DIRTY CHOCOLATE COOKIES

Dirty Chocolate Cookies image

Chocolate cookies with a rich chocolate frosting work together to create a decadent Dirty Chocolate Cookie!

Provided by Amanda Rettke

Categories     Dessert

Time 50m

Number Of Ingredients 13

2 cups (400g) granulated sugar
1 cup (2 sticks or 226g) butter, (softened)
1 large egg
1 teaspoon vanilla
2 ¼ cups all-purpose flour
⅔ cup (65 g) unsweetened cocoa powder, (sifted)
1 teaspoon baking soda
½ teaspoon baking powder
2 cups (200 g) confectioners' sugar
¼ cup (25 g) unsweetened cocoa powder, (sifted)
¼ cup whole milk
¼ cup (½ stick) butter, (melted)
¼ cup (50 g) granulated sugar, ((for when you press the cookies flat))

Steps:

  • Preheat oven to 350°F.
  • In a large bowl, cream the butter and sugar and then add the egg and vanilla. Mix well.
  • Add the flour, sifted cocoa, baking soda and baking powder together. Sift as needed.
  • Add the flour mixture to the sugar mixture and stir. (Can also use a hand held mixer) It will be a dry mixture.
  • Scoop out the dough onto a parchment lined baking sheet. Cookies will spread, so be sure to place them at least 2 inches apart. (I used a measuring scoop that holds about 2 1/2 tablespoons of batter.)
  • Place some sugar in a small bowl or plate and dip the bottom of a glass into the sugar and press the cookie down. (I sprayed the glass with non-stick spray the first time, you only need to spray it once.)
  • Bake 8-10 minutes or until tops are just dry. Let cool on pan for a few minutes so that you can move them to a cooling rack without breaking them.
  • In mixing bowl, place all of the ingredients and blend together using a hand-held mixer or stand mixer.
  • Spread over cookie using an offset spatula or butter knife.

KITTENCAL'S CHOCOLATE FROSTING/ICING

Kittencal's Chocolate Frosting/Icing image

A wonderful frosting I have used for years made in very little time with perfect results and 100% better than any canned, this frosting is so good you will find yourself eating a fair amount of it before even using it to frost with! --- choose the amount of cocoa powder you desire for either a light, medium or dark frosting, and make certain to sift the cocoa powder and the confectioners sugar before using for the recipe--- this frosting *freezes* very well so double the recipe and freeze one batch for next time --- *NOTE* for an ultra creamy fluffy milk chocolate frosting add in 1 to 1-1/2 cups thawed Cool Whip topping at the end of mixing the frosting and beat on low speed until blended ------- also see my recipe#80118 ---- recipe#282040 --- recipe#90142

Time 5m

Yield 2 cups, 24 serving(s)

Number Of Ingredients 7

1/2 cup butter, softened (you can use margarine but the flavor will not be the same)
2 2/3 cups confectioners' sugar, sifted
1/3 cup half-and-half cream (can use unwhipped whipping cream in place of half and half) or 1/3 cup milk (can use unwhipped whipping cream in place of half and half)
1 1/2 teaspoons vanilla
1/3 cup unsweetened cocoa powder, sifted (for light)
1/2 cup unsweetened cocoa powder, sifted (for medium)
3/4 cup unsweetened cocoa powder, sifted (for dark rich)

Steps:

  • Cream the butter in a small bowl.
  • Blend in the cocoa powder (the amount desired for a light, medium or dark flavor), vanilla, confectioners sugar, alternately with the cream.
  • Beat with an electric mixer, until the desired texture is achieved.
  • **NOTE** because of the additional cocoa powder more cream may have to be added in to reach desired consistency.

CHOCOLATE FUDGE ICING

Chocolate fudge icing image

Use this easy chocolate buttercream recipe for rich and smooth icing every time - ideal for finishing birthday, celebration or party cakes

Provided by Cassie Best

Categories     Afternoon tea, Dessert, Treat

Time 25m

Yield Covers 1 x 20cm sponge cake (serves 12)

Number Of Ingredients 5

100g milk chocolate, chopped into small pieces
200g slightly salted butter, softened
400g icing sugar, sieved
4 tbsp cocoa powder
2 tbsp milk

Steps:

  • Put the chocolate in a heatproof bowl, suspended over a pan of barely simmering water. Stir every now and then until melted. (Alternatively, melt in the microwave, stirring the chocolate every 20 secs so it doesn't burn.)
  • Remove the bowl from the heat and leave to cool a little. Meanwhile, put the butter and icing sugar in another large bowl and mash with a spatula to combine (this will prevent you covering the work surface in icing sugar), then whisk with a hand mixer until smooth.
  • Sift in the cocoa and pour in the melted chocolate and milk, then mix again until smooth, and use to ice your chosen cake immediately. Will keep in the fridge for up to a week, but remove an hour before using to bring it back to room temperature, and beat well.
