Spice cake
3/4 cup vegetable oil
1 cup granulated sugar
3 eggs
2 1/4 cups cake flour (see notes for substitutions)
1 teaspoon baking powder
3/4 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon cloves
1/2 teaspoon ground ginger
1/4 teaspoon allspice
1 cup milk
8 ounces cream cheese (softened)
4 tablespoons unsalted butter (softened)
1/3 cup jarred caramel sauce
1 teaspoon vanilla
3 cups powdered sugar

Steps:

  • Preheat oven to 350 degrees with rack in the center. Prepare cake pan with parchment and/ or baking spray.
  • Beat the sugar and vegetable oil with an electric mixer on medium speed in a large mixing bowl. Add the eggs one at a time, blending well after each.
  • In a separate mixing bowl, combine the dry ingredients.
  • Add the milk and dry ingredients to the sugar mixture, alternating between the milk and the flour mixture. Mix on low until just combined. Batter will be thin.
  • Pour cake batter into prepared pans and bake 30 minutes, or until a toothpick inserted in the center comes out clean.
  • Cool on wire rack completely before frosting. Frost and refrigerate until serving.

2 and 1/2 cups (313g) all-purpose flour (spoon & leveled)
2 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 and 1/2 teaspoon ground cinnamon
1 teaspoon ground ginger
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cloves
1 cup (240ml) vegetable oil
1 and 3/4 cup (350g) packed dark brown sugar
1 cup (180g) unsweetened applesauce
4 large eggs
2 teaspoons pure vanilla extract
1 cup shredded apple (or shredded carrot/zucchini)
optional: 1 Tablespoon molasses
8 ounces (224g) full-fat block cream cheese, softened to room temperature
1/2 cup (115g) unsalted butter, softened to room temperature
3 cups (360g) confectioners' sugar, plus an extra 1/4 cup if needed
1 teaspoon pure vanilla extract
1/8 teaspoon salt

Steps:

  • Preheat the oven to 350°F (177°C) and grease a 9×13 inch pan. I always use this glass pan.
  • Whisk the flour, baking powder, baking soda, salt, cinnamon, and other spices together in a large bowl. Set aside.
  • Whisk the oil, brown sugar, applesauce, eggs, vanilla extract, and molasses (if using) together in a medium bowl. Pour the wet ingredients into the dry ingredients and whisk until combined. Fold in the shredded apple until combined.
  • Spread batter into the prepared pan. Bake for 45-50 minutes. Baking times vary, so keep an eye on yours. The cake is done when a toothpick inserted in the center comes out clean. If you find the top of the cake is browning too quickly in the oven, loosely cover it with aluminum foil.
  • Remove the cake from the oven and set on a wire rack. Allow to cool completely. After about 45 minutes, I usually place it in the refrigerator to speed things up.
  • In a large bowl using a handheld or stand mixer fitted with a paddle or whisk attachment, beat the cream cheese and butter together on high speed until smooth and creamy. Add 3 confectioners' sugar, vanilla, and salt. Beat on low speed for 30 seconds, then switch to high speed and beat for 2 minutes. If you want the frosting a little thicker, add the extra 1/4 cup of confectioners sugar (I add it). Spread the frosting on the cooled cake. Refrigerate for 30 minutes before serving. This helps sets the frosting and makes cutting easier.
  • Cover leftover cake tightly and store in the refrigerator for 5 days.

3 ounces unsweetened chocolate, chopped
1/2 cup butter, softened
1 cup sugar
1 cup packed brown sugar
3 eggs
2 cups cake flour
3 teaspoons baking powder
3 teaspoons Gustus Vitae spicy chocolate cinnamon cane sugar
1/2 teaspoon salt
1/2 teaspoon ground allspice
1/8 teaspoon ground cloves
1-1/3 cups 2% milk
ICING:
1 cup plus 2 tablespoons packed brown sugar
3/4 cup heavy whipping cream
6 tablespoons butter, cubed
1-1/2 cups confectioners' sugar
1/4 teaspoon vanilla extract
Caramel popcorn with peanuts, optional

