken breasts at an angle crossways to get wide 1/8" thick slices.
- Use a meat pounder to flatten the slices a little more.
- Put in a flat layer on the bottom of a shallow bowl.
- Cover the pieces with some of the sauce.
- Do all the chicken pieces in this way and set aside for at least an hour.
- When ready to eat heat oil in a wide non-stick frying pan over a high heat.
- When the oil is hot put in the chicken in a single layer, laying them out flat.
- Reserve the marinade.
- Cook for about a minute on each side until lightly browned.
- Remove and keep warm.
- Put the mushrooms and chillies into the frying pan and pour over the marinade.
- Stir and cook for one minute.
- Pour over the chicken and serve immediately with rice or noodles.

- Mix the soya sauce, sugar, garlic, ginger, spring onions, sesame seeds, black pepper (I use lots of it), sesame oil and sake in a bowl.
- Spread the chicken slices in a dish and pour this marinade over it.
- Keep for an hour atleast.
- When ready to eat heat oil in a fry pan over med-high heat and when really hot put in as many of the chicken pcs the pan can take.
- Cook till lightly browned on both sides.
- Remove to a warm serving dish.
- Now add the mushrooms and green chilli to the pan and pour the remaining marinade to the pan and stir for one minute.
- Pour over the chicken pcs.
- and serve hot.

PAN GRILLED CHICKEN PANINI
Pan Grilled Chicken Panini with a slathering of artichoke pesto and thinly sliced servings of prosciutto and lettuce make an irresistible lunch or dinner. A perfect panini to pack for outdoor picnics but also equally fun for indoor picnics as well.

- PREPARE THE CHICKEN
- Slice each chicken breast into 2 pieces widthwise across the grain.
- Rinse each chicken breast piece with cold water and place them between two pieces of plastic wrap. (Do not pat dry)
- Use a meat pounder to pound each piece of chicken to about a 1/4 each thick.
- Transfer the chicken breasts on a baking sheet placing them in a single layer.
- Season each slice of chicken with salt, pepper and chili flakes on both sides.
- Mix together the minced garlic and chopped sage then rub this over both sides of the chicken breasts.
- Drizzle the lemon juice and the oil on both sides of the chicken breasts while rubbing the meat to coat all over.
- Cover and refrigerate the chicken for 20 minutes.
- Meanwhile, in a small frying pan heat about 1/4 cup of vegetable oil till hot and fry the sage leaves for about 5 seconds on each side. Take care not to brown them otherwise they will be bitter.
- Transfer the fried sage leaves to a tray lined with paper towels till ready to use.
- Reserve the oil to brush over the sliced buns and toast in the oven @ 350 degrees F for about 5 minutes.
- While the breads are toasting, remove the chicken from the fridge.
- Grease a ridged grill pan with oil and heat until hot.
- Arrange the chicken breasts on the hot grill pan, taking care not to crowd the pan and grill for 1 to 2 minutes on each side. (this will depend on the size and thickness of the chicken slices)
- Transfer the cooked chicken to a serving platter and repeat with the remaining slices.
- Drizzle the grilled chicken with a little bit of extra virgin olive oil and start assembling the Panini.
- Spread the panini halves with the artichoke pesto and top with a layer of lettuce, prosciutto and grilled chicken.
- Place the top panini bun on and enjoy!

- Heat a grill pan over medium-high heat. Remove the tenderloins from the chicken breast and set aside for another use. Brush the chicken lightly with oil, then season the skin with salt and pepper. Place the chicken on the grill skin-side down, and cook until the edges turn opaque, about 6 minutes. - Pat the chicken with paper towels until very dry; transfer to a plate or baking sheet. Brush the chicken thighs all over with 1 tablespoon oil.
- Heat a large cast-iron grill pan over medium heat. Stir together the salt, paprika, cumin, onion powder, garlic powder, lemon pepper seasoning and cayenne in a small bowl. Sprinkle the chicken all over with the spice mixture.
- Brush the grill pan with the remaining 1 teaspoon oil. Add the chicken thighs to the grill pan skin-side down. Cook, rotating the pan on the burner several times to ensure even browning, until the skin has deep-brown grill marks (check the underside by gently lifting up each thigh with tongs), 10 to 12 minutes. Rotate each chicken thigh 90 degrees and continue grilling until deep brown crosshatch marks are visible and the skin is quite brown all over, about 5 minutes.
- Flip the chicken thighs over and grill the flesh side until an instant-read thermometer inserted into the thickest part of the thigh (near but not touching bone) registers 160 degrees F, 6 to 9 minutes. Let the thighs rest 5 minutes before serving.

- Remove any loose pieces of fat, tendon or bone fragments from your chicken pieces with the tip of a sharp knife. Advertisement.
- Season the chicken pieces with salt and pepper, or your favorite spice rub. For a deeper flavor, cover the chicken and refrigerate it overnight. This provides time for the flavorings to infuse into the flesh.
- Preheat your grill pan over a medium-high burner until it's very hot. You should be able to see heat waves shimmering above it, and if you hold a hand over the pan, it should quickly become uncomfortably hot.
- Spray or brush the chicken pieces with a high-temperature oil such as safflower or avocado oil, then place them on the grill pan. They should go skin-side down, even if they're skinless.
- Cook the chicken pieces on the first side for 3 to 4 minutes, until they're well-marked by the grill pan's ridges. Carefully lift the pieces with tongs and turn them, cooking for another 5 to 7 minutes on the second side.
