Steps:
- Add the ground Italian sausage to a skillet over medium heat. Cook 6 to 8 minutes, breaking it apart as it cooks with a wooden spatula. Drain excess grease and set aside.
- Spread the cream cheese evenly in the bottom of a casserole dish.Note: I had the best luck using the back of a metal spoon.
- Add a third of the cooked Italian sausage, mini pepperoni, and cheese evenly over the cream cheese and spoon half of the pizza sauce over top. Sprinkle garlic powder and Italian seasoning. Repeat and add another third of the cooked Italian sausage, mini pepperoni, and cheese and spoon the rest of the pizza sauce over top.
- Top with the remaining cheese and add the rest of the sausage and pepperoni. Sprinkle garlic powder and Italian seasoning over top.

Steps:
- To make any one of the dipping sauces, whisk all ingredients for each sauce in a small dish until smooth. If sauce seems too thick, push it through a very fine strainer. I did this with the apricot sweet chili.
- Serve dipping sauces in small bowls with sliced smoked sausage, chicken tenders or anything else that sounds good.

Steps:
- Remove the sausages from the package and allow them to warm up to room temperature for a few minutes.
- Preheat oven to 400 F degrees.
- Layer a baking pan with aluminum foil or parchment paper.
- Place the sausages in a single layer on the prepared baking pan, but separate them, should not be touching.
- Take a fork and lightly prick each one a few times, about 3 times in each link.
- Bake sausages for 25 - 30 minutes, until they are fully brown and cooked through.
- Remove from the oven. Use a fork and sharp knife to slice them into 4 equal parts.
- In a small saucepan, and on low heat, stir Teriyaki Marinade & Sauce with light brown sugar, ketchup, and vinegar, until the sugar is fully dissolved and allow the sauce to thicken a little, about 2 minutes. Turn off heat.
- Drop a few already cooked sausage bites (in small batches) into the heated sauce to coat them. Pick up each sausage bite (allowing the excess sauce to drip back into the pan) and place it onto a serving platter. Place toothpicks into each one. Garnish with a sprinkle on top with dried or fresh chopped chives and serve. If you need more dipping sauce, repeat the ingredients and heat up the additional sauce.
- Serve warm with extra dipping sauce on the side.
AWESOME ITALIAN SAUSAGE CREAM CHEESE DIP
Here is a simple recipe for an awesome dip. I had a similar dip like this at the Old Ebbitt Grill in Washington DC. Didn't get the actual recipe, but I had a good idea what was in it. It goes well with a good crusty bread, chips, or tortillas. This recipe has a minimum of ingredients, and once complete, you can add additional...

Steps:
- 1. Gather your ingredients.
- 2. Remove the skins from the tomatoes (blanching) and small dice.
- 3. De-seed the jalapeños and small dice.
- 4. Place the Italian sausage in a skillet over medium heat.
- 5. Cook until no longer pink.
- 6. Chef's Note: As the sausage is cooking, break into small bits with a wooden spoon.
- 7. Pour out any excess oil, and then add the tomatoes, chilies, and crushed red pepper.
- 8. Cook for about 5 minutes, and then cover, turn heat down to low, and allow to lightly simmer for an additional 5 minutes, or until the peppers are softened.
- 9. Remove from heat, and then add the cream cheese.
- 10. Stir until fully incorporated.
- 11. Add the sour cream.
- 12. Stir until fully incorporated.
- 13. Chef's Note: Using your taste buds, add a bit of salt, pepper, or any additional spices that you feel will help.
- 14. Chef's Note: Add spices a bit at a time and then taste... season and taste. Remember, good cooks always taste their food.
- 15. Serve with tortilla chips, sliced baguette or thick ripple potato chips. Enjoy.
- 16. Chef's Tip: This really does taste good right out of the pan, but it does taste better the next day. I let it cool down on the counter for about an hour or so, and then place into a bowl, cover with a bit of cling wrap, and then place in the fridge... This gives the spices and flavors a chance to get to know each other better. The only problem with this is that it seldom makes it to the refrigerator...
- 17. Keep the faith, and keep cooking.