Steps:

  • Preheat oven to 350°. Line bottoms of two well-greased 9-in. round baking pans with parchment paper; grease paper. In a microwave, melt chocolate; stir until smooth. Cool slightly., In a large bowl, cream butter and sugars until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in chocolate. In another bowl, whisk flour, baking powder, spicy chocolate cinnamon sugar, salt, allspice and cloves; add to creamed mixture alternately with milk, beating well after each addition., Transfer batter to prepared pans. Bake 30-35 minutes or until a toothpick inserted in center comes out clean. Cool in pans 10 minutes before removing to wire racks; remove paper. Cool completely., In a small saucepan, combine brown sugar, cream and butter. Bring to a boil over medium heat, stirring occasionally. Cook and stir 3 minutes. Remove from heat; gradually beat in confectioners' sugar and vanilla., Place one cake layer on a serving plate; pour half of the warm icing over the cake. Top with remaining cake layer. Pour remaining icing over top of cake. If desired, top with caramel popcorn.

2/3 cup vegetable shortening
1 teaspoon vanilla extract
3 eggs
1 cup chopped walnuts or 1 cup pecans
1/2 cup butter or 1/2 cup margarine
1 cup firmly packed brown sugar
3 cups powdered sugar
1/2 teaspoon vanilla

Steps:

  • Heat oven to 350*.
  • Generously grease and flour bottom only of 13x9 pan.
  • In large bowl, combine all cake ingredients except walnuts, beat at low speed until just moistened.
  • Beat 3 minutes at medium speed.
  • Stir in walnuts or pecans. see Note* below.
  • Bake at 350* for 40-45 minutes or until top springs back when touched lightly in center.
  • Cool one hour or until completely cooled. In medium saucepan, melt margarine or butter.I do this until slightly browned,,do not burn.over low heat, for 25 minutes, stirring constantly.
  • Add milk, continue cooking until mixture comes to a rolling boil.
  • Remove from heat. Gradually add powdered sugar and vanilla. Mix well.
  • If needed, add a few drops of milk for desired spreading consistency. Spread over cooled cake.
  • NOTE*.whenever I use nuts, pecans or walnuts, ext, I usually chop according to recipe and either toast in oven or place in dry skillet over low heat and "cook" just until fragrant.being careful not to burn.I think it helps bring out the nutty flavor by helping to release the nut oils.
  • To make cupcakes, fill 24-30 paper lined muffin cups, 2/3 full with batter. Bake at 350* for 20-25 minutes. Frost with caramel frosting.

  • To prepare frosting, melt margarine and brown sugar over low heat, stirring for 2 minutes.
  • Add milk and bring to a boil.
  • Remove from heat and cool slightly.
  • Slowly add powdered sugar, beating until smooth and creamy.

Steps:

  • Sift together dry ingredients.
  • Cream together shortening and sugars until fluffy.
  • Add vanilla and then eggs 1 at a time, beating well after each egg.
  • Add dry ingredients alternately with buttermilk.
  • Beat 2-3 minutes using high speed of mixer.
  • Pour into 2 greased and floured 8-in. pans.
  • Bake in 350 degree oven 25-30 minutes.
  • Frost when cool.
  • Caramel Frosting:.
  • Melt butter in saucepan then add brown sugar and cook over low heat 2 minutes, stirring constantly.
  • Add cream and continue stirring until mixture comes to a boil.
  • Remove from heat.
  • Gradually blend in powdered sugar and vanilla.

Pastry for two single-crust pies (9 inches)
1-1/2 cups raisins
1 cup butter, softened
1 cup sugar
1 cup packed brown sugar
6 eggs
2 teaspoons vanilla extract
2 to 4 teaspoons ground cinnamon
1 cup chopped nuts
1 cup sweetened shredded coconut
Whipped topping and additional chopped nuts, optional

Steps:

  • Line two 9-in. pie plates with pastry. Trim pastry to 1/2 in. beyond edge of plates; flute edges. Line crusts with a double thickness of heavy-duty foil. Bake at 450° for 10 minutes.
